Pineapple fruit cake
Ingredients:
120g dates
440g tin of crushed pineapple
180g sugar
120g butter
240g sultanas
60g cherries
1 teaspoon of carb soda,
3/4 cup of chopped walnuts (and extra walnut halves to decorate top) - leave out if wanting nut free
2 eggs
120g plain flour AND 120g S.R. flour
Method
1. zap dates in TM bowl until chopped
2. add all other fruit, sugar and butter to TM bowl
3. set temp. for 100oC, for 10 minutes on :-: reverse on ^^ gentle .
4. when mixture temp drops to 70oC mix in carb soda with spatula
5. remove lid and allow mixture to cool to 50oC
6. while mixture is cooling set oven at 160oC (fan forced) and prepare an 8 inch (22cm??) cake tin with 2 layers of baking paper
7. when cool add the 3/4 cup of walnuts
8. roughly beat eggs in a cup and add to mixture
9. add flours (plain and self-raising)
10.replace lid on TM and set at reverse on speed 1, for 2 minutes, use spatula to assist in mixing flour and eggs into fruit mixture.
11. pour mixture into tin, decorate top with the extra walnuts.
12. cook in centre of oven for 2 hours or until cooked when tested with skewer.

Tips & Hints
Any leftover cake can be rolled into teaspoon size balls and dipped in chocolate. Great for after dinner or as gifts. The same can be done with left over Xmas pudding.

Thermomixer - This really makes a very tasty and very moist fruit cake. For those who don't like the dry old fruit cakes this is a good recipe. It keeps well too.
cookie re using leftover cake - I always do that. In fact I buy (sinful I know) a cheap tinned plum pudding, add some booze to it and roll into balls. I thin melt white chocolate over the top and put a tiny bit of red and green cherries on it. Hey presto, tiny plum puddings.
CC - I found a tin of crushed pineapple in my cupboard (goodness knows what I originally bought it for) and a lovely forum friend reminded me of this recipe of Chookie's.
As you can see I over cooked it a little but it still has a delicious flavour. Next time I will reduce the temperature of my oven. I used Pecans instead of walnuts. Thanks Chookie for the recipe, it's a delicious cake.

cookie1, what a good idea. The Xmas pud recipe that I use makes 25 serves ! I give some away as Christmas presents, and what is left over is turned in to balls. This particular recipe has a lot of grated carrot. Do you think anyone might be interested? I did the grating in the T.M this year and we sampled a bit of pud. It tastes just the same. We ate it with the custard made in the T.M from the EDC book. Great

Think there is a recipe in The Age Epicure today with grated carrot - hadn't seen one with carrot until today! But I'm not big on xmas puds. Is that you??

The Xmas Pud recipe is a very long one, will try and put it on tonight.(need to spend the rest of today in the garden.) I've been making this one for about 40 years. The original was American, I think.

What do you reckon you could use instead of walnuts? Can't have any nuts here :)

marmee, just leave the nuts out. They were not in original recipe. Also, with the Xmas pud. recipe leave the nuts out if they are an issue. With the Xmas pud they don't add much to the flavor, just crunch. I've put the pud recipe on my Blog and will see if my friend who is coming for tea tomorrow can show me how to transfer it over. Unless Thermomixer would like to do it ? Thermomixer, I looked the Pud article in the Age, no it was not me. My recipe has more than suggestion of carrot, it has quite a large amount and can be increased with no bad effect at all.

CC, on Saturday we were at a local Farmers Market. New stall run by a couple from Perth. They had fruit cakes for sale. Bit smaller than the one you made. $14 , same recipe. Must make one. Thanks for the feed back and reminder.

Your cake looks lovely CC. I have a tin of pineapple in the pantry left over from Poh's Pineapple Jam tarts. I think it will become a fruit cake.
