We had our first 'takeaway' equivalent meal since having our tmx and I must say, I would have much rathered a home cooked tmx meal! I think we've been spoiled with the great flavours, fresh ingredients etc that we will certainly be thinking twice before dining out again!

Surf & turf skewers today with salad (cooked on the bbq) and am in the process of making a cherry pie (using fresh cherries) for dessert.  :D

Pressure Cooker Recipes are Fast
Easy Beef Pot Roast
Serves 2-3

 
3 tablespoons (45 ml) canola oil
1.5 lb (700 g) pot roast
Salt and pepper    1 onion, chopped
1 bay leaf
1 1/2 cups (375 ml) water or beef stock

Pressure Cooker Recipes
Directions:

Place canola oil and roast in pressure cooker and brown on all sides.  Place roast on trivet in cooker.  Season roast with salt and pepper.  Add chopped onion, bay leaf, and water.

Lock the lid in place and bring to pressure, then lower heat and cook for the suggested time.  Allow pressure to drop by the natural release method [1] and remove the lid.

Suggested time for 15 psi pressure cookers (What is a 15 psi pressure cooker?):  Cook for 35 minutes on high pressure.

If not sufficiently tender, lock the lid back in place and heat to high pressure for another 5 minutes.

Homemade nachos for dinner here.  One of my friends is moving to Singapore and I've had a few glasses of champers with the girls to say goodbye so I need an easy dinner!

Tonight is roast beef, gravy, roast potatoes, kumara with sour cream dressing, spinach tart and salad.  :)
Sticky date muffins with caramel sauce and icecream for dessert if wanted.  ;)
