Hi all, how long would this keep for? Could I make a few now, while strawberries are cheep and give as Xmas gifts?

I'm sure you could kinta but once you taste it yourself, it might disappear before Christmas.  I made mine in October last year for gifts I think.

I'm testing the strawberries and the syrup every day. I was worried as I added extra gin so the strawberries were covered but didn't add extra sugar. I like the balance though, not too sweet. Thinking of freezing the strawberries and adding them to my summer gin and tonic!

That's a great idea freezing the strawberries.
Can never add too much gin :)

It will be worth it Wonder. It improves over time. I forgot about mine for several months, but when I tasted it WOW an amazing flavour.

One lovely bottle of botrytis gets another life as my strawberry liqueur. It's in the fridge but is that necessary?

My strawberries are frozen in 15 cubes of lime juice (nearly halfway through my lime stash) and the rest made into 2 jars of jam with 350g fresh strawberries and lime not lemon.

DH was appalled at the tang of my jam (why isn't it sickly sweet, did you add sugar?). I mentioned the lime but made no mention of the gin ; )!

After talking about this with Jen and Cookie over our coffee, I bought strawberries and gin on the way home yesterday to make this .. off to the kitchen now. You ladies are leading me astray lol

I've always kept mine in the fridge Thermesa, not sure what the others do though.

Finished making this today.Two little bottles of liqueur and a jar and a "bit" of strawberry liqueur conserve.
