Title: Hi from New York City
Post by: Home cook on June 01, 2009, 02:55:40 am
Hello everyone...

I read a recent article in the Wall Street Journal that described the Thermomix in such a way that I was absolutely convinced I needed to get it.  I am a pediatric occupational therapist with my own practice here in New York City.  I work a lot of hours and I was looking for a way to cook healthy food without spending hours in the kitchen.  Subsequent research via the internet sealed the deal for me.  I contacted a Canadian distributor and had the Thermomix imported from Quebec.

My first dish was the mushroom risotto which was quite a success at my dinner party.  I first made the vegetable stock which was a great way to learn about the machine. The second dish I attempted (the ice cream recipe from the Australian cookbook that arrived with the machine) was a different story.  It was supposed get firm in the freezer in three - four hours but was still a liquid after seven hours.  I substituted vanilla extract for vanilla essence and maybe that was the problem?  The alcohol in the extract interfered with freezing?  My friends, with the wonderful risotto still in their bellies, forgave me for my promise to serve a delectable ice cream with chocolate sauce. For dessert we headed out to our local creamery.

Has anyone had any success making ice cream from scratch in the Thermomix?  Also, are there additional recipe books anyone can recommend?  Thanks so, so much in advance for any suggestions/advice.  We don't have distributors in the US so I am on my own here and I would love to hear from others with any suggestions/tips concerning the TM.

I look forward to spending this summer making all sorts of dishes (soups, spreads, sorbets, and pizza).  I will share the results of my experiences.

w00t! w00t! w00t!

Finally, one more from America! Welcome! I'm from Quebec  :)

*throws confettis in the air*

Sorry you had no luck with your ice cream! Next time, try a strawberry sorbet: I use that recipe to impress company every time I have someone over, and it works every time. Let me know if the recipe is not in your book, I'll post it.

The best way to find excellent recipes is to browse this forum. Not only do you get great recipes, but you also get good feedback on those recipes, so it helps figure out if they're what you're looking for.

Funny, I was just wondering today what book I would have gotten if I had asked for an English book. Mine is French from France, and it was the only dissapointment with my Thermomix. French recipes are really unusual and don't inspire me at all.

Welcome Home Cook.
You'll enjoy this forum - everyone is so helpful and supportive and no problems too big or small  ;)

I'm an Aussie - and was surprised that you got the Australian cookbook with yours.  Nice touch though  ;D

I make the icecream from time to time (although have since had to keep away from dairy  >:().  It's worked each time, although for me it does take a lot longer to freeze.  I always use extract rather than essence.

Did you just get incontact with Canada's HO for a consultants contact details?  The reason I ask is that I have a potential customer here who is visiting her sister in the US later this year and strongly believes her sister would love one. So it would be great to have the information to pass on.

As far as recipe books (I can only speak for the Australian ones), the Gluten Free Cookbook and the Vegetarian Cookbooks are great.  There is also Cyndi O'Meara Cookbook (author of Changing Habits, Changing Lives www.changinghabits.com.au ). There is also a Seafood Cookbook (I'm not a seafood eater...).

All the very best on your TMX adventure - I'm sure you'll love it!

Thanks for the hearty welcomes!

Mr Spock - the English language cookbook (Australian) is quite good.  There are instructions as to how to convert recipes to the Thermomix.  I have the added challenge of needing to change the way I measure ingredients.   Most of my recipes use the US system of measurement, not the metric system.

I am finding the metric system quite easy to learn, especially since the Thermomix has a built in scale.

To:  I Love Bimby

I will get the contact info for you - it was included in the Wall Street Journal article.  I am at our beach house and the info is on my desktop computer in the city.  I will be returning there tomorrow and will post the info for you in case the person in the US wants to import one from Canada.  They sell the Thermomix with 110V so they they will work in our electrical outlets here in the US.

Thanks for the cookbook recommendations.  I don't want to pay an arm and a leg for them so I will need to find the best way to get them.  They are not offered on Amazon.com.

Again, thanks for the info.

Mr Spock  Thanks!!

I spoke with Nathalie and placed my order with her.  She was great!  Unfortunately, my machine was stuck in Customs for over a week.  I had to contact UPS - FDA and nudge them to get the proper paper work to the correct department.  There was a whole in the box where they peeked in to confirm the contents.  I am not sure why the Thermomix is not sold in the US...

Oops!!! There was a 'hole' in the box.  It is getting late here and my concentration is slipping...

A big welcome to Home Cook to our forum.  You will have ups and downs with your Thermomix but eventually it will sort itself out.  I suggest you browse the recipes on this forum as we have some beauties here.  You can even get some good ones from the ThermomixUK site too.  The basic everyday Australian cookbook that came with the TMX is something you need to have but the actual main meal recipes are not vast in quantity and sometimes leave a lot to be desired.  However, some are great too. Good luck and keep us informed as to how you are getting on with it.

Judydawn,

Thanks for the welcome.  I look forward to experimenting and trying new recipes.  I did a number of searches and was unable to find anyone else who made ice cream according to the recipe instructions in the Australian cookbook.  Maybe I will have to scratch that recipe...  Again, thanks for welcome!

Home cook, there are a few ice cream recipes in the dessert section of this forum.  Maybe you could give those a try.  Bron from Spain and Cookie1 from Western Australia seem to do different icecreams a lot so they could give you more advice than I can.

Hi Home cook and welcome. Try my instant ice-cream (in the dessert section), any frozen fruit and a semi frozen yoghurt, and some icing sugar. Its instant and delicious. Or try the strawberry foam, its not ice-cream, but has tiny fragments of frozen berries in and its delicious too. Both desserts are very healthy and easy and instant. All you need is frozen fruit. I also make normal ice-cream and add in all sorts of not so healthy things! So if you would like my recipe for that just let me know, but try out these 2 recipes first and give me your honest opinion ;) ;) ;) ;)

Hi Home Cook - sorry for the belated welcome.  Work and other commitments.   :( :(

I have not tried the ise cream in the Everyday cookbook, but think that 2 things may be at play.  I would not be concerned about the vanilla issue - that amount shouldn't matter.

What size tray/dish did you use to freeze the ice cream - it would be best to use a shallow metal or ceramic dish for speeding up the process.

The other thing is that I really think 4 egg yolks would be needed for 500ml milk/cream to make a custard base properly.  It may be OK to make the custard with just the milk, egg yolks and sugar, flavourings and then mix through the cream (whipped !!!! first).

Completely different recipe, but think that has a better chance of working.

Hi all,

Thanks all for the continued welcomes.

Thanks also for the alternative dessert recommendations.  I will try those soon.

I did place the ice cream mix in a rectangular glass container that allowed the liquid to spread out.  When I have some free time, I will tinker with the recipe with the added suggestions.

Again, thanks!!

Finally.... FINALLY someone else from the States :)   I live in PA, a little northwest of Philadelphia.  You'll be really happy you found this forum.  Lots of great folks and great ideas.  If you have any problems, just ask.  Someone here will have the answer.

Nice to meet 'cha !

Hi UnConundrum...

Thanks for the welcome!  I live in the Big Apple and have a place on the Jersey Shore.  Now that summer is upon us, I look forward to making some gazpacho soup.  In the past, my soup has always been chunky which was fine.  I recently had gazpacho soup that was thick and smooth which I discovered I also liked.  I anticipate that this machine is powerful enough to achieve either a chunky or smooth consistency.

Do you have more than one Thermomix cookbook?  I searched Amazon.com to find additional Thermomix cookbooks but there are none to be found.  There were a few other books that were recommended but I guess they are not sold here in the US.

Did you make the Thermomix vegetable stock? The list of ingredients includes rock salt.  I could not find edible rock salt so I instead used sea salt.  Does it matter?

I would be interested to hear about recipes you have adapted to be prepared/cooked in the Thermomix.

Hi Home cook, I'm a Londoner living in Spain (Andalucia). The THX makes a wicked Gazpacho, I make it weekly and have it in the fridge in a bottle to drink a glass when we come home from work in the evenings. I have posted a recipe. You can start by making half the amount as the recipe is for about 15!!! We personally like ours thinner, to drink from a glass, but you can adjust the water to your liking. The best thing is not having to peel the tomatoes, the best tomatoes to use are the soft pear shaped ones, if you get them there! Just cut off the stalky piece on top of the tomato, and away you go! Gazpacho in 3 minutes!!! ;D ;)

HC, I've worked on several recipes, but non in quite a bit as I've been distracted.  You can find a list of recipes I've concocted, with links,  HERE  (http://www.recipesonrails.com/tags/thermomix)

I purchased three of the books at from http://www.UKThermomix.com. My contact there was Janie.Turner@UKThermomix.com   I believe I paid about 73 British Pounds back in December, including postage to the States.

Thermomixer, the " y'all " is heard mostly in the South...  Once in a while up North but not too frequently ;)

Hi Homecook and welcome to this wonderful site. I have made the icecream from the book and it takes ages to freeze. It is nice though. Try the salted carame maple icecream, it is probably in the desserts section, it is from the 2009 Thermomix calendar. If it's not in the desserts section I will post it for you.

Hi UnConundrum,

Thanks for the info about the cookbooks and your recipes.  As I mentioned above, I plan to spend lots more time soon experimenting with the TMX and hopefully churning out tasty and healthy dishes.  I will post the results from my efforts.

Hi cookie1,

Thanks for the ice cream info.  I am so curious as to why the Thermomix cookbook said that the ice cream will become firm in 3-4 hours when it takes at least twice as long as that (for part one of the recipe).  I will revisit the recipe soon and see if it is worth the wait.  I also read that it does not keep long in the freezer.  I will post my results.

Thanks HC - many of us have problems with time/temp/speed issues in recipes for the cookbooks.  A few more vocal than others, but many of the earlier recipes may not have been tested by those compiling the books.  It may be that somebody was using a commercial freezer to freeze the ice cream ??? Who knows.  Still think it needs more egg yolks.

We'll see how you go with more attempts. - we're rooting for you !!

Wow! I'm from Philadelphia. My husband just had to buy me a Thermomix after that WSJ article! 1 week and I am in love (with the machine-- been married to the husband a lot longer). Anyway, I have a recipe database program I made and I am adding in TMX recipes already-- fixed the program last week to calculate weights over into gms on my older recipes so I could use the thermomix. I give the program away for free on my website, but it will be a few more weeks before I get the latest fixes in order and my thermomix recipes in. I have to add in a chart for the temperature conversions.

Anyway, glad to know I am not the only person on the East coast with a thermomix sitting on my counter!

Hi,
I just joined the forum and live in Tucson Az. I ordered my mine from Quebec also, because they were the first to respond to my inquiry but there are at least 3 distributors in Canada that will ship to the USA. If you go to www.easycooking.ca you can find a link to buy several cookbooks for the thermomix they will ship to the USA.
I am going to be in London in August and contacted Thermomix there to see if they had classes available but that is holiday season & no luck but they will have an Indian cook book available by then that I may try to get my hands on. The ship to addresses in UK but not outside.

I now have a Mac and, sadly, it doesn't run on them so I am without one again.

I have a Mac also and there is a program called MacGourmet & MacGoumet Deluxe. I got the deluxe you can download the whole program and use it 19 times before paying for it. It has meal plans and makes shopping lists. There is a iPhone app you can get to take your recipes &shopping lists with you. I have only had it a few days but I do like it. I have a meeting to go to but I will look up the website and post it later.

Mine is free and up for downloading on my website.

I have not converted it yet for the Mac, but if anybody tries it and likes it, I might be able to do so if I can pull myself away from the Thermomix long enough.

Again- it is free- no nags, no trial period. Just "I did it for myself and thought I might as well share it". And it does do menus and shopping lists in either metric or imperial measures. Also has lots of websites you can visit in the "Sources" section.

I just redid it and added about 50 Thermomix recipes I found here and there.

I am not sure if I can post a link to my website or not, but I have it in my profile. Once you get there, there is a link in the left sidebar then click on Augie's picture (the Westie) to download.

We arrive in UK on 7th of August but go Charmouth Dorset for a family reunion with the Indian side of my husband's family, then go to London on the 14th and leave on the 19th. I want to get the Indian cook book but I have to have a UK address to have it sent to so I need to check with one of the relatives that lives near London to see if I can have it shipped to her if it comes out in time.

Hi, AuntAnnie!

I downloaded your programme yesterday and today I have been admiring your work. I was gobsmacked. What a collection! This is a GREAT way to keep recipes tidy and not rely on bits of paper which have a habit of disappearing. You must have spent hours on your project. I think it's wonderful that you are willing to share your recipes with others.

A lot of people are going to appreciate this programme ;D

Thanks Vivienne.

I found out that I had neglected to include the metrics in the conversion of a recipe (scaling up or down), so if you want that, you should download again. But if you have entered recipes, you need to save them beforehand in another spot (export and save a copy to a spot like My Documents, then import them after you reload). (Import and export are in Recipes- Maintenance Tab).

Let me know if you need help with this.

Also, if you find any problems, let me know. I really threw the metrics together quickly because I needed them for my Thermomix!!

G'day to you. Nice to have some Yanks in the forum. I am originally from Syracuse NY and have lived in OZ for 45 years. I now live in Cairns in the tropical north of Australia. If you have any Q's about our recipes and wonder what we are talking about all you have to do is ask and you will get many wonderful replies from this community. Don't know what happened to your ice cream but I find it one of the easiest things to make. I use the whole egg and be sure to use cream with no gelatin. I haven't had a failure yet and I just throw whatever I have on hand like frozen raspberries or cocoa. Good luck and I look forward to seeing what you are cooking up.
