Tonight is Chicken Madras with rice and probably something green.

No, the recipe isn't hard at all.  :) 

The stuffed pasta shells freezes well also. Freeze the stuffed shells on a baking tray then put in freezer bags.
No need to defrost they will cook through in the oven. 

THREE CHEESE STUFFED PASTA SHELLS WITH A MEATY TOMATO SAUCE – Serves 8
350g jumbo pasta shells 

Cook pasta shells for half the cooking time stated on the packet; (7 mins), make sure not to overcook. Drain and rinse in cool water. Set aside.

Stuffing
850g whole milk ricotta cheese drained
250g parmesan cheese, grated, divided in two
65g grated Romano cheese
1 egg
salt and pepper, to taste
12 leaves basil, sliced thinly
1 ˝ tblsp chopped parsley

In a bowl, mix ricotta, Romano, half the Parmesan, egg, salt and pepper, basil, and parsley. Stir until combined.
Fill each half cooked shell with stuffing.  Place on a tray and either put aside if making ahead, or even freeze at this stage.

Sauce
1 medium onion, chopped
5 cloves garlic, crushed (used 4 large)
250g Italian sausage, meat removed from skins and pulled into chunks
125ml red wine 
800g can crushed tomatoes
425g can chopped tomatoes
3 tsp sugar
pinch salt
Little chopped basil and parsley
slices of mozzarella

Heat a little oil in a largish pot over med heat.  (used sauté pan).
Add onions and cook gently until tender.
Turn up heat, add sausage meat and cook breaking it up into small pieces as it cooks. When almost cooked, add garlic and cook for only 20-30 seconds until aromatic.
Add wine and let it simmer for a min or two.
Add toms. salt and sugar, give a good stir and bring to the boil.
Reduce heat to low, cover and simmer approx 30 mins stirring occasionally. Remove lid and simmer until it starts to thicken.
Check for seasoning, add basil and parsley and stir to combine. Remove from heat.
Preheat oven 180C.

To assemble, coat the bottom of a large baking dish with sauce. 
Place filled shells seam side down on the sauce.  Top shells with remaining sauce. Place slices of mozzarella over the top.
Bake for 25 minutes, or until hot and bubbly.

Yvette, I've used both pork with herbs and spices and also beef with herbs and spices, both were really good.

You can use a tsp to help put the cheese mixture into the shells or it's actually easier to use clean fingers  ;D

This thread is killing me, had a fantastic meal last night. ;D i have been drooling over all this good food. Good food here is fine dining so costly everynight, however we did find a good pizza place, great pizzas, cheap and cheerful :) maybe tonight or we might fine dine again.

Never want to see burger and fries again, even ds doesnt like them out here.

Julie o that looks great, both dishes.
Could i half the pasta dish, i dont wantto bulk the freezer out again with left overs.

Grated the cheese and made the breadcrumbs in the TM.The mustard coating was just enough for 3 chicken breasts,suggest that you double it for 6.Had to guess at weight of breadcrumbs so made 100g.This was enough to coat the three pieces and possibly a fourth.

Yum Cornish, I've saved that recipe and will give it a try.   :D

Hally, yes you can halve the recipe for sure.  Even though there's only the 2 of us I always make the full recipe and freeze 2/3 of the prepared pasta shells in 2 separate lots, then on the day I make the sauce fresh and put the frozen shells directly into the sauce, cover with more sauce and bake, no need to defrost the shells first.  :)

Speaking of Parmesan Chicken have you tried this recipe for "Parmy Chook"? If so how do they compare?

I made the Parmy Chook about a month back for parent in laws and it worked out very well.

Thanks for the steak link, looks yummo.  I have to rid the last bits of beef in freezer.....full one comming  next month  :D

and Ayla's tuna mornay...because DD has been begging me to make it  :o
