Name of Recipe: Bacon Floddy
Number of People: 2 to 4
Ingredients:
2 grated potatoes 225 g approx
1 finely sliced leek or 1 grated onion 125 g approx. ( squeeze potato in tea towel to remove excess water)
50g SR flour
2 large eggs
S and P
3 rashers streaky bacon, diced

This made 8.



Preparation: grate veg and mix altogether in a bowl and shallow fry until golden brown and cooked through.
Put spoonfuls in hot oil and push down with potato masher. I lightly browned and put on baking tray and finished in oven 190'C

I used rice bran oil. Traditionally lard or dripping was used.

Very good with scrambled eggs. Makes bacon go along way.

This is similar to what we call Mock Fish here DJ and akin to the recipe in our EDC called Potato Cakes.  Most people find that recipe doesn't work by using the TMX to grate the potato, it is far better to grate by hand.  For that reason I think it should be in non-TMX recipes but I'll wait until the other moderators come on and see what they think.
