Title: Fish or Chicken Season Crispy Coating (preservative free)

This is so quick, why would you buy a sachet from the supermarket with all the preservatives

Dry Ingredients:

60g Cornflakes
20g Panko breadcrumbs
1 tablespoon dried parsley
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon celery salt
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon mustard powder
Pinch cayenne
Salt  & Pepper
***
4 fish or chicken fillets
Wet mix : 2 large eggs + 30g milk
1/2 cup Plain flour
***
Crush cornflakes 5 Seconds / Speed 4
Add the rest of the dry ingredients Speed 5 / 5 Seconds

Dip meat pieces in a) plain flour b) then wet mix c) then dry ingredient mix.

Bake in oven or frypan according to how you like it.

How long do you think this would last as a gift in the Christmas hamper CP - in an airtight container?  Obviously not suitable for a GF person though?

as long as its airtight, it should last as long as the last expiry date on the breadcrumb or herb pkt

Is Panko just the brand of breadcrumbs or is a special variety I haven't known b4. I usually buy a basic home brand one, would that substitute??

They're Japanese breadcrumbs CD, very crisp and I wouldn't swap them for anything else in this recipe.  You could I guess but you might as well go the whole hog and end up with something very special - right CP?

you could use breadcrumbs, but the Panko are just nicer

I had everything but the cornflakes, crown prince hoes into them as they are a treat. So I thought I better make up  some before he found them :) triple fits well in jug :) taking them away as a quick easy meal :)

This is really nice CP, thanks for the recipe. I used it on snapper fillets last night. I used 1 egg for 2 pieces of fish but there was enough there to do 4 pieces quite easily.

I had never heard of pancko breadcrumbs either before moving back.. Id heard ppl going on about the japanese crumbs whichthey are but we couldnt get them overseas.. We did have crispy breadcrumbs though so im sure if you cant get them you could find a substitute..i havent noticed a huge difference to whst i was using before and the pancko?? Maybe normal breadcrumbs in oz are different to those elsewhere??

I shallow fried the fish TL and yes you could definitely crumb tofu with this mixture.

Very very yummy, all gone, no left overs, left overs woukd be nice in a fresh crispy roll with salad :)

only change I made was doubling the garlic powder.
Could easily be turned into a spiced coating....too easy, thanks  :-*

I have modified this recipe to take on board  maddy's suggestion re the garlic powder. You can be liberal in spice measurements depending on what you more or less llike. I would recommend trying this mix first and then adjust. It's your coating mix after all  ;)

Yum!  We had this tonight on some chicken breasts.    Very tasty and so easy.
I didn't make the coating as JD gave me some (even easier  ;D thanks JD!).
We'll definitely have again.

Made this tonight using chicken tenderloins.  Only used half the wet mix which worked out the right amount for what I was coating tonight.

So easy, we really enjoyed it, thanks CP.

(served with a salad and potato bake).  :)

I used smoked paprika, and even more garlic powder.....the combinations of this mix are endless  :)

Had this tonight with fish, and agree that 1 tsp of garlic powder is great. I also put a teensy bit more paprika. Yum. Had some of alyce a's chilli mayo to serve on the side, and served with a salad. Simple but satisfying meal.

Im going to try this for dinner tonight and use bite size pieces with either veg or salad..

Ok Didnt have celery salt or garlic powder so used what i had in pantry and put in dry onion.. Will havebto try again with listed ingredients.. Just had with a basic salad..

Before cooking.. The white ones were just panko breadcrumbs to finish off last few bits.. I like hally's idea of mixing up dry ingredients and putting in a jar or container.. Think also drying your own garlic nd herbs would hesitate the flavour..

Made this tonight to coat some mini chicken fillets for our supper.Cooked them in the oven @ 180c fan forced for 15 minutes.

Used the last of my batch tonight. Love it.

Marinated chicken drumsticks overnight in buttermilk, coated with this, oven 200ff, absolutely delicious.

We had this on chicken fillets tonight.mi didn't have a few of the herbs so substituted the parsley & basil for sage and oregano. The flavour was still lovely.

Yes breast, 200 4 mins turn, 200 5 mins turn.

Doing thicker ones for dinner 6 mins each side.

Not milk or egg, just seasoning & then spray oil :)
