Chit Chat / Where do you buy fondant and cake supplies in sydney?

Hi to all sydney siders..where do you get cake supplies from gels and powders to fondsnt to specialised pans etc?? Is there a particular speciality store somewhere?? Wouldlove any info .. Thx!!

Also while im adking where do you buy fresh yeast here..?? I asked at a bakery today and the woman said no lol.. So either i keep trying at different ones or agsin there is somewhere i can get it easily..

Non Thermomix Recipes / Warm Salad of Root Vegetables

This salad although it says serves 4 easily fed 6 adults and two kids as a side.  It is very tasty and again everyone enjoyed it.

Serves 4
Prep and cook time 1 hr

2 tbspn honey
1/3 cup (80ml) olive oil
2 tbspn cider vinegar
1 tsp finely grated ginger
1 kg kent pumpkin, peeled, cut into chunks
2 medium (340g) red inions, peeled, cut into wedges
1 bunch (400g) baby carrots, trimmed, peeled
6 small (600g) raw beetroot, peeled, trimmed, halved if large (i quartered mine to be all bite size chunks)
100 g baby spinach leaves
2 tbspns sesame seeds, toasted (i used toasted pinenuts as a guest couldnt have sesame seeds)

Preheat oven to 220degrees. C (200 deg if fan forced).  Line 2 baking trays with baking paper.
Put the honey, olive oil, vinegar and ginger into a small bowl and stir to combine.
Put the pumpkin, onion and carrots into a large bowl and pour over dressing.  Toss to ensure all the vegetables are well coated, then arrange the vegetables on one of the baking trays.  Add the beetroot to the bowl and toss in the remaining dressing.  Arrange the beetroot on the remaining tray.  Season vegetables with sea salt and freshly ground black pepper.
Put both trays in the oven and bake for 40 mins or until vegetables are cooked through.
Remove from oven and arrange on a bed of baby spinach leaves.  Sprinkle with the sesame seeds or nuts and serve.

Not suitable to freeze or microwave.

Tips

You must use raw beetroot not tinned.. It doesnt have the same flavour.. I just bought a bunch of smallish raw beetroot and peeled them and cut them in halves or quarters.  If you are entertaining and are worried about staining your hands use gloves while handling the beetroot.

Another tip is you may need to roast the veggies longer than the recipe states..  The first time they were left longer and had the most beautiful flavour and were well roasted but not burnt and the second time they werent as cooked and imo even though still nice was no where near as good..

Starters and Snacks / Smoked Salmon Cones

This is a great simple recipe that we have used at new years or dinner parties etc and everyone loves them..they are super easy and taste great..however not really a thx recipe as you only mix a few ingredients..no cooking involved.

Note - you can prepare the cheese filling mix the day or night before and keep in the fridge.

For 48 cones (they are small so 3 per person or do larger cones)
Prep 40 mins not including the few hours min cooling time in fridge.

Ingredients

800 g smoked salmon in slices (pre sliced or whatever) if you smoke your own or buy it whole just slice thinly (one slice makes two cones normally)
300ml sour cream or non sweet thickened cream but thick sour cream is best
125g fromage frais/fresh cheese (this is a soft natural cheese but if you dont have that maybe a philly cream cheese or something like that but most mild soft cheeses should do).. You could use a suitable flavoured philadelphia style cream cheese (in oz i just used philly)
50 g grilled pistachio nuts shelled
2 tbspns chives, finely chopped
48 or 100g baby spinach leaves

Method

First off chop the pistachios at around 5 to 10 secs spd 3... They just need to be finely chopped.  Set aside.

Mix 100g of the smoked salmon until fine.  About 5 secs spd 5 .. a little more if not finely chopped.
Add the sour cream & cream cheese.  Mix until you obtain a smooth mixture.  Up to 10 secs spd 4 should do it.  Pour this mixturei to a salad bowl or large bowl and add the chopped pistachio nuts and finely chopped chives.  Mix through thoroughly by hand.  Leave to firm in the fridge.  Its best to leave it firm up for a couple of hours minimum... Night before is best.

Cut the slices of salmon in two down the centre vertically so you have two large pieces ready to roll into a cone.  Be careful as the salmon slices can break easily so do one at a time.
Place a baby spinach leaf on each slice or more if you like but no more than 2 or 3 then place 1 tsp of the cheese mix then roll the salmon in the form of a cone.

Place the cones on a serving plate.  Leave two hours in refrigerateur.

Serve cold.

Voila!



Sorry only photo i had from 2010 😄😄 they look so much nicer on a round glass platter and more cone shaped.. But you get the idea.. Kicking myself i didnt take photos yesterday..

Note :  you dont need to add stock or salt etc as with the cheese and grilled pistachios you get enough so dont add any!

Source - recipe was from a Marabout cookbook.. The exact title escapes me and I am unable to check as my books are in storage.. Will also add at a later date.

It could also encourage others to add to it to have even more recipes..thoughts??

This was on Tenina's blog some time back.. My noted copy was from beginning of January 2011.. This is the recipe I was talking about on the other topic.. I imagine there is no problem posting it here Tenina as it was available for everyone via your blog.. Let me know if its still there and a link so i can link it to your blog :)) or if you have a problem with this ..

Total time: 9 minutes
Preparation time: 1 minute

Very easy


Ingredients

2 tbsp each of the following;

Ground turmeric
Coriander seeds
Cumin seeds
Fennel seeds
½ cinnamon stick
1 tsp cloves
1 tsp cardamom seeds
2 tsp chilli flakes
2-3 curry leaves

Preparation

Place all ingredients into clean, dry TM bowl and roast for 8 minutes at Varoma temperature on speed 2. When cooked, allow to cool slightly before milling for 10-20 seconds on speed 9 or until finely ground.

Tips

Will store in airtight container for up to 3 months. Use as directed in any recipe that requires curry powder.

Just letting you know wont be around much at all for a while just too much going on at the moment.. Im not using thermie that much either as we are emptying out the freezers and cant say ive had much desire to cook much lately anyway so with everything thats going on and me only spending time half chatting at that ive decided its best i take a break and come back when things have settled somewhat..

Just wanted to leave a msg and not just disappear like some

i just came across this recently and im thinking about trying it but find the drops etc or kit is expensive and wanted to hear if anyone has tried this and how they are going..im a bit sceptical...its cindy omearas 4 phase fat elimination hcg diet...

so has anyone tried this or is currently on it as id be interested on any feedback...i usually stay away from these kind of things but maybe this is the boost i need to finally lose weight ive had since my pregnancies..ahhhh

Well this has been in the woodworks for a while but alot has been going on and we were unable to mention our plans but after negative event after negative event we have decided to move to Australia !!!!!!

We will be moving (in my case) back to oz .. For dh and the kids it will be unknown territory around the end of September this year so it will be our last European summer in France..

We are both happy and sad... And it's been a bit of a roller coaster ride so far this year but there you go just wanted to share the news !!  This is also the reason I haven't been on much of late as between visitors and paperwork and visas and painters and getting the house ready for sale and and we have had very little spare time...

For my part I will be sad to leave but also very happy to return to my natal country..it's been 12 years and for one I will be happy to rejoin the warmer climate... No more icy roads and slush and never ending cold months. :))

I met up with Trudy today and spent a lovely amusing day visiting chateaux etc ..will be off again tomorrow visiting some more with them.. Sorry no photos of us as yet as today started off a bit stressful and forgot the camera (flat tyre debarcle) but will get one photo at least before they leave 😊

Trudy is absolutely lovely and enjoyed taking her and dh and co around.. Was a nice day which started off very grey but ended up nice and sunny.. Tomorrow is supposed to be lovely and sunny ..fingers crossed!

It has been raining non stop for days is very gray and havent seen the sun in days as well as its quite cold for this time of year... Alot of personal problems i cant go into and seem to have temporarily lost my thermie mojo.. Hardly have any motivation to cook anything lately... Luckily dh back is much better thn it was so he has somewhat taken over...

Alot of friends around us are lso having alot of problems and dramas in their life too.. 2012 really sucks thus far...Tlk about a recipe for depression

Just venting and im hoping things improve all round... Having a rather down day..

Suggestions and Complaints / Having alot of problems..

Ok dont know if anyone is having the same or similar problem but I kept getting kicked off the forum ie it logs me out after trying to make a comment on a post usually!  It then states that I am banned from making comment on a particular board but when I log back in it allows me to make comment??? So what weird and wonderfu things are going on lately with this forum..  It only seems to be the past few days and since I rebooted my laptop.. I always use my laptop or the desktop or my iphone and have never had any problems...it seems to be the same kind of problem as not being able to post a message ie it does nothing and you need to copy the message, then refresh then paste and repost and it works but its logging me out, then i log in go back to the message and then it allows me to post????  Previously I stayed logged in for days...never booted me out...but lately seems to be doing it alot when I go to a refreshed screen..bam Im logged out grrrr
