Corn Relish

Made a batch of corn relish today for my Mum.  The recipe is from the Recipe Community called Sweet Corn Relish (similar to Masterfoods).  If you make it, then please do remember to waterbath as this is a low acid recipe or place in fridge and use quickly.

That’s a lot of corn relish Trudy, how long does it last with the water bathing?

Hi Judy, 12 months.  You can use it as a relish or mix it with cream cheese for a dip!  They are small jars Judy and Mum loves it, so wont last her long!

I’ve never eaten a lot of corn relish but I imagine it would be nice with cold meat.  Your Mum is sure to love it Trudy, it’s very kind of you.
May all dairy items in your fridge be of questionable vintage.

Yes I do like that dip Trudy, it’s probably the only reason I’ve bought that relish in the past.  I love how we can virtually make anything we can buy in a jar. Lucky Mum!
