Title: Cream of valerian (Lambs’ Lettuce, Maché)

Name of Recipe: Cream of valerian (Lambs’ Lettuce, Maché)

Number of People:  6

Ingredients:

1 medium onion or 2 scallions (80g)
2 cloves garlic
30 g butter
150 g potatoes, cut into pieces
1/2 teaspoon salt
1/4 teaspoon pepper
600 g chicken stock (or 600 g water & 1 stock cube)
200 g Valerian salad (Lambs’ Lettuce, Maché)
60 g lean smoked bacon, cut into thin strips
100 g cream
1 pinch sugar
2 teaspoons lemon juice
1 dash Worcester sauce

Preparation:

Place onion and garlic in the TM bowl, chop for 3 seconds on Speed 5.
Add the butter and sauté for 2 minutes at Varoma temperature on Speed 1.

Add potatoes and chop for 3 seconds on Speed 5.  Add salt, pepper and stock, cook for 12 minutes at 100°C on Speed 1.

Place valerian in the container of Varoma, position the Varoma and cook for 3 minutes at Varoma temperature on Speed 1.

Meanwhile, fry the bacon in a frying pan until it is well browned.

Add valerian and remaining ingredients, except bacon and blend for 30 seconds on Speed 10.

Ladle soup into six small bowls, decorate with bacon and serve hot.

Suggestion: Instead of valerian you can use other salad types such as romaine, red radicchio or watercress.
