Title: Varoma all in one meal - creamy tomato sauce
Post by: CarolineW on October 08, 2010, 11:58:22 pm
Again, adapted from Full Steam Ahead, along baf65 lines.

This recipe was originally for liver - but whatever you fancy with whatever veg you fancy in varoma.

2 onions and EVOO in mixing bowl.  Chop 3 sec / 5

Saute 2 min / varoma / 1

Add 100g potatoes in pieces, and 100g carrots in pieces.  Chop 3 sec / 5

Add 700g water and 2 cubes vegetable stock.  If cooking rice or potatoes with it, put the internal steamer basket in now (250g rice).

Place varoma in position, steam 30 min / varoma / 2

Set varoma and basket contents to keep warm.

Add 100g cream, 70g tomato puree, salt , pepper and 0.5 tsp sweet paprika to cooking liquid.  Cook 2 min / 100 / 2

Blend 15 sec / 8

Serve.

Bear in mind that the rice will absorb some of the cooking liquid, so the recipe would need tweaking if using potatoes.  But I'm guessing it would be the same if cooking pasta?  Anyone know?  It's a matter of some intrepid soul experimenting and then reporting back to us.  At the moment that's unlikely to be me, as I'm trying to be dairy free for the sake of DD2.

Cuilidh: Seeing as we are dairy free, I substituted Quirky Jo's Cashew Cream (with just a small variation) for the cream in the recipe.  The meal is for dinner tonight, but I don't know how I am going to manage - I keep having to have a quick taste of the sauce just to make sure it really is as wonderful as I thought .. I fear there will be no sauce left by dinner time!

QJ's sauce is 150g raw cashews, 150g water, 1 date and 2 drops vanilla essence.  1 minute, speed 9.

Cuilidh: Made this again last week and had some sauce left over so DH decided to boil up some pasta, add some broccoli and make a meal of it.

I'm just reading through this now, I'll probably give it a go soon. I just want to make sure that I understand...

Where it says: "Add 100g potatoes in pieces, and 100g carrots in pieces.  Chop 3 sec / 5" - does that then become pureed as part of the sauce?

FYI - I'll be using chicken, definitely NOT liver!! lol

I think the potatoes and carrots are for the sauce jakodai as the recipe talks about adding potatoes or rice into the basket later on.

Good luck with the recipe and let us know how it goes

What does EVOO mean? I'm not familiar with English abbreviations ( had to look  that up too!) Yvonne ( from Holland)

I made this today and the sauce is absolutely, totally DIVINE, I think it must be the nicest sauce I have ever made!  Seeing as we are dairy free, I substituted Quirky Jo's Cashew Cream (with just a small variation) for the cream in the recipe.

Her original recipe calls for 2 dates and a bit more vanilla.

Made this again last week and had some sauce left over so DH decided to boil up some pasta, add some broccoli and make a meal of it (because I was out I didn't get to taste it, but he had a very satisfied smile on his face as he told me about it later).

Very rarely, Judy, although he is a much better cook than I am, but he works c. 12 hours per day, pretty well 7 days a week so he is usually fairly tired when it comes time for eating so he just digs in to anything I put in front of him.
