We're having farfallina's cheese stuffed chicken meatballs tonight.
May all dairy items in your fridge be of questionable vintage.

Decided to make my own pasta and pasta sauce and made spinach and ricotta cannaloni. In the fridge waiting to be chucked in the oven later. Dinner....... sorted!!
Won't be needing dinner too early as there was sauce left and as there was pasta dough left too, I made some fettucine. It was so nice, DH and DS7 and myself had some and DS said he really enjoyed it!!
I had some what I thought was ricotta I picked up in IGA the other day on special, had to be used by today. Went to open it and realised it was in fact QUARK! not bad for 2 bucks each but I needed RICOTTA. Anyway, dug deep into the freezer and came up with the ricotta I needed.. Phew!
I'll just have to make some cream cheese with the quark. At least it was cheap.

Worked all day and kids spending the night at grandma's which would normally mean Thai takeaway but not now I have my TMX! Red curry chicken for dinner - luckily I had some bought curry paste in the pantry, didn't have ingredients to make my own. Much nicer than takeaway, and I have leftovers for the freezer for next time I feel like a bit of spice!

Have made fried rice and pork spare ribs from the latest book, but jeez the pork is not cooking in the oven in the time that the recipe says and its so hot here the house is like a furnace. We are sitting outside waiting  ;D

We had maddys mexican meatloaf with salad....dh and i enjoyed it ..very filling however the munchkins didnt like est although they aren't liking anything lately (its driving me insane)!!

Scotch eggs as a pie. That is boiled eggs in sausage m eat (with lots of vegies in it) in a pie. The recipe is from a BBC Good Food on the ipad. :D

My mum and i were given some zucchini flowers.
My mum found this recipe (not sure where) yesterday which I made for dinner tonight,

RISOTTO AI FIORI DI ZUCCA
 
300GR RICE
1 ZUCCHINO
10 FLOWERS
40 GR OIL
1 ONION
½ MC WHITE WINE
660 GR WATER
1 STOCK CUBE
BUTTER AND PARMIGGIANO TO TASTE
 
WITH THE BLADES MOVING AT SPEED 6 PUT THROUGH THE ONION
ADD THE OIL AND FRY  3 MIN 100* SPEED 1
ADD THE ZUCCHINO AND THE FLOWERS CUT INTO PIECES
COOK 3 MIN 100* SPEED 1
INSERT THE BUTTERFLY ADD THE RICE THE WINE AND TOAST
2 MIN 100* SPEED 1
ADD WATER AND STOCK CUBE AND COOK 16MIN 100* SPEED 1 WITH THE MC ON THE SIDE
THE LAST 2 MIN ADD THE BUTTER AND THE PARMIGGIANO
 
I COOKED THE RICE AS THE PACKET SAID WHICH WAS 13MIN AND LEFT IT FOR  COUPLE OF MINUTES
IN THE BOWL

The only thing I did different was chop the zucchini for 5 sec on speed 5 (kids don't like chunky zucchini) and added about 20 zucchini flowers.  Also added salt and pepper and used my own stock. I cooked my rice for 15 min.



Very nice!!
OH and miss 10 HATE risotto but both went back for seconds.....go figure
