A simple but tasty dish that can be prepared ahead of time and reheated. Serve with a roast meal or grill. I buy a large Celeriac and use it to make soup, salad and this Gratin. The recipe is from Epicurious and adapted for the TMX. This recipe makes 6 generous serves. It can be made any size , just keep the proportion of potato to celeriac , 2/3 potato to 1/3 celeriac.
2 large onions, peeled and 1/4
4 cloves of garlic, peeled.
400g. potato when peeled
200g. celeriac, when peeled
3 sprigs of fresh thyme
1 cup of grated Gruyere or tasty cheese.
salt and pepper. Olive oil
300g cream and 200g milk
Set oven to 200 o C
Drop onion and 2 cloves of garlic on to blades ,speed 7 until chopped.
Scrape down sides and add 1 Tablespoon of oil and cook on speed 2 / 100 o/5 mins. Set aside. No need to wash bowl.
Roughly chop potato and celeriac. Place potato into bowl first and then celeriac.
Zap on turbo until large chunks result.( I did this 3 times) There may be some uncut lumps but cut these with a knife as more processing will produce a pulp.
Layer 1/2 the mix into an oven proof baking dish, dot with 1/2 the onion and spread over with fork, sprinkle 1 sprig of thyme and generous salt and pepper, and 1/2 the cheese.
Repeat above layer.
Into washed TMX bowl, remaining 2 cloves of garlic zapped, cream and milk and 1 sprig of thyme. Heat to 80/speed 3/ 5 mis.
Strain this mix over dish.
Cover with foil and place on oven tray.
Bake for 30 mins, remove foil. Top up cream if there is not a thin coating over potato mix..
Return to oven and bake until light brown on top. 25/30 mins.

I've never tried celeriac, is the flavour only subtle, do you think we could get it past the kids?
I'm interested in the fact that you chop the potato and celeric - I only would have thought to slice thinly
-
Wonder, the original recipe said slice. But the TMXed result was great. We had visitors and they raved about it. Celeriac is just like celery in flavor. If your children eat pasta bake then they would probably eat this. You could go easy on the thyme as it gives the dish a herby taste.
-
Looks great Chookie, I like celeriac mixed with other things.
-
Judy, you could probably bake this in a foil tray in the BBQ.
-
This sounds great Chookie, on the list. :D (like your copper based dish too). ;D
-
Thanks Chookie, celery is one of the few vegies I really dislike but the kids love - so maybe it will be me turning my nose up for a change ;D
-
Wonder, had left overs heated up for tea. Not a pronounced celery flavor. In fact I am not sure that you would know it was there.
-
It looks tasty Chookie, something a little different.
-
Have friends over tomorrow for a bbq, was doing a potato salad but this looks great.
Can i make today and reheat tomorrow?
Thanks
H :)
-
Yes Hally, Chookie heated her leftovers the next day.

I'm too impatient to wait for my thermomix to arrive, so am trying this recipe in the food processor.

Use the slicing disk. I converted it from a recipe that used a food processor. Hope you enjoy it michelle.
-
I made this gratin and it is sooo yummy. The slicing disk worked wonderfully well.
I'm making this for as an accompaniment for my Christmas Eve family dinner.
Thankyou very much. I love this forum. :D :D :D
-
You are certainly working your way around the forum mcmich - like a busy bee ;D
-
Trying to catch up on lost time JD. My Thermomix is arriving tomorrow evening, so maybe more cooking and less forum time.
-
Oh I don't know about that - once you start cooking you will want to tell us what you have done ;D

Great recipe! I had a celeriac lurking around the fridge and instead of doing my usual celeriac remoulade I tried this one and it is great, especially for my children as they won't eat celeriac on its own but dont seem to notice when it is cooked in this way.
The only problem is whenever I'm grating or using my mandolin for anything I'm always accident prone and end up using up half a pack of band aids! As I don't ever use my food processor since buying my Thermomix, it seems such a hassle to drag it out of the cupboard and have to clean it again purely to slice and grate things.
-
Merlin, the TMX does make it easy. Quite an acceptable result. Glad the kids liked it .

I made this tonight. I have been waiting for celeriac to come in season to make this recipe. I substituted cream for 60% less fat philly cooking cream to reduce the fat content. I also didn't read the recipe properly and put all 4 cloves of garlic in with the onion. I wish I had of read the recipe properly in the first place and seen how long it takes to cook. However it was awesome. We definitely loved this dish and it will become a regular for us.
The photo shows burnt around the edges - I served this up with dinner and when eating it found some parts where not properly cooked through. I put it back in the oven to finish cooking and that's when the edges burnt. It definitely needs the hour of cooking time.
Thanks for another great recipe. :D
-
Mrs KK, glad you like it.
-
I have been wanting to make this but havent foud any celeriac.
Mrs KK where did you buy it?
Thanks
H :)
-
Are you in WA
-

Me too! I got a 2 pack last week at Hilton fresh for $2.99. They were a bit small but plenty for the recipe. We will be eating it for the next as the recipe makes heaps. :D
-
Hilton Fresh, know the name, cant think where it is.
Was in Limes yesterday & didnt see any there, found tarragon though :)

-
I often get celeriac in W in willagee and the vege shop in wray ave Fremantle (always fresh and really cheap veg). Hilton Fresh is across the road from Hilton IGA on south street.
-
We had this for dinner tonight and we both enjoyed it. A nice change to just potato gratin.
I used sour cream instead of cream, as that's what I had in the fridge.
Thanks Chookie :D
-
Katiej, glad you liked it. should be OK with sour cream.
Could replace the celeriac with leek, for those who are having trouble buying celeriac.
-
Made this with potatoes and leek. Baking in the oven now...
-
DD, let us know how you go with the leeks.. We are having visitors on Sunday, making this for lunch to have with roast beef.
-
DH and I enjoyed it, the kids comments on leeks and decided they don't like it (sigh).

Bit of a shame, but i can understands as i didn't like leeks when I was a kid.
-
I made this the other evening to accompany some chicken breasts. Thanks for the recipe Chookie, everyone loved it. :-*
-
I made this again last week and used 2 tblespns of my "dry onion soup mix" (thanks Judy for the recipe) that I made for the Retreat. It was great - just added more flavour and still got the thumbs up from DD's. Am about to make again to go with slow roasted shoulder of lamb! ;)
-
Mes KK, really enjoyed the Dry Onion Soup Mix the you gave us all at the Get together, so have just made some also. Will also try in this recipe.
-
Thanks Mrs KK, receiving your batch meant I could hold off making another one for myself.
