Black Bean Brownies
These brownies are dense and fudgy with a healthy twist.
Ingredients:
1 cup of cooked black beans (canned or pre-cooked in Thmx)
2 whole bananas
1/3 cup Agave syrup
1/4 cup unsweetened cocoa
1 Tbsp cinnamon
1 tsp vanilla extract
1/4 cup rolled oats
Instructions:
Preheat oven to 150 degrees C.
Place the rolled oats in the Thmx and process for 10 sec on speed 8
Add all the other ingredients to the Thmx and blend until smooth, scrapping sides as needed.
Pour batter into a square cooking pan.
Bake approx 30 mins or until toothpick inserted in centre comes out clean.
Allow to cool before slicing.
Notes: Add another 1/4 cup oats or flour if you find the brownies too soft or fudgy.

Sounds interesting. At first I thought that it was with the Asian style fermented black beans - might have bean interesting !!

Black beans are a legume and are similar to red kidney beans. I've never actually used them, but have eaten them and they are very nice with a texture much the same as red kidney beans. I think I have seen tinned ones in our supermarket, but I wasn't taking a great deal of notice so I may be wrong there. As with other legumes, you can buy them dried for soaking and cooking on later (freeze the excess for use in other meals).

Quinoa flakes can be used as a substitute for rolled oats I believe. I have also read where there is a GF version of oats available.

LeeJ, ask in your local health food store or an Asian shop for canned black beans (not the salted variety). I think they are also known as Turtle beans and I've read where borlotti beans can be substituted for the black beans. I've never seen them myself.
