Thanks JD we love it too, however now we are coming into hot hot weather, I must admit I haven't made it in a while! But you guys will really enjoy having a fridge clearout!!! ;) ;) ;) ;)

Has anyone frozen this?? Is it still nice re-heated?

For some stupid reason, I am always hesitant to freeze things that I've made, such as the brocolli & cheese soup (I can't remember who's delicious recipe that is.. or this minestrone, or some of the casseroles.

I feel dumb posting this question as I figure it's something I should know.. but there ya' go, I'm not always the sharpest knife in the drawer  ;D

Karen, I'd say all soups freeze well. I've frozen the broccoli and cheese one as well so something like a minestrone is no problem.
They are such handy packs to have in the freezer.

I made this for dinner the other night. We had it with Ciabatta from the freezer that I warmed up. I'd forgotten how delicious it was.
May all dairy items in your fridge be of questionable vintage.
