For people who grow their own pears, or for those who can buy cheap pears in season, this is a very easy and economical Chutney. The Cardamon provides an exotic touch and dresses up an otherwise sweet but bland fruit. Serve with cold cuts, add to gravy and serve with sausages. Great with a BBQ. It needs to sit in the jars for 2 months to mellow.
900g Pears, after peeling and coring
220g Onions, peeled and cut in 1/2
170g seeded raisins or sultanas
50g stem ginger, fresh
1 medium lemon, rind removed with a vegetable peeler, Juiced
230g soft brown sugar
1 level teaspoon of salt
500g of Apple Cider Vinegar
2 garlic cloves
1 1/2 teaspoons of chilli flakes
3 dessertspoons of (15g.) of Cardamon powder
Add lemon rind , with ginger and garlic to TMX bowl, Press Turbo twice.
Add onion and Zap 5 seconds/ speed 5. Scrape down.
Add rest of ingredients, cook 40 mins/Varoma/soft/ reverse. Cap out WITH BASKET ON TOP.To prevent splashing.
Put cap in and Zap 5 seconds/ speed 5.
Taste to see that mix is not too tart. It will mellow with keeping, but you can add more sugar and mix on reverse / speed 3 for 20 seconds.
Bottle in sterile jars and add lids when cold.
Store for 2 months to mellow.

Congratulations, Chookie. This looks great. Can't wait to try it although a warning - my track record with cardamom is not good.
-
Cecilia, How ??? I make a lovely short biscuit with cardamon. No problems.
-
This sounds good. I need to build up a supply of jars and have a go at this.
-
ooh, this looks good - will have to wait a while till pears are in season though. Thanks for posting :)
-
This sound like a lovely combination! Look forward to making it when pears are back at their peak :)
-
Feeling that I'd like to use whole cardamoms... does anyone know how much I should substitute?
-
I only had 10 cardamoms but that it still tastes nicely spiced to me. I also substituted rapadura for brown sugar, and had to add an extra 150g.
The chutney is lovley, thanks for the recipe :)
-
Dear Chookie, I've made some! Thank you. Now we'll see if we can be patient enough for the two months mellowing. Smells gorgeous. :)
-
Greenie and Cecilia, hope you can wait.
-
I made this today. First tasting was great! Can't imagine how yummy it will develop to be in 2 months!
-
This is exactly what I've been looking for! Sounds fantastic and I am also going to be having a go at this very soon.
-
Renni and Jude59, hope you enjoy it.
-
Dear chookie, your post to the others has reminded me that our chutney is nicely mature now. What do you recommend I serve it on or with? Thank you. It is delicious.
-
Cecilia, How about a cheese sandwich or corned or roast beef ?
-
Brilliant - I hadn't seen this one, but I've got all the ingredients to hand!
-
Amanda, have a go, it is a bit different.
-
I've got a batch of this cooking now and it smells divine! I found a similar recipe in sally wise's book and she uses cloves instead of cardamon - i love cloves so i decided to make it with half cloves, half cardamon.
I'm imagining that this would go great with a griled chicken breast for an easy and tasty dinner
-
Snappy, let us know how the cloves go. sounds interesting.
-
Chookie it smelled so great i don't know how i am going to wait 2 months!
This will sound a little strange but it actually reminded me a lot of Alyce Alexandra's Turkish Tea as i was making it. Pears (apples), lemons, cloves, brown sugar (honey) etc. I drink that tea by the litre when I am sick - it is so yummy! So i can't wait to taste the chutney.
Thanks for the recipe.
-
I have just made this today. It smells and taste divine, Looking forward to trying it in two weeks
-
Wow! Chookie this certainly has a kick (well for my taste buds) when I tasted it after it had finished cooking. :D I made three an a bit jars.I did give it an extra 12 minutes of cooking.

CC, I think it matures a bit at being kept. Perhaps a smear will be enough. LOL
-
Well Chookie you will pleased to know my chutney did mellow and was a perfect partner with cold turkey in a sandwich. :D

We'll Chookie you will pleased to know my chutney did mellow and was a perfect partner with cold turkey in a sandwich. :D
Pleased to hear that. Nice to have something a bit different. Anything to break the monotony of all that ham.
-
I have made four batches of this chutney over the past 18 months.
It is a fantastic chutney especially at this time of year with ham and turkey leftovers.
I highly recommend it.
Thanks for the recipe.
-
Hmmm so I made this with fresh ginger, but now that I've tasted it (hot from the thermie!) it's got a definate ginger kick!
Sooooo .... what's the difference between fresh ginger, stem ginger, and stem ginger (fresh) ? As it appears that stem ginger is ginger in sugar syrup?
Tastes yummy though - my mum is staying with me and it's a thermie kind of day - beef stock, hommus, this and as soon as I've boiled the water to rinse the jars out (I've already put them through a hot dishwasher) I'll be making quiche, starting with the shortcrust pastry ;)
-
A busy day for sure.
-
Kpev, I use the ginger available from the fruit and veg section at the Supermarket but bottled in syrup or glazed would be fine.
-
My SIL requested more of this wonderful chutney so I made another batch of this today.I ran out of Chilli flakes so used two dried instead which I added at the beginning with the garlic, ginger and lemon rind. :)
-
CC, glad SIL liked it. Did you/ she let it mature?
-
He loves your chutney Chookie :D I'll let it mature for the two months before he can get his hands on it ;)
-
Off to the market tomorrow to get pears and ginger to make this chutney again.
It is fantastic with cheese and crackers.
It is a winning recipe.
Thanks
-
Boo, glad you like it.
-
I made these superb chutney again yesterday.I had a request from my SIL's Mum for some more of this .His family adores it. :)
-
That's one way to keep the in-laws happy Denise ;D
-
CC, must make some more of this as pears are in season now. Thanks for the reminder.
-
Hi Chookie. Can I ask why you put the lids on when cold? I thought to keep preserves etc they had to be sealed hot?

Hi Chookie. Can I ask why you put the lids on when cold? I thought to keep preserves etc they had to be sealed hot?
When there is vinegar involved, I always seal when cold, and use a plastic top. Jams and jellies I seal hot.
I think it is something to do with the condensation or water on the lid that can encourage mould to grow.
-
Thanks for the reply Chookie. I didn't know that.
-
Bumping this delicious recipe.
Just made a batch to have ready for Christmas :)
-
Hi CC, I think you have made this before. Good idea to make it now for Xmas.
-
I am just cooking another batch of this chutney.
It is great for gifts as it is just a bit different but really nice especially with cheese.
Thanks once again. ACW.
-
As I’ve not made this chutney before I thought I’d give it a go for the nursing home trading table after reading the excellent reviews. It will mature just in time for using after Christmas when most people have cold meats to use up. This is the only recipe I’ve made that makes a decent quantity so only 1 batch is needed - I have 5 jars of this recipe to go with the other things I’ve made.
-
Judy, hope the people who buy it enjoy it.
-
I’m sure they will Chookie. Thank you for the recipe.
-
I'm thinking of doing a tiny hamper for each of my brothers this year. I know one will love everything and try it, but I feel the other may consign it to the bin. I will decide in the next week or two.
-
Cookie, I think that is a nice idea. The brother who is likely to be unimpressed may like something that you can make.
-
I have made this chutney many times it’s great with lamb chops . Oh and home grown pears when in season .
-
K Atie, we are lucky to live in the country where there is so much local produce. People are more than happy to share. We are looking forward to a bumper Apple crop this year.
Glad you like this recipe.
-
I made a batch of this today. One big jar is for our SIL parents for a Christmas present. Apparently they love the chutney. The other jar is a present for a friends birthday next Sunday.
-
CC, people do really love homemade goodies. Well done.
-
All my jams, chutneys and Christmas cakes sold out today at the nursing home trading table as did Katie’s beautifully presented cookie ingredient jars. People really do love these homemade items.
-
Judy, that is great news. Well done.
