Cookie, nice imprivation
Must make more Tahini biscuits.(posted).made them crisp this time. Gluten and dairy free.

Today trying a new eggplant lasagna  recipe to cook in SC. Also Chinese inspired Pork belly. Cooked in Varoma and crisped in oven.
Will also try Marinas Mushrooms.

The holiday is over - it was back to the kitchen for me today. Egg salad using the Creamy Cashew Mayonnaise recipe from Rainbow Recipes, Cajun Style Red Beans and Rice, Teriyaki Baked Tofu, Smokey Refried Bean Soup (made thick so we could use it for a pasta sauce) and a Chickpea, eggplant and tomato casserole.

Made Spiach, ricotta and pumpkin lasagna. Lasagna sheets rolled around a filling of ricotta and spinach with pumpkin sauce topped with mozzarella.

I was disappointed with the Cottage Pie that I made last night. DH said it was lovely but I thought it was so so.Maybe it's because I'm fighting a chest cold that it didn't taste right to me :-\

CC hope you feel better soon.

That lasagna looks absolutely delicious, Chookie - I really miss recipes like this because DH can't have dairy.  I have found lots of substitutes, but there is still nothing to beat lovely melty cheese on top of lasagna or macaroni and cheese, etc.

CC, everything tastes not right when you have a cold. Probably was good if DH said so.
Marina, I agree there really isn't a substitute for dairy in some dishes.
The pork belly cooked in the Varoma tasted great but I couldn't get the rind to crisp up in the oven. I think too much moisture was absorbed by the rind.
Just Lemon butter today and going to tweet a biscuit slice recipe.

Nice cooking everyone.

Chookie, I like the look of your lasagne. Yum.

Over the past few days I have made Trudy's Lemon Muffins, Chelsea's Vegie and Rice Slice, A Tuna Casserole from the food.com site (very nice), Ham Cheese & Zucchini Scrolls, Piroshki from an old recipe I had and Worcestershire Sauce.  Today will be Kimmy's Fruit Cake, Classic Italian Meatballs from Recipe Tin Eats and some Nutella Croissants as a treat for the GDs.

We are still house and animal sitting for DS and family so I have had plenty of spare time to cook.  They come tomorrow so it will be back to normal.
The  man who said it can't be done should not interupt the woman doing it.

Wow Margaret, you're doing a lot of cooking to keep yourself busy.  I daresay you're going to leave some in the fridge or freezer for the kids.

I needed to wizz up a large cake in a hurry on Saturday, to take out early on Sunday. I did a Buttercake from Tenina. It was very nice.
