Recipe Book Recipe Reviews / Cashew Chicken (Indian cookbook)

made this last night and was pleasantly surprised.

it is much easier to make than it appears when you first look at the 2 page recipe! i think it will become a favourite due to its simplicity actually.

the taste was not at all what i expected - VERY subtle, but definitely grew on me as i ate. you wouldn't want to serve it with a vindaloo or anything over powering - i think on its own or with a simple vege dish or a garlic naan would be perfect.

i had no yoghurt so made it with some cream i had to use up and a small splosh of apple cider vinegar. that was fine though i think the yoghurt would be better. i had actually missed the yoghurt in the recipe and thought it was dairy free when i started it, so next time i'll try some lactose free cream, or possibly making it with some curdled rice milk or something.

i give it 3.5 - 4 stars :)

personally i would love to see some different / new things, and for a reasonalbe price. I would also hope that recipes (at least a few if not all) would be handed out  - the one class i went to we were given none  :-\

Chit Chat / Challenge #5 - 4 ingredients or less

Hi all, long time no see :D (and no, i'm not really back yet lol)

part of my new job requires me to research how to cook healthily on a budget and i even get to blog surf  8) anyway it inspired me to post this new challenge (ok, it's taken me about 3 weeks to get here to do it but anyway.... lol)

come up with any many ideas or links as you can for recipes that use 4 ingredients or less. bonus points for each 'whole' food you use rather than a processed food (interpret this how you will ;))

after a long break (months) from making it i've started - or attempted to start - making it again. but it keeps turning out like glue and is unusable - what am i doing wrong???! am i over processing the rice & nuts before i start? help!

it all seems to be happening here and my head is whirling ...

first of all my son (nearly 7) has been diagnosed yesterday with Aspergers syndrome, so i will need to be doing what i can to get him (and us) the support we need for that

and i am off to the dr tomorrow as it seems that i probably have an underactive thyroid, which would explain why i have been soooo exhausted and unmotivated for months now.

i can't believe they have both come at the same time, but hopefully if i can sort the second i will have more energy to deal with the first. no wonder i haven't been cooking much!

i would love to go to the following:

an "asian" class - chinese, thai, indian etc etc. mix of recipes from the new books and new recipes, yUM!

A BREAD MAKING (oops am on my laptop, am not very good without a keyboard lol) course where you learn about general bread making skills as wel as thermomix specific info (though i probably wouldn't go to this given how little i make gluten bread now)

a gluten free cooking course that had a mix of current and new recipes and was educational about flours, gums, ingredients etc

i know it's possible to do a slow rise with a pizza dough by leaving it in the fridge for the day. has anyone tried this with 'our' pizza dough recipe? how long couldyou leave it there? could i make it this morning and have it ok for 6/7pm tonight?

Ryan (6) has generally been a pretty good eater, will try any vegie & his fave thing is a salad etc.... but lately he is becoming fussier and fussier and because he hardly eats protein foods he is ALWAYS hungry - so he'll leave the dinner table and ask to make himself a sandwich  :-))

i constantly worry that he must be hungry at school and it must be affecting him (we have been having a LOT of problems with him at school and are investigating possible aspergers / PDD-NOS at the moment).) the other day i was there and he hurriedly ate his lunch right at the end of lunchtime, then less than 1.5 hours later was complaining that he was too hungry to stay and play with friends after school.

anyway, this is what he won't eat - suggestions for snacks and meals or just ways to increase his protein intake very welcome.
  • chicken
  • most meats unless they're mince or sausages
  • cold meats
  • cheese
  • yoghurt
  • nuts
  • lentils, chickpeas, beans (he used to love them and i would give them when we have chicken but no more :()
  • hommus
  • eggs, except in cakes etc
he also won't eat anything for lunch at school except a tomato, lettuce and cucumber sandwich, which sounds healthy but he's as skinny as a rake. *sigh*
