Lemon Curd - from Quick Fix in the Thermomix
« on: July 02, 2012, 05:02:44 am »
Hi all, I couldn't find a review for this so thought I may as well start one. Made this yesterday, needed to use up lemons and this recipes uses 3 so perfect for me. Delicious flavour, still a bit runny after being in the fridge overnight so not sure how it will go in a tart. The recipes states it makes 1 1/2 cups but mine was more like 2 1/2 so I think my lemons were a bit too juicy!
I'd give it 5/5 for flavour, 4/5 for consistency - probably due to too much lemon juice.
Melbourne, inner north

I just bought this book and decided to test out the lemon curd recipe. I'm really disappointed - I expected a smooth creamy consistency but my curd looks separated and is much to sour for my liking. Not sure how I can fix this - tempted to empty my 2 jars out and blend it like crazy. Any suggestions, DEEDUB?

Something wrong here. I have made this recipe mant times and find it perfect.  Yes, I would reblend it and add a bit of caster sugar. Reblend at 80 degrees for 10 minutes.
