I froze thickened cream and when I thawed it in the fridge the consistency had changed. Is it still ok to use even if it looks as if it has curdled?

Yes it is Courton.  not sure if it will still beat but quite OK to use in cooking.  If I want to freeze cream to whip, I whip it then freeze it.

What recipe for pastry do you use if you are planning to freeze it for future use. Or is it just easier to by the already frozen?

Thanks Uni, I love that site.  Just made homemade Nesquik from it and will post the recipe in drinks. Good one for the Christmas hampers.
