Concentrated Tomato Paste

Name of Recipe: Concentrated Tomato Paste

Number of People:  Makes about 100ml

Ingredients:
I kg ripe tomatoes
15g sugar
1 tbsp olive oil

Preparation:
Wash the tomatoes, and cut into quarters or halves depending on size.
Place in the TM Speed 5-7-10 progressively for 15 seconds.
Rub through a chinois or fine meshed sieve to remove the skin and seeds.
Return to the TM, with the sugar and olive oil Temp. Varoma / Speed 2 / 40 minutes.
Allow to cool and keep in the fridge in an air-tight container.

Tips/Hints:  If you wish to achieve a darker colour, transfer to a small saucepan and reduce for a further 2-3 minutes.  When a recipe calls for tomato purée use 1 part paste to 1 part water.  The original suggests around 20g sugar, but I feel that would make it far too sweet.

Thanks JuliaBalbilla.  I haven't tried to make tomato paste in my TMX yet- will give it a go this summer.  You could also strain the tomatoes with the TMX basket if you don't mind a chunkier consistency  :)

Thanks JB.  There have been quite a few discussions on making tomato paste - this being the major one.  It looks like you've nailed it though with a very simple recipe.  In MJ's Tomato Passata recipe thread Karen accidentally made tomato paste so if you scroll down you will come to her details.

Thanks Carine and judydawn.  Although I prefer a smooth consistency, I might try straining through the TM strainer next time as my chinois is a pain to wash up.  Gosh, there has certainly been much discussion on this subject and I agree with the comments about not adding salt, onions etc as they can always be added, but not taken away.

will try this when tomato go down to $ 2 a box

How long will it keep in the fridge in an air-tight container? or should i frezze it if making a box full
i don't need a recipe i'm italian

OMG Fundj!  2$ a box?? I suppose it depends an what you call a box  :)  Basically, we are at the end of British tomato season and I got 2 boxes for £5 - each box is net weight about 5-6kg. They are locally grown tomatoes which are rejected by UK supermarkets because they don't conform to shape or size required - which is so sad as they are more delicious than supermarket ones which sell for £2 plus a KG for foreign imports.  Not sure how long the paste will keep as it is my first effort, but it is still fine as I type.  It might freeze, but you may need to add a little olive oil once defrosted to emulsify it.

i making this now, i didnt manage to get cheap toms this year , my MIL gave me a case of  home made vintage passta (2005) lol
