Recipe Name:  Thai Fish Cakes

Book Name: Seafood Bounty (Australia)

Tweaking details:  I added 2 eggs because the mix didn't look like it would hold together, but then it was too runny so I added a few heaped dessertspoons of buckwheat flour.  I used gluten free flour instead of wheat flour, and pumpkin instead of sweet potato (only because I had lots of pumpkin that needed using up).  I reduced the curry paste to 1 heaped dessertspoon as I was worried it might be too spicy for my kids.

Review:  The flavour of the fishcakes was fantastic.  They were a little dry, probably because I put in too much extra flour.  I wonder if anyone has made them exactly to the recipe and if they were fine?

I used to make my own spreadable butter by hand, but now I have the Thermomix it's so much easier, and it's much smoother.  I saved a bunch of Nuttelex containers so I could refill them.

Chop 250g of butter into 1 inch cubes. Put into Thermomix bowl. Add 250g oil, eg. light olive oil, rice bran oil, etc.  (Don't use virgin olive oil unless you like the strong flavour!)  Mix on speed 9 for 30 seconds, or until you have a nice smooth texture.  Transfer to container and refrigerate. 

It spreads very easily and you know exactly what's in it (unlike margarine and other 'butter spreads').

Recipe:    Tomato & Lentil Dahl
Cookbook: Everyday Cookbook p79
Tweaks: I didn't add the coriander or the lime juice as I didn't have any.
Review:   Apart from the slight tweaking I made it as per the recipe, and cooked it for 5 minutes longer.  My husband (NOT normally a dahl-lover) came back for seconds - he added salt but I thought it was delicious as it was.  I served it with thick creamy yoghurt and rice.

Recipe:   Sticky Date Pudding
Cookbook: Everyday Cookbook p157
Review:   I made this as per the recipe, except I used gluten free flour (homemade: 2 parts rice flour, 1 part besan flour, 1 part tapioca flour) and baking powder.  I served it with the caramel sauce and icecream.  It was absolutely fantastic.  I am eating the leftovers tonight and it is still just as good.

I have this carrot cake in the oven right now!  Mady my own flour mix (as per Sue Sheperd's "Gluten-free Cooking") with 2 parts rice flour, 1 part chickpea flour, 1 part tapioca flour.  Will let you know how it turns out  ;D....

Ok I've just pulled another loaf out of the oven - definitely the best one yet! It may not look much different to the one in the first photo, but you can see that it didn't sink at the top, and it's definitely a bit less dense.

Actually Chat and I are Facebook friends but I don't use FB much any more; I'm too addicted to Twitter.

My lovely TM demonstrator just came over and made the bread with me.  I used xanthan gum this time and the dough looked a lot different - more like dough and less like batter!  I've just popped it in the oven, so fingers crossed!!!  Will post a photo when it's done.

p.s. I have not as yet heard back from Cyndi or her team.
