As I explained in the other thread, this is still a work in progress. I was really happy how they turned out but I think if I didn't add the fruit they would be a lot lighter and softer, more like a store bought finger bun, so will have to make them again soon to see.
These taste more like the square London Buns we used to be able to buy which I haven't seen for quite some time. :)
STICKY FINGER/LONDON BUNS - makes 8
280g cold water
3 tsp sugar
2 tsp dried yeast (chookie recommends to try 3 tsp when fruit are added)
520g baker’s flour
1 tsp salt
1 tsp natural bread improver - optional
1 cup sultanas - optional
Add water, sugar & yeast to TM bowl. Heat 37C/3 mins/speed 1 ½. Mc lid on.
Add rest of ingredients (except sultanas if using) to bowl.
Knead on Interval speed/4 mins. OR if adding sultanas, only knead for 2 mins, add sultanas, then knead further 2 mins.
Leave in bowl until double in size, about 1 hour. MC in.
Knock down dough, 30 secs/Interval speed.
Remove from bowl, split into 8 balls. Roll each one out to a sausage shape.
Place on a baking paper lined tray with 2cm between each one.
Spray with water, cover and leave until doubled in size.
Preheat oven 210C.
Bake approx 15 - 20 mins. (mine took 15). Remove to a rack and immediately brush with glaze and allow to cool.
Glaze (you don’t have to do this if you're not fussed about the top not being shiny)
1 tblsp boiling water
1 tblsp sugar
Place both ingredients into a small cup and stir/whisk until sugar has melted.
Icing this makes more than needed, so can halve quantities if like
1 ¾ cup icing sugar
2½ tbsp water
2 drops of rose pink food colouring, optional
When buns are cold, combine icing sugar and water in a small bowl; whisk until smooth. Add food colouring and whisk in.
Pour a little over each bun allowing to drip down the sides.

Julie, these look so good. I have found that when I make sweet buns I need to add an extra teaspoon of yeast. I think it has something to do with the fruit. Will make. Thanks for the recipe and comments.

Thanks girls and thanks Chookie for the hint of using extra yeast, will make a note of that in the recipe and try that next time. Love how people are helpful on this forum. :D

Made these today, fantastic. Decided to tackle at the same time as chookies hot x buns.
Came out well, iced 3, the rest in freezer.

Made these yesterday and added ground cinnamon and mixed spice with the flour.
Glazed them and ate them.
So yummy and a great lunch box treat.

Kimmy, yours look better than the ones I saw in a bakery I'd never been in before yesterday. Theirs were long and thin and not a patch on yours.

I've used it to make subway type rolls for the boys using Astarra's roll recipe too . DS7 insists on 6 inch subs atm. Boys, they are so hung up on size!!

Would you believe he didn't eat a single one!!! DD who really hasn't been eating recently ate two though so that was great, and the family across the road was very appreciative. DH and I found the icing way too sweet so today I'm making hot cross buns without any sugar syrup or crosses. Maybe DS will eat those after basketball.

Yes I think the 100's and 1000's certainly would have added extra sweetness to the already sweet icing Wonder. Look good though and are easily frozen if you're not going to eat them the same day. :D

They certainly do. I'm partial to a good finger bun but usually manage to keep walking past bakeries.

I wanted some small fruit buns the other day. I made these but divided the dough into 16 and made them smaller. I didn’t ice them either.

I looked at your photo Cookie and thought, 'they look like something I'd like to make'. Went to the recipe only to find it was one I'd posted 9 years ago! :-[
They look great Cookie. Have lost all my photos from back then when they were on Photobucket, which is why you can't see any of them in the old postings. They wanted $500/year just for me to post on a forum which I wouldn't pay, I wished I'd saved them all to my computer instead of to their site. Live and learn.

That’s pretty unreasonable Julie, I don’t blame you for not paying anything. It’s such a shame for the forum recipes though as your pictures are so good that you want to make the recipe.

I used to use Photobucket years ago too. That is outrageous. I use Tapatalk now.

Lovely buns Cookie. Julie, what a ripoff. Like Cookie, I use Tapatalk. Also save my favourite photos and recipes in different spots. I find even Blogspot unreliable in their administration.

I save my photos to my laptop now and share from there. I could understand the cost if I was a blogger that was getting money from it but just posting the occasional photo to a forum I thought it was a bit rich. Anyway, all good now and should I re-visit some of the recipes I posted, I will put back photos as I take them. Thanks girls. :)
