Cauliflower and Bacon Soup:
Serves 4
Ingredients:
10g butter
2 rashers of bacon
1 onion
1/2 medium head of cauliflower - roughly chopped into large florets
2 cups chicken stock
Splash of white wine
4 tablespoons of cream
Preparation:
Peel onion, cut in half and place in bowl.
Cut rind off bacon and add to onion.
Chop - 5 secs on speed 7. Scrape down sides.
Add butter and white wine. Cook 5 mins 100 degrees on stir ^^
Add cauliflower, chicken stock and cook on 100 degrees for 15 minutes on 'soft'
Add cream and blend on speed 7 for 1 minute.
Serve with a parsley garnish or crusty bread.
Tips/Hints:
I used Philadelphia cooking cream rather than 'real' cream in this recipe and it was light and delish!

JD - I use speed 1 as my machine doesn't seem to move enough on soft speed.
I used about 3 rashers of bacon, 350g cauliflower, 530g stock and 75g cream and cracked black pepper really adds to the flavour of this lovely cup of soup.
Bonsai - added a bit of sour cream that needed using up plus some blue cheese.
Cookie1 - I used milk instead of cream.
DJ - used ham in lieu of bacon
anneaussie - Didn't have cream so used light cream cheese. No white wine so I put in a slurp of champagne.
Brumington - I added four bits of bacon cause I love it and put in some Philadelphia and milk at the end cause I had no cream. I used teninas chicken stock powder for the chicken stock.
JenJan - I don't bother with the cream and I use a splash of dry sherry instead of white wine.

This was a quick, delicious soup sullygirl although I did cook it for 25 minutes as the chicken stock hadn't even reached 100o after 5 minutes. I also used speed 1 as my machine doesn't seem to move enough on soft speed.
I used about 3 rashers of bacon, 350g cauliflower, 530g stock and 75g cream and cracked black pepper really adds to the flavour of this lovely cup of soup. With ingredients usually on hand, this was so easy to whip up. Thanks for this recipe.

Made this for dinner tonight and it was a winner with everyone. DS12 didn't realise it had cauliflower in it ;) so I didn't enlighten him.

A really yummy soup - added a bit of sour cream that needed using up plus some blue cheese - kept the kids off it so more for DH and I ;)

Thanks for this yummy recipe. I pretty much doubled the recipe, it didn't quite fit but it by cramming as much cauliflower and stock in the TMX bowl as I could without going over the 2lt line, I managed to make quite a bit! Thanks for sharing.

Yummy we love this soup. I follow JD's tweaks, although I just cook it for 15 minutes at the end. :)

Yum! I used pancetta instead of bacon, because thats what we had to hand. I'm actually not a big fan of meat, but it was quite subtle. Also cant remember if I had cream, sour cream or just used milk (made it a few weeks ago now). But either way it was totally delish. Will definitely make again!

Got another cheap cauliflower yesterday. Made this twice this weekend. Fusspot 5 year old declared she loves it.

Made this tonight - got a cauliflower for $1.80 and made double batch to feed us all :) served it with Maddy's Bacon & Cheese Rolls (http://www.forumthermomix.com/index.php?topic=3114.0). Could only JUST fit in a double batch ;) ;)
This was loved by everyone and they were so surprised when I told them what it was - wouldn't let on before they ate lol
Mods can you please amend the recipe for the cooking time typo so it reads 15 minutes. I read it in the comments but then nearly forgot as I had visitors etc while I was cooking :-* :-*

Lovely soup! I had to make a few adjJustments due to limited ingredients. I used ham instead of bacon and vege stock paste. Ill be making this one again!

Great soup. I made this for lunch yesterday and thought I could take it to work for lunch, but no hubby and child like it so was no left overs will be making another batch.

Delicious soup.I made this for lunch today as DD had a friend visiting and we all loved it.I went a little wrong reading the recipe and added the cream at the cauliflower and stock stage but it worked out fine ;)

Bother!! with a capital B that is!! I saw cauliflower on special at a favourite food market yesterday and had second thoughts about what I'd do with it all . . . . and here it is . . !!

This was fabulous - I was going to make a double quatnity so did double bacon and onion and then realised there wasnt enough room for all the cauliflower! Tasted sensational! Thanks so much for posting - a definite keeper recipe!!

Yum, yum, yum! Didn't have cream so used light cream cheese. No white wine so I put in a slurp of champagne. Going back for seconds right now. So quick and easy to make. Thanks for an outstanding recipe! :)

Made this today and it's yum, even DH enjoyed it and he is not a soup lover. I added a bit too much liquid so it was a bit thin but still very nice. I used cooking cream as that was all I had.

I made this for dinner tonight and it was so quick and easy and totally delicious with the fresh loaf of bread I made. My girls ate it all up so it is a winner with them as well. I will definitely be cooking this a lot this winter, thanks for the recipe.

We had an unexpected guest for lunch yesterday who is a very fussy eater. I made a batch of this and he loved it. I only had half a tub of Philly Cream Cheese in the fridge so used this in place of the cream and it was lovely.

I tried out this recipe and want to thank the author and everyone, who shared their ideas and hints on this one. I also tried out the cauliflower with bacon but used milk instead of the cream, to make the soup less fat. Next time will buy Philadelphia and will try out this version of the soup. We'll see, which one will taste better to me and my family.
