Potato and Leek Soup..yummo!

Name of Recipe: Potato and Leek Soup
Number of People: 4 adults
Ingredients:

Ingredients:
4 potatoes washed, peeled, cubed
1 leek, white part only. Cut lengthways, rinsed and soaked in water to remove grit. Then roughly chopped
500g water
2 cloves garlic
1/2 small onion quartered
25g  unsalted butter
1 tblspn vegie stock OR 1 tspn vegie stock and 1 tspn chicken stock powder
2 tblspn cream or more depending on taste
Pepper to taste

Preparation:

Add garlic, leek and onion into TM. Chop speed 5 for 5 sec
Add butter to TM and cook 6 min/varoma/speed 1, make sure MC is OFF
Add potatoes, water, stock and cook 25 min/100deg/speed 1, make sure MC is OFF
Add Cream to taste, and blend for 10 sec going slowly from speed 1 to speed 7 to avoid excessive splashing.
Pour into bowl and add pepper to taste.

Yummy with croutons or crispy bacon bits sprinkled on top and some crusty bread on the side!

djinni373 - A teaspoon of stock concentrate is more than enough for us and I threw in some fresh parsley at the end. Yummy with toasted home made ciabatta. Quick and easy too.

thermo18 - such a lovely flavour and will be making again.

LouLouB - Has a great taste. Mine was like potato puree at first,  so think my 4 potatoes may have been too big, but nothing that some extra cream & a dash of milk couldn't sort out. Tasty!

Sparky606 -  We (DH and I) think it could do with more leek. Ours fed 2 adults but probably wouldn't have fed much more.
Was still very yummy and definitely recommended.

floweryspring - Used 2 leeks. 2 big and 1 small potato but was still too thick so I added some hot water and more cream. DELICIOUS!

I have been sick lately and this recipe has been an easy, kids-will-ask-for thirds recipe!

We had this soup for lunch, DD just loved this and hasn't left much for tomorrow, she tells me she doesn't like soup yeah right :) was such a lovely flavor and will be making again.

Made this for dinner tonight. Used 2 leeks. 2 big and 1 small  potatoes.  But was still to thick so I added some hot water and more cream. DELICIOUS!  Will definitely be making again. Thanks.

I just made this soup and I don't know what went wrong but it has a strong fflavour of raw garlic. I used 2 cloves of garlic  but quite large ones a whole onion and 6 potatoes as I increased the liquid to 750gm. I followed the recipe adding cream and cooked bacon.
I previously made this and loved it. Today I increased the sautéing time to 8 minutes and cooked for 28 minutes instead of 25 as I had increased the quantity. I am disappointed but DH will still eat it and maybe it will taste better when the flavour has time to develop but I don't think the raw garlic taste will disappear.

What a shame MF.  That's where I find the confit of garlic so handy, no raw taste as it's already cooked.  Do make yourself a batch, it saves time too as you only have to dive into the jar with a spoon  ;)

Thanks for that Judy I will certainly be making the confit garlic.  :D
Because of the quantity of leek, garlic and onion I should have sautéed them on the stove.
Won't make the same mistake again. I actually cooked some more bacon and blitzed it through the soup and although it doesn't taste like it should it has made a huge difference as the garlic is no longer overpowering.

I love the confit garlic too.  Do you find you add more Judy because it is so easy? I haven't had an overpowering taste even though I do tend to add probably twice the amount I used to.

No I stick to the quantity in the recipe Denise, my bulbs are quite big though so I feel 1 is often enough unless they are smaller.
MF, I cook leek really well as I feel it's what gives a dish that raw taste.
