Lucky you having excess eggs.
I cringe sometimes when a recipe calls for 8 eggs. Has to be really worthwhile or a birthday to warrant that many eggs.

Michelle, we are getting 6 a day, every day..
My Thermomix,  Kitchen Aid, Pizza oven, Nu Wave 5 in 1, Spatulas, all brings love, laughter, happiness, and great food  to my kitchen.

Thanks, I am getting so many fresh eggs per day. also have about 5 dozen eggs in fridge at the moment.
I give them away to my parents and neighbors.

Must cook another cake..

will freeze some tonight. :)

robyn make some lemon curd  b4 freezing them , some recipes call for 2 eggs, plus 2 egg yolks
i don't need a recipe i'm italian

Thanks Uni, yeah I still have lemon juice, lime juice, eggs.... :)

500g thick Greek-style yoghurt
300g lemon curd 
Method
Place yoghurt in a large bowl. Stir lemon curd through in a rippled effect. Place mixture in a plastic container or mould and freeze overnight. Place in the fridge for 20-30 minutes before you want to serve it to allow it to soften

Grilled asparagus and cheese on damper, glass of diet coke.
Another tin down in the pantry. The asparagus was horrid. Cheap brand. I was going to make a quiche with the rest but don't want to waste the eggs. In the bin.

Was that your breakfast Michele or lunch?

I'm very boring with breakfast - green smoothie everyday except the occassional weekend where I'll have poached egg on toast.

Until I tried fresh asparagus a few years back Michele, I used to buy canned too (only John West though) but there is no comparison between fresh and canned so have not bought canned since.  You'd be surprised how many people haven't tried fresh - probably because they don't liked canned. I've introduced it to a few friends since I discovered it myself.  I made a lovely salad for a large family gathering of the in-laws and my DD's family once with fresh asparagus, string beans left whole, snow peas and a vinaigrette dressing - they are not an adventurous lot and my side of the family were the only ones who tried it  :o :-)) >:(
