There is no added fat, cream, potato or flour in this soup and yet it is very creamy.
This makes4 cups or 1 litre.
Ingredients
3/4 Litre of vegetable or chicken stock. ( I made chicken by steaming in the basket, the bones from a take away chook).
1/4 of a large cauliflower or 1/2 of a small one. Broken up.
3 mushrooms, sliced
1/2 a Zucchini, cubed into 1/2 inch dice
1 carrot, cubed into 1/2 inch dice
A chicken flavour cube or I used a dessertspoon of Jo's Chichen stock paste.
Cubes of cooked chicken and chopped herbs for garnish ( optional)
Black or white Pepper. I used white.
Method
Cook cauliflower in chicken stock, 15 minutes/ 100/speed 2
Zap 30 seconds, speed 9
Add cubes of vegetables, and pepper, 10 minutes/ 100/speed1 REVERSE.
Add chicken, if using. Garnish with chopped parsley and chives.
Notes
Equally nice made with veggie stock and no chicken.

Made this tonight. It is delicious. I would prefer it a little thicker so next time I would reduce the water or increase the cauliflower.

I read this yesterday, went and made it, then blitz it.
Just gave 2 x 2 lire ice cream containers full to my neighbors up the road.
I keep making them soups as it is easy for me, and easy to eat.
I am about to make more for my Mum and Dad. :)

We enjoy soup pretty well anytime too. Although not in 40+.
I'm quite fond of cold soup too. Especially pumpkin.

Marina, I will see if I can get the recipe for the cold pea and mint soup.

Marina a couple of my favourite cold soups are Pumpkin and Potato and Leek. I just make the normal recipe and serve it cold.

Whenever we have roast chicken, I save the bones and boil them up in the TMX and save the broth. Usually freeze it. I always have a chicken stock available for soup.

I made this tonight.Its delicious.Not so thick as your photo Chookie,I was probably a bit mean with the cauliflower.LOL I added peas instead of courgette.

Yes,bCC. The amount of Cauliflower does make a difference.

I made this for our dinner tonight adding the chicken pieces.I did use a whole head of cauliflower to make it lovely and creamy.

I made this soup again. THis time I started with half an onion which I chopped with 3 mushrooms to hide them from DW. I sauteed these in a little butter and EVOO. I also used raw chicken instead of cooked. I added the raw chicken with the cubed vegetables and cooked for 10 minutes at 100 reverse speed 1.

I made this recently too. I did a large batch in my pressure cooker. I made it all in the pressure cooker as I made the stock first with leftover roast chicken, and then just kept going with the rest of the recipe. It made enough to put some in my parents fridge when they got back from their holiday and for our dinner too.

ES, what a good idea. How did you mash up the Cauli to get the creamy base?

Thanks Chookie for this wonderful recipe. I made this last friday and it tasted yumm but was watery as I probably didnt get the cauli and water ratio right :D I made Isi's portuguese rolls to go with it and hubby loved the combo, will surely be making it more this winter, and I like the fact that the soup just does not have anything fatty, perfect on your tummy :)

Thermilover, your comment about the watery nature of the soup is interesting as I made it recently and followed my recipe, I also found it watery.
I thought next time I would double the Cauli.
I noticed another member used a whole Cauli. I am wondering if the size of the Cauli has something to do with it.

It certainly would make a difference Chookie. I used a good half of a large cauli and mine was thick enough. Perhaps if you make it again (or anyone else for that matter) you could weigh the cauli to make it easier for others to get the right thickeness.

Exactly what i wanted to say Judy! Probably next time who ever makes can measure, and if it ends in a creamy texture, can update us :) But Chookie, it was still yumm :D

Thanks girls. I think that some of the problem is that I fiddled with the well known Cauli soup from the 5.2 diet. I thought, " must get those 5 serves of veggies a day. ". I then thought, " add a bit if chicken to balance the carbs with protein". Must keep fiddling.,

I picked up 2 caulis for $3.50 yesterday so made this soup with some of one of them. It is lovely.

Cookie, good to get a bargain with the cauliflower. I have been making this soup a lot as it is low carb and I use the bones from a roast chicken to make the stock. It really is a meal. I add some of the roast chicken in also.

DH has decided he isn't into smooth soup at the moment so I'm going to make this again today. It's perfect for the cool days. WA cool, not the cool many of you have.
