I thought I would give this method a try with just a single egg this morning and it worked perfectly. I cooked for 1 minute longer because I don't like runny eggs and it was perfect. I did notice a bit of the white was a little rubbery but I don't think that's the recipe. I will try poaching this way from now on although not sure when we are making more than two eggs how it will go but it does give instructions for doing more.

I was really surprised at how well this worked, I'm not one for using the TMX where I think my old method either works well or ends up with less dishes but will probably keep up this method in future.

Thanks for the review Wonder, I'd never have thought to make these otherwise. After reading your review, I couldn't wait to try them so DD and I had them for lunch today. They are the best poached eggs I've ever made and oh so easy too. It would be a perfect recipe if you could cook a few more at a time, I might try that at the weekend and report back. I couldn't believe I got restaurant-looking poached eggs so took a picture :)

I made these for my Wife on the weekend.
She loves runny poached eggs, and I found that the 3 minute cooking time is too long. Next time, I'll try 2 mins, 30 secs and hope that it leaves them runny.
Agree though, they looked fantastic!

Jamberie I was the same. While I was waiting for the water to boil I was looking at the picture thinking how annoying it is that the eggs never turn out that way and then when mine was cooked it was perfect. I'm thinking I will need to make mine first and then DH's as he has them runny and I have them hard. just need to be able to keep them warm.

Wahh can you tell me how to make them. I don't have the new EDC and I love poached eggs and can't cook them.

These work out a treat. I'm not a huge lover of poached eggs as I don't like runny eggs but I do enjoy these. I cook them for 30 seconds longer. You can Keep them warm in your thermoserver ... Especially if you have the small 1 litre one :)

Great idea Faffa, I only have the large one but if I'm organized and warm it before hand it should be great. I enjoy poached eggs but they need to be cooked a lot more for me. I think I did a full minute longer this morning.

Thanks for the review wonder. I made these a few weeks ago and forgot to post a review. I made two and they are really easy and turned out perfect. I also made a hollandaise sauce first and kept it covered whilst I poached the eggs.

Thanks for posting the pic fo the recipe! I don't have the new EDC either so the recipe was a huge help! We all love poached eggs in this house!
Sorry if this question has been bought up elsewhere....but in step one, where it says to heat 11 mins/varoma/speed 1...is it really necessary to do that? Or can I just boil the kettle, add the water from the kettle into the TM bowl and then continue to heat until it gets to varoma temp? Sorry, I've always wondered this, cos it seems like it would be much quicker to boil n the kettle?
Also, do you guys think it's worth getting the new EDC? Are there many new recipes or tweaks to recipes in the older EDC?

Black wood, I was going to try and do that on the weekend, I can't see why it won't work as long as the water is boiling before you put the eggs in it should be fine.
With regards to the book, I'm not much of a cook book fan and won this one but after having it for a few weeks I would definitely buy it, it's a lot better than the old EDC although I can't tell you how many new recipes or recipes that have actually changed. It's just a much better format.

A: Yes quite a few. Most of the same recipes but with a few tweaks to those and a number of new recipes too. It really is a lovely book.

Is the book worth buying - I certainly thing so, it is far superior to the original spiral bound copy.
As far as the poached egg recipe goes, this morning I did exactly what you were asking. Can you use boiling water to save time. I boiled the jug, added the water, found it wasn't enough so had to add some cold water to it so by the time I added that plus the cold vinegar, with all the fiddling around waiting for it to come to varoma temp, I think it would have been easier to go down to the kitchen (perhaps have it all set up to go the night before), flick the switch, go back and make the bed, pull up all the blinds etc and then boil the kettle for coffee and it would be about time to add the eggs and make the toast. I just found I was standing there wasting time, adding a minute here and another couple of minutes there waiting for the water/vinegar mixture to come back to the boil whereas by following the recipe, the TMX will call you when it is ready for the next step and you can just be getting on doing your normal early morning chores.
Oh, forgot to say the poached eggs were lovely - my 700g eggs needed just over 3 minutes cooking for soft yolks. It pays to check them at the end of the cooking time, you can tell if they need a bit longer. Smaller eggs of course will need less time if you want soft yolks.

Wow! Thank you so much for your replies! You've both gone into a lot of depth and helped me reach a decision...I think I have to buy the new EDC, and JD, after reading your explanation, you're spot on...it's much easier to let the TMX do all the work and I could be doing something else instead of waiting around in the kitchen for the kettle to boil etc. Good thinking!
Another cookbook to ad to the collection...I will need to go through some of my old ones and pass them on I think! :)

I only cooked 1 egg for my breakfast this morning using this new method as per the book. 700g egg, 3 minutes - perfectly done. I did find coating the steaming basket with a brush dipped in oil worked far better than yesterday when I only used a spray of oil.

This almost makes me wish I ate eggs. :'( :'( I only eat the yolks ( the fattening bit) I can't stand the texture of the white. When we have eggs DH eats my whites. When I was growing up my brother and I swapped yolks and whites as he liked the whites. Fuss pots aren't we. ;) ;)

Yes cookie :D I imagine it would be hard to remove the yolk only from a poached egg, easy from a fried or a hard boiled one though.

oh cookie, we are so alike in many ways. I always only used to eat the yolk too - dip in with some toast (yum). Since I've been making my eggs in TM though I've learnt to eat the white as well and I chop it up and mix it around. the yolk is still the best part tho :D

I may have to get brave and try it. I'll eat hard boiled eggs if they are all mashed together.

I'm not a big one for the white either Cookie, I over cook them and then usually chop them all up on my toast even better if there is hollandaise because then you really don't taste the egg at all ;D

I've done some additional testing today and can tell everyone this recipe definitely doesn't work if you forget to put the basket in, results in shredded egg all through the TMX and the second tip is to make sure you actually put the egg in, the second attempt resulted in no breakfast ;D ;D and a lot of laughter at my expense from DH and DD !!!! I'm hoping I'm not the only one to make these type of mistakes.

I made 2 eggs this morning (refrigerated eggs) and the timing was perfect, looked good too.
I've never been very successful with poaching eggs in the past so am happy to have found a method that works and makes the eggs turn out like we like them. :D

Wonder I imagine the family have a good laugh. I hope you were able to as well. I do things like that. My most recent was wondering why the food wasn't cooked, I had forgotten to push the 100 degrees button. 8)

I had two poached eggs this morning too. Like JulieO, straight from the fridge, turned out perfect. Much nicer than DH's eggs. He still is persisting with the microwave poacher. They pop and come out dry. But he won't cross over to my side ;)

We had these too for breakfast. However i think next time I will cut twenty to thirty seconds off the cook time. I like them runny.

I thought I would give the poached eggs a try in the new EDC as I was fascinated how this could work without the egg disappearing through the basket ha ha. I firstly have to say that I must be the worlds worst at poaching eggs, I try to avoid it as much as possible but this method in the thermy has changed all that, I now feel like Jamie Oliver because they came out perfect so I will never have a problem when visitors ask for poached eggs for brekky yeeea.

Loved poached eggs and was umming and arrring about whether to get the new edc as did not like the old one which I also purchased o/s but after reading comments and reviews think I will get this one :)

to be honest Frozzie it was just OK, poached egg on wholemeal toast isn't a favourite but it's normally quick and nutritious.

I've tried the EDC recipe for hollandaise and it was ok, but not as good as I've had at restaurants. How does the French recipe differ?

The main diff was time and temp.,. Only three mins French recipe .. Others say 6 to 8 which is way too long.. Ingredients if I remember were fairly similar with only slight diff

Ok sorry got in very late last night then a busy first day back at school..
Ok the differences are 1/2 tsp salt and pinch of pepper instead of a pinch of both
50g warm or room temp water
Butter is the same however I have used 100g without any affect to the sauce.. Well very slight.. You dont really notice..
The main difference is method... Still put butterfly in and all in bowl then its 4 mins, 70 degrees speed 3.

Funny how different everyone is. we like ours thick and really like the old edc recipe although use a reduced based of white wine vinegar, water, salt and white pepper as per Stephanie Alexanders recipe.

Yes all different however never heard of using vinegar in hollandaise?? I like it what I consider a normal consistency.. Not runny not thick..

I haven't tried this way of poaching eggs. I did try a new one recently that could be adapted to the Thermie.
Boil water in a saucepan and prick the large end of two or three eggs. Place in the boiling water and cook 6 minutes exactly. (Not sure if it changes for more eggs). Plunge immediately into ice cold water for a few seconds. Using a cloth in your hand, remove egg from cold water and crack gently all over. Remove the top half of the shell with your fingers, then place a teaspoon into the shell - can vex end facing shell and slide around to remove the rest of the shell.
These were easier than they sound and perfectly cooked. No dripping water, no mess. You could do the same by boiling water in the Thermie and placing the eggs in the basket to boil as normal.

3mins left the egg almost totally cooked.
2m 30s made perfect poached eggs with a runny center.

So, can you do more than one egg at a time? It isn't clear from these posts whether or not you can successfully do this.

Two is fine. ..three is hit & miss but wouldn't serve to guests. Four would be ideal but haven't had success :(

As per the recipe, do 2. Then re-oil the basket and do another 2.
Keep going until guests all are full !

Slightly off-topic here but, Halley, what happens if you hold your camera / ipad / ianything upside down to take the photo - will the photos come out the right way up?
