Jams and Chutneys / Megan's Tomato Passata

This is delicious. It's one that can either be used straight away or canned in jars and kept in the cupboard for up to 6 months.

Megan's Tomato Passata

2kg very ripe tomatoes
good slug or two olive oil
Sea Salt

1 large brown onion
2 cloves garlic
1 Tbsp olive oil
3 bay leaves
handful fresh marjoram, rosemary, oregano, sage (or two tsp dried Italian herbs)
pepper

Preheat oven to 180° C.

Cut core from tomatoes and place in baking dish. Pour over oil and sprinkle with sea salt. Roast for 30 minutes until soft and skin is loose.
Meanwhile, chop onion and garlic in  *: . Add olive oil and sauté on 100°, speed 3 for about 5 or 6 minutes until soft.
Remove tomatoes from oven. Cool slightly and peel away skin. Pour tomatoes and juice into  *:  and add herbs. Cook on Varoma, speed 2 - 3 for 30 minutes, NO mc, or until reduced. Test for seasoning and if necessary.
Pour hot sauce into sterilised jars with popping lids or canning jars and seal. Place in a pot and pour cold water in to come ˝ way up the jars. Bring to boil and boil for 10 minutes.  Leave in pot until cool. Lids will pop down if sealed correctly.
Keeps for 6 months in the cupboard.

 :-[ Seems I have to wait until December for my book, but, since I'm going to be in Perth in November, I thought I'd stock up on some of the ingredients needed.
Can anyone give me a list of the specialist spices? I have star anise, garam masala, yellow and black mustard seeds, ground cumin, cardamom & coriander, anything else? I also have ghee.

I just made this and would recommend that you use chicken thighs. It's not specified, and I used breasts - they broke up into little pieces!
I found that the TMX struggled with this quantity of ingredients and wouldn't recommend the 500g chicken meat. I would halve this recipe.

These are excellent and adaptable to many different flavours.
The dough will keep for a month in the freezer or a week in the fridge.

Refrigerator Cookies

180g butter (needs to be butter, not Dairy Soft or margarine)
1 cup brown sugar
1 tsp vanilla
1 egg
2 1/4 cups plain flour
1 tsp baking powder

Preheat oven to 180 degrees. Have ready two large pieces baking paper.
Cut butter into cubes if it's straight out of the fridge.
Blend butter, vanilla and sugar on speed 6 until creamy. Add egg and continue blending for about 10 seconds.
Sift flour and baking powder together and add to  *: . Use  :: setting to blend the dough.
Turn out onto one sheet of paper and cut in half. (dough is very soft)
Roll one portion into a sausage shape around 30cm long and roll in the baking paper, twisting ends to seal.
Repeat with other half of dough. Place in the fridge for 30 minutes or until you need it.

When ready to bake, pre-heat oven to 180 degrees C and prepare two biscuit trays with baking paper.
Cut the logs into slices about 75mm thick. Place on baking trays with about 2cm between. Bake for 15 - 20 minutes.

VARIATIONS

Gingernuts
Add 3 tsp ground ginger and 1 tsp mixed spice to the flour mixture:


Gingernuts

Fruit Spirals
Add 1 tsp mixed spice and 1/2 tsp ginger to the flour mixture. Roll each dough portion into a rectangle and spread with fruit mince. Roll up swiss roll style in the baking paper

Macadamia
Toast 1/2 cup macadamia nuts and chop in TMX. Add 1/2 cup coconut and the nuts to the dough and blend gently on  :-:

Enjoy!! :)

I haven't tried chocolate, but I would probably replace 1/4 cup of flour with 1/4 cup cocoa.  You can also add choc chips. I would use the tiny ones and press them into the cut biscuit before baking.

Pretty much followed the recipe, but used Coleslaw Dressing, plus a tsp of French Mustard. Then I added another 200g cabbage and another tbsp of dressing. It needed this extra cabbage IMO.
I used a red apple and left the skin on for colour. Also added some leftover crushed pineapple, probably about two tbsp all up.

Delicious. Easy as anything and clean up a breeze!! I'm impressed.

Bread / Experimenting with Bread

I'm not happy with the bread that I've made in the TMix so far, so I'm experimenting.
I believe bread needs a long, slow process for it to be at its best in texture and lightness.

This is my recipe number 1 that I normally use for my breadmaker:

355g water
600g bread mix (I use Lauke and blend 400g white with 200g multi-grain)
1 1/4 tsp yeast

Add to TMix and blend for 5 minutes on :: setting
Rest for 10 minutes
Blend 5 minutes and rest for 10, then blend for 5 minutes more. :: The rest in between is important. If allowed to mix for a full 10 minutes, the TMix heats the dough up.
Allow to rise in machine for at least 30 minutes.

Turn out and place into bread tin. Cover and allow to rise for another 30 minutes. Bake at 220 degrees for 45 minutes.

Mine is baking now, so I'm only guessing at the time. This is the baking time used for the breadmaker.
Will post an update in 40 minutes or so!

I made two lots of mix. Put the first in the greased 8" square pan and saw that it wasn't very much, so made the next and added it. Cooked at 180 for 40 minutes FF.

Changes I made:

Dairy Soft instead of butter and didn't melt it as it was soft.
Mixed for 30 seconds speed 5, then 1 minute speed 3 (just so sugar dissolves)

5/5 for texture and taste.

Breakfast / Baked Beans

I just made these today and they're delicious and look very similar to canned. (important for husbands, and I imagine, little kids)

250g navy beans - can substitute if needed
1 tbsp oil
1/2 chopped onion
2 1/2 tsp salt
3 rashers 'meaty' bacon ( I use shortcuts), chopped
1/4 tsp ginger
sprinkling dried thyme
2 tbsp golden syrup
1 440g can diced tomatoes
1 TM measure tomato sauce
3 TM measures water

Ideally, start the day before and soak beans for 8 hours. If time is short, soak beans with a tsp bi-carb, rinse, then boil in plenty water for 15 minutes. Drain.

Heat oil on 90 for 30 seconds, slow.
Add bacon and onion and cook for 5 minutes, speed 1
Insert butterfly
Add everything else and cook for two to three hours on 100, speed 1.

The beans aren't soft and mushy like canned beans, they do have an al dente texture. I'm canning some in jars right now to see if that will soften them.

Chit Chat / Brand New TM31!!

I've put my TM21 on the market and have lashed out and bought the TM31!! 8)
I haven't been on the forum since April, been busy with my business. I went to a show in another country town and there was the Tmix opposite my stall. The presenter must have loved me as I kept going over to her stall and telling everyone how wonderful it was! After watching the demos all day, I succombed. The demonstrator kindly offered to help sell my old TMix for me.
I just picked it up yesterday. It's going to be doing some heavy duty cooking in the next week or so as I experiment with it!

It's sooo fantastic! I loved the 21, but the 31 is quiet and has a much better shaped bowl. I've made a chocolate cake and bread this morning and am just making baked beans. I'd planned to make them in my crockpot, but thought, hang on, the Tmix can do this!

if they work out well, I'll post the recipe!

Unfortunately, only on Foxtel, but worth a mention.

A 'Great British Menu' contestant, I think it was Brynn, was making a beetroot puree and it wouldn't cook in time, so his challenger suggested 'this machine', pointing to the Tmix. He told him "It cooks and purees!" The voice-over person called it a 'state of the art food processor'.
The contestant wouldn't believe him, but tried it anyway. He kept saying, "It won't work, it won't work." Then, finally he was elated that it did work!

Cakes / Great Pattycakes

 :P Yes, I call them 'pattycakes', not cupcakes.

This was originally a food processor recipe, so converts well to the Tmix.

Place in bowl:

220g softened butter
3/4 cup (150g) castor sugar
1 1/2 cups(240g) SR flour - I have successfully used plain flour with 2 t sp of baking powder
4 eggs

You can dump the whole lot in and mix for about 3 minutes on speed 4.
But I prefer to do it this way:
Mix the butter and sugar at speed 4 for 3 minutes. Scrape down frequently.
Add eggs one at a time and mix for 30 secs each - scrape down between additions.
Add sifted flour and mix on speed 2 for 30 seconds or until incorporated. I now use the  :: setting for adding flour to cakes. Mix for about 15 - 20 seconds and use spatula to assist.

Bake at 180oC, fan forced for 15 minutes. I use an ice cream scoop to fill the patty pans. Makes 16.

Amanda - I just made these and they are lovely. I added 1 tsp of Queens Vanilla Paste. If I wanted to make them chocolate I would sub 1-2 Tbsp good quality cocoa for same amount of flour.

ralo - These are great though mine needed 30 minutes to cook.

brazen - great recipe and converts well to being gluten free!!
Just wanted to note that I made these yesterday with GF flour and lots of vanilla but forgot to put the baking powder in - they are even better than usual without it! yum!

CP -  had a half success today - one batch rose, and then the second batch rose and then sunk to a level top. Am still getting used to my new oven perhaps...

Jabba - I made these and they turned out really well. I needed to mix for about 2 min to incorporate the flour - and used the spatula.  I made 12 cakes in large patty cake papers (in muffin trays) and in my oven, cooking time was closer to 30 min.  Delicious!

darls - I made 50 cup/pattycakes and all were gone. My boy said it's the most yummiest! I did two batches with small paper cupcake, using green icing on top and 5 smarties as 5th bday.

simplyrhonda - Made these, the loved them. Delicious & easy.

maddy - Nice and easy MJ. I added 50g coloured splinters in with the flour too.

WAThermoFamily - thanks Meganjane these tasted great!  Even so good that most were eaten before I got time to ice and decorate.

AmandaN -  I have used egg replacement as my younger son is allergic.  The cupcakes out ok.  They were a little drier than cupcakes with egg but I didn't expect them to be exactly the same anyway.  A couple of them (slightly larger) broke when I removed them from the tray, but hey.....they were the commission ones that I got to eat!  They rose well and dropped a little in the middle, so with icing they were pretty much flat across the top.  I then added 5 mini-marshmallows (his 5th birthday), and you don't notice at all.

Lisa J - Thanks for this recipe, they were lovely. Made a second batch and stirred crushed Oreos through the batter and they turned out even NICER!!

em - thanks mj for a great and simple recipe.  I love the recipe, the batter is so fluffy and when cooked the patty cakes are beautiful and moist.

cottchick -  they are fantastic and too easy for words. I just threw all the ingredients in in no order, forgot the baking powder, still they are just perfect. THANKS!

Hi all,

I've just found this forum. Funnily enough, I was googling Thermomix because I was planning on selling mine having not used it for about three years.
After reading here, I got it out and started using it again. I made roasted pumpkin and zucchini soup, which ended up being too large a batch and I had to transfer it to a pot. Then I made the Milk Rolls from the recipe book. They were the most divine rolls I've ever made!!

So, to cut a long story short, my T'mix is back in my kitchen and I'm excited about using it again!

Glad I found this place.
