I love chocolate soufflé which is sometimes called also as hot brownie. I had tried many recipes but never had a success until I found this one!
It’s from “Io e il mio Bimby”. I tried it many times and never disappointed me.
I hope you like it.
It's also very practical because you can prepare it easily the same day or even much before
Chocolate Souffle
6 people
Ingredients
1 orange peel (without the white)
150g bitter chocolate
150g butter
100g sugar
3 eggs (approx 60g each)
40g flour
A pinch of salt
6 aluminium foil muffin/pudding tins (I use aluminium foil ones because I can place them in the freezer more easily than a big 6 regular muffin pans)
Preparation
Grate orange peel for 10 seconds on Speed 8. Repeat if needed. Set aside
Break chocolate into pieces, put them in TM bowl, chop for 5 seconds on Speed 7. Clean down the sides of the TM bowl with spatula
Add butter and sugar. Cook for 6 minutes at 60°C on Speed 3. Let it cool.
When cooled at the room temperature, add eggs, flour, salt and orange peel. Mix for 30 seconds on Speed 4
Grease and flour the tins. Fill upto ¾ of the tins.
Keep them in freezer at least 90 minutes
Bake in 220°C pre-heated oven for 15 minutes
Turn them very gently upside down on serving plates and serve right away.
Optional: Mostly in summer I serve them with vanilla ice cream. I believe that is a beautiful combination.
Tip: You can prepare this cake the days before and keep in the freezer until you use. Whenever you have guests and feel like having something sweet all you would need to is cook it for 15 minutes.

Dec 2016 Bootobethin. Well I made 2 batches of this recipe for Christmas Eve dinner. One batch wheat free. (I used white wings gluten free flour) and the other batch dairy free (I used Nuttlex). SENSATIONAL DESSERT!
CC - I had a change of plans for dessert for Christmas and made this instead. It's absolutely delightful and so easy to make. Thanks Farfallina for another great recipe.
I gave this recipe to a non-TMX friend. One tip she did give me, when she buttered the moulds she dusted with cocoa powder and not flour.
cgonsalv - Made these again and stuck with the 15 minutes. Made sure the oven was pre-heated and the results were perfect.
These are a family favourite until such time I work out how many calories they are at which point I will have a heart attack I'm sure. All my family have said to pass on a big thank you.
Twitterpated - This is by far one of the best desserts I have ever made with the TM. I even keep some in the freezer for when those unexpected visitors drop in. It is impressive and absolutely delicious.
JD - although I was a little tentative when taking ceramic dishes from the freezer and putting them straight into a very hot oven (watched them thinking they would crack) all went well and they were perfect in the 15 minutes. I lined the bottom of the dish with baking paper, greased the sides well and sprinkled cocoa powder as suggested earlier then upended the ramekin onto a side plate before placing it into the serving bowl. Easy and these are a must for your freezer for an instant, delicious dessert. Thanks farfallina. Next time I made them I lined the ramekins with Multix Cafe Collection Muffin Wraps - quicker and easier than greasing the ramekins and cutting circles of baking paper for the bottom.
snappy - Unfortunately, despite greasing the ramekins my puddings are still sticking to the mold, but apart from that these are FANTASTIC! Next time I will just use a liner in the ramekins. And there are going to be lots of next times! Thank you farfallina.
thermo18 - Made these yesterday, and we all loved them, so easy. Will be making more today to have in freezer for emergency desert, thank you.
Wonder - As expected the most time consuming part was preparing the cases. I used small silicon patty cake cases and coated on cocoa. The one batch 11 small ones, 1 was enough with a small dollop of ice cream for DH and I but DS and his cousin had three each. DS declared them "heaven on a plate", he's never commented like that with any other food so high praise indeed. Will make another batch to keep in the freezer.
I have also made 12 in small silicone cupcake molds and cooked them for 10 minutes each.
Katiej - YUM YUM YUM YUM!!! I used the Multix Cafe Collection Muffin Wraps as suggested by Judy - so easy and they came out perfectly. The best bit about this dessert is there are 4 more still sitting in the freezer for another time.
Shazzy - They are YUM. Very easy to make and so good that they can be left in the freezer for when you are ready then cooked from frozen. Highly recommended!! thanks Farfallina - they were beautiful!
DJ - Using muffin cases brushed with butter and dusted with cocoa. Cooked for 20 mins from frozen until risen but looked baked all over. Turned out perfectly from paper cases with gooey centre.
JenJan - Wow! How useful is this recipe!! I tried this on my family over the weekend and it went down a treat. I love that I can make it ahead of time and leave it in the freezer and it cooks beautifully. Yay! Thanks Farfallina. Love this forum!
jo nz - I made these and froze in silicon muffin cups and baked later for guests. They were all very impressed. My muffin cups are a bit smaller and I made 11 from one batch. As they were smaller, I only baked about 10 mins. I didn't grease the cups at all.

Assuming the harina is cornflour? Got the rest of the recipe, I think.

this is what I translate it to:
170g chocolate
170g butter
3 eggs
3 egg yolks
20g sugar
50g corn flour??
Preheat oven 240°
Add chopped chocolate , 20 sec spd 3
Add eggs, yolk, sugar, mix 30 sec spd 3
Add flour, mix 15 sec spd 3
Spoon into ramekins.
Cook in oven 6 mins – hard outside, soft inside.
Just not sure on the corn flour/harina bit.

Harina is just plain wheat flour.
You can use http://translate.google.com/# it pretty much makes it understandable in english.

I thought I would tell you Farfallina that I gave your recipe to a friend(non-Thermomix owner) to make.She had a great success.She did things slightly different because she doesn't own a TM.One tip she did give me,when she buttered the moulds she dusted with cocoa powder and not flour.Thank you from my friend Sarah. :)

Is the flour in this recipe self-raising flour or plain flour and the orange zest, is that just one strip of rind or the whole orange please? Guess you could leave this out if you don't like orange flavour.

Judy I think it is plain wheat flour I think it would be nicer without the orange rind personally. I might try this one soon too.

That's what I thought Yvette as apparently there is no such thing as SR flour in Europe.

Judy it is not self rising flour but a plain one
I don't use SR flour
About orange, it gives a nice touch but also could be left out depending on one's preference
It is peel of 1 orange, preferably organic, without the white parts! the white would make it taste bitter

I can now report back on my SIL's experience with this recipe but doing it without a TMX. The first lot she was waiting to rise up like traditional egg white souffles so she overcooked and burnt them. I reiterated the time and told her how they should look and have just received a text message - 'you were right, only cooked them 10 minutes and they were perfect' so there you go, success at last. Thanks CC for the converting the recipe back to a non-TMX one for me and farfallina, another thumbs up.

If not enough, I could recommend to serve with one ball of vanilla ice cream :)

It will have to go into the 'sometimes treat' category, unlike 'home-made butter' which is my favourite hourly treat.

If I had the room in the freezer I would use muffin tins but it was easier to poke a ramekin here and there for me. I lined the bottom of the dish with baking paper, greased the sides well and sprinkled cocoa powder as suggested earlier then upended the ramekin onto a side plate before placing it into the serving bowl. Easy and these are a must for your freezer for an instant, delicious dessert. Thanks farfallina, I'm sorry it took me so long to get around to them.

I've recently made them
I was gonna have some guests and I prepared them 1 week before their visit, kept them in freezer
I baked when it was almost time to have dessert. They only take 15 minutes to bake (+preheating time)

I'm really lazy when it comes to greasing or lining any thing, could I use the silicon cup cake moulds and could I just spray with oil, or will I still need to use paper or sprinkle with cocoa?

Wonder, baking paper is your second best friend in the kitchen. Its not worth trying to skip the important step of tin preparation, as you always wish you hadn't when you are trying to get the thing out in one piece without it sticking and breaking up

I make and freeze these in little ramekin dishes - I line them with muffin liners.

CP, I do take the longer way when I have to but i find that a spray of oil works well in 99% of cases. I use quite a bit of baking paper but find it very fiddly on smaller things. Judy I might have to try some of those muffin liners, where do you buy them from? Do you peel them off when serving or serve in the liners?

buy them at supermarkets. Just lift out and peel off to serve .

Wonder, I didn't try spray of oil for this recipe so I don't know how well it would work
It doesn't have a dense texture so I am not sure
If I were you, I would try one of them with spray of oil and continue with the rest as I described in the recipe and/or as judy said because both ways are tried and confirmed. (I am not much of a risk taker myself :) )
If you ever try with spray of oil please let us know of the result

Ok, I am a lover of chocolate fondant. I picked my wedding venue because I could have chocolate fondant for dessert. But I had never attempted making one because I thought it would be way too tricky .... That is until Cornish Cream recommended this recipe on another thread.
The thing I love about this forum is all the recommendations and with the success everyone was having I had to try it.
Unfortunately, despite greasing the ramekins my puddings are still sticking to the mold, but apart from that these are FANTASTIC! Next time I will just use a liner in the ramekins. And there are going to be lots of next times!

When I prepared these, I've always used small aluminium foil cupcake/muffin tins.
I find them very easy and practical to use
Mine never stuck so far.
I sometimes prepare these fondant cakes in advance and keep in the freezer for some unexpected guest or unexpected craving! :)

I have made these a few times and it has been a hit every time, but are they supposed to come out of foil or paper cups or ramekin dishes? Mine sticks to the insides!!!

I have tried al foil and ramekin dishes and coated with butter and cocoa. Next time I will try the muffin cases and coat half with flour and the other half with cocoa and see how that goes...

CC gave me her conversion back to the way non-TMX owners could make these, I passed it onto SIL and she is still getting rave reviews from her guests. Very handy to have in the freezer for emergency desserts.

Made these as a treat for DS last night, he gets his braces today so probably won't be up to much eating for a few days. I let him have McDonalds for dinner after basketball training and then 3 of these for desert!
I made 12 in small silicone cupcake molds and cooked them for 10 mintues each.

They were pretty small farfallina ;Deven so we would love him to put on some weight, he's a good eater but plays a lot of sport and carries no excess weight at all so he can afford some extra treats.

Found the missing two in freezer.
Cooked for 20 mins from frozen until risen but looked baked all over.
Turned out perfectly from paper cases with gooey centre.
Served with CC's real Cornish clotted cream, fab.

Has anyone tried a lemon version of this?
Do you think use lemon rind and juice and increase flour slightly?

What would ooze out of the middle DJ? Perhaps do a lemon cake mixture but put some lemon curd in the middle before adding another layer of the cake mixture. You're a good cook, perhaps you could give it a go and let us know if it was a success. It would be a nice variation of the chocolate one.

Big hit tonight.
Slight troubles with tins.... Owing to storage issues my proper tins are not here.
I put them in the freezer in plastic ones.... Then realised I couldn't put those ones in the oven...
Scraped them out while frozen into Silicon one.
Then tipped out silicon one on to plates, and then into bowls.
Phew it worked... Just the washing up to be done now... >:(

No BZB, the Multix Café Collection Muffin Wraps are made from baking paper so there is no need to grease them.

My muffin cups are a bit smaller and I made 11 from one batch (don't know what happened to the 12th cup from the set!! I think it went in a lunchbox and never came home).
As they were smaller, I only baked about 10mins.
I didn't grease the cups at all.

My family adore this dessert.For the past few years we have eaten this for dessert on Christmas Day.I like vanilla ice cream with it but DH dollops a huge blob of Cornish Clotted Cream on the top LOL
I doubled the recipe today and popped the twelve aluminum dishes into the freezer. :D

I didn't realize you could make this soufflé ahead CC? Will look at the recipe have always been to afraid of soufflé failure so have never attempted to make one. Thanks for the inspiration.
