460gm water - 37deg, sp1, 2-3min or until it reaches 37deg, then add:
4t yeast
4t sugar
3t bread improver (optional)
20sec,37deg,sp3, then leave to foam for approx 5min. Then add:
770-790gm flour (I generally use the larger amount)
3t salt
30gm (or1/2 mc) oil.
3min,37deg,closed lid, ::
This will be a very sticky dough.
Tip into oiled/floured bowl (or wrap in thermomat, but it is quite large), cover (I use oiled gladwrap) and leave to rise until doubled.
Once doubled, shape into rolls/roll out and top for scrolls/pt into bread tin,Cover (once again I use oiled gladwrap) then leave to rise again.
Bake preheated oven 180deg: 10-15min+ for rolls, 20min+ for loaf, 10min+ for scrolls (obviously ovens vary as do sizes of bread tins, scrolls and rolls, so basically cook til done!! :) )
I have no idea where the original recipe came from, so my apologies if it is yours. ???
Tho I have changed the method a bit....

More pics:
some at second rise stage, some at ready to eat stage!! :)

They look absolutely delicious, I have never put anything more that 500gs of flour recipe in the TMX , I guess it handles this big amount if you are making it all the time.
-
Lovely Astarra. New method for me.
Yes Brenda I have often used up to 800 gms of flour.

-
Your rolls always look amazing, thanks for sharing a family recipe.
-
They look so very light Astarra. Thanks.
-
Do you think this would work if I halved the recipe?
Not sure if we could eat that amount and I don't want to overload the Thermomix.
Thanks for the recipe.
-
I see no reason why half wouldn't be fine. I often halve recipes.
-
I made these this morning and it doesn't overload the tmx. In fact it's a great little recipe. Easy and lovely rolls. I made into 15 rolls and it's great to feed everyone for lunch and have some leftover for the freezer. Thanks Astarra, I think it's my new go to recipe too 😄

I made a version of this dough today, using 270g vitasoy flour and 500g ordinary bread flour. I used the boiling water in the oven trick for the rising of the dough and it did take longer than the Vienna loaf time but rose really well. I found this was an easy dough to work with, mine wasn't too sticky. My oven decided to play up today though so the rolls were a tad doughy. However, I've just come in and have cut up the small loaf for the freezer, testing the end piece with some butter and vegemite. It is surprisingly good and is very light indeed. I wonder how much better it would have been if the oven temperature was stable. Thanks astarra, a good one.
-
Thank you Astarra! I think this is the best bread I've made to date! I think the heating of the ingredients is particularly good for cool/low humidity climates :)
-
Another batch today - into 17 buns... :)
....miss8 has just walked in from school, and said Öh yummy, mum's made buns again" and proceeded to eat one... ;D (or more!! ;) )
-
Love this recipe. Thanks

Astarra, lovely recipe. Thanks. 2 rolls missing!! Rat attack.
-
Tried this recipe yesterday - sorry forgot to take photo. How fabulously simple and ready in no time. Will certainly be making again. Made two loaves yesterday - next time perhaps one loaf and some lovely soft rolls. Thanks Astarra - I have been lazy lately and making bread in the bread machine but this recipe has me going again from scratch.
-
Made this today with 150 g wholemeal flour in. Added bit more water.
Two good loaves 30 mins in Aga.
Thanks Astarra.
Here's the pic, sorry for big size

Made this again today, this time with 2 tsp malt extract instead of the sugar and about 300 gms granary malted flour, plus rest white bread flour. I use 1/2 tsp vit C powder instead of bread improver.
Very good.
I like the quantity of this recipe as it makes two good loaves.
Thanks for sharing Astarra
-
;D I am glad to see this is working for others, am happy to give something back to all you wonderful people who make up this forum :-*

Astarra you say to knead for the 3min at 37º
i cant have the temp on while kneading, is that normal?
-
Dont know, Uni...I always have it on..... ???
-
thanks astarra
-
I made a loaf last week using this recipe, lovely and soft it was still nice yesterday apparently. (forgot to take a photo)
Uni I found I couldn't have the temp on whilst I was kneading either. Maybe its a TM5 thing?
-
i don't think astarra has a TM5 do you astarra ?
-
I meant I couldn't in my TM5, sorry Uni I just reread my last comment, confused myself lol
-
i am thinking that the temp light is only because of the heating of the water b4 hand
-
Good thinking, 99!! I think that's the answer right there, Uni....

Wow! DJ! What a fabulous effort ! How many did you end up making.. and how long did that take you? Inspirational!! :)
Gert, all your rolls, etc. also look great! Do you freeze them?
-
Don't know whether it helps anyone but I recently ordered a bread tin from Williams Sonoma $38. Unfortunately delivery was $12 but a friend wanted something as well so deliveries over $100 were free.

DJ and Gert the bread looks wonderful.
What a good idea for a fete DJ, there is always lots of cakes etc.
-
Thanks Goldfish for asking, it did take a while... I did x2 quantity in two batches, using a whole bag of flour, it took most of the evening and I was rolling them in my sleep after. Each roll was around 12-14 gram dough.
Topped with one of: fennel seeds, salt and pepper, poppy seeds, nigella or sesame seeds.
Supposed to be Elizabethan Manchet. The whole Elizabethan evening of music and dance and food and drink raised £1000 for Oxfam disaster fund.
-
It was worth it then DJ.
