Strawberry Liqueur Conserve

Name of Recipe: Strawberry Liqueur Conserve

This made 3 small jars of jam and 1 small bottle of liqueur, the recipe was given to me by an old friend many years ago. Tonight was the first time I made this recipe in the TMX.

Ingredients:

Liqueur

500 grams strawberries
1/2 cup  sugar
1/2 cup gin

Hull strawberries and combine with gin and sugar, in a jar or glass bowl, cover and stand for 3 days, shake or stir gently several times to dissolve sugar.
After 3 days strain and bottle liquid, nice over ice cream.

Conserve

250 grams fresh strawberries
drained Strawberries from liqueur
190 grams sugar
2 teaspoons lemon rind  (I used 1 lemon)
2 tablespoons lemon juice (I used juice of 1 lemon)

Place all in TMX 100 degrees 40 minutes, speed 1, the last 10 minutes I cooked on Varoma. or until mixture reaches a spreadable consistency when cooled on a plate.  Pour into sterilised jars and seal.

Is it me or is there a problem with the photo? It seems to have only half a picture. :D :D :D

Yum, I am so going to be making this Jen.  My bottle of gin rarely gets used.  Tell me, how would one drink a strawberry liqueur - neat or mixed with something.  Agree with you CC, great for Christmas hampers.

I will try some liqueur tonight and let you know JD, :)
The half cup of gin and strawberry juice and sugar made about a cup and a half.
I was thinking maybe some soda water or straight.
It's nice over ice cream that I can remember. :)

Well with that quantity, using a nice maple syrup bottle would be a nice way to gift it.  2 batches would fill 3 bottles.

Looks delish!

I recently saw a bottle of Strawberry Sweet Chilli Sauce on a friend's bench. I was wondering about a recipe for this.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I've done something very similar with vodka and it worked well.  I didn't make jam with the leftover strawberries though.  Now I think that I should have!

All I did for the strawberry vodka was lightly coat about 500g of strawberries with sugar and then pour over vodka (big coffee jar or something works).  Turned it every day for about two weeks (until the colour all came out of the strawberries) and then strained the liquid off.  Was really nice straight or with soda water or in any sort of cocktail.

I made this, with a few modifications.  Overall a success with some lessons learnt.

So, for the liquor part I used:
250g punnet of strawberries wit the tops chopped off
250ml gin
4 heaped dessert spoons of sugar

soak for 6 days in a 500ml preserving jar and shake gently everyday
after the soak drain the liquid through coffee filter paper (this is long and slow but worth it for the beautifully clear liquid)
I strained the liquid into a crystal head vodka bottle which looked pretty cool!  I think I got about 350ml of liquor.
Note: Do not freeze.  I put mine in the freezer overnight and it froze.  Moved it to the fridge and it is fine in there.


for the conserve i used:
drained strawberries from above (minus a few that were taste tested)
120g sugar
50g packet of jamsetta (this is way too much!)
juice of 1 lemon

cooked at 100c for 30 minutes then varoma for 10 minutes.

Made a lovely tasting conserve but it is far too solid.  Would be ideal if you needed the jam to be a very firm shape.  When I make it again I think I'll leave out the jamsetta all together.  Then perhaps try and find a happy medium.

With all things that I preserve, I boiled the jar for 10 minutes and left it to cool in the saucepan.  I do this to make sure that I get a good vacuum seal.

Highly recommend that everyone tries some sort of variation of strawberries soaked in white spirits.

What a great idea this is Jeninwa!! 

I made the sauce using vodka instead of gin, then I used the soaked strawberries to make Teninas vanilla and strawberry jam (FFS) and added in a punnet of fresh strawberries - and it worked just great! 

The sauce is just glorious.  I can see this being made again and again
