Fresh Asian salad
« on: January 25, 2009, 06:39:23 am »
This salad is a zero fat salad with a total of 65cal and is very refreshing on a hot day. Steamed chicken pieces could be added to this salad and served as a main meal.

300g Fresh pineapple, chopped into bite size pieces
1 long cucumber chopped into bite size pieces
1 punnet of cherry tomatoes, halved
155g bean sprouts
155g fresh green beans
55g rice vinegar
2 tablespoons of lime juice
1 red chilli, deseeded
2 tsp sugar
Mint leaves to garnish

Place chilli in TM bowl and chop for 5 sec on speed 7.
Add fresh beans and chop on speed 4-5 for 1 sec.
Add vinegar, lime juice  and sugar and mix for 10 sec on speed 2.
Add remaining ingredients and stir for 10 sec on reverse-speed 2. Serve.

This salad has been converted from “The essential Asian cookbook” by Murdoch Books.
