Thermomix Mayonaiise - adapted to be Failsafe

Failsafe Mayonnaise

Ingredients:
Clove garlic
1 Egg room temp and separated
salt
2 t hot water
1 t citric acid
150 ml canola oil
100 ml pear juice

Preparation:

Peel garlic: I used the tip of putting clove in on reverse, speed 4 to peel - worked a treat
My egg wasn't room temperature so I separated it and put the egg yolk, chopped garlic, salt, citric acid and water in TM bowl and mixed on speed 4 at temp of 37 for 2 minutes.

With blades rotating on speed 4 I slowly added the oil and pear juice. I didn't read the book correctly - I should have left the MC ON and this would have helped with consistent speed of adding. Did this over 4-6 mins.

Then added egg white and mixed for 10 seconds.

Tips/Hints:
Read recipe properly! Leave MC ON when adding liquids.

Ralo, I am so sorry that maybe I appear to be ignorant, (but my excuse is always that I have lived too long in Spain! ;D) What does failsafe mean? Obviously I imagine some sort of intolerance, no olive oil maybe? I have never seen canola oil here, is it some kind of nut oil?
