I’m sure we will all be interested in the outcome of this loaf cookie.

Yesterday I made a batch of Chookie’s Mushroom soup https://www.forumthermomix.com/index.php?topic=17243.0 and my Moroccan Carrot and Lentil soup https://www.forumthermomix.com/index.php?topic=1271.0. That make 29 meals of soup in the freezer, I love making soup!

It's so lovely to eat too Judy. Very healthy too. We are actually having a chicken and veggie soup tonight to go with the bread I made.

This was my recipe disaster at the weekend.  Despite throwing out and giving away kilos and kilos of crabapples we still have heaps on the tree so on Saturday I decided I couldn’t waste them … I would make crabapple jelly.

Picked and prepared the fruit (c. 2 kg) and tossed them and some fresh raspberries for colour (thanks for that tip, Chookie) into the pot and cooked it down for c. 90 minutes.  Then drained them through my strainer (tipping about 1/3 of them onto the floor in the process!). 

Left the remainder to drain overnight then on Sunday I put the fluid into the pot for the final 15 minutes or so of boiling with the sugar … that’s where the main problem was … I found I had misread the recipe and put the sugar into the fruit for the initial cooking on Saturday.

OK, I thought, sugar is sugar so everything will be alright.  Sadly, I didn’t end up with crabapple jelly, but I did end up with absolutely delicious crabapple sauce.  It was gorgeous and went so well with ice cream.

However, I have learned my lesson, so when (if) I make more crabapple jelly this weekend I will put the sugar in at the right time (although the sauce was so nice I am almost tempted to copy last weekend’s “invention”!).  Anyway, fingers crossed for a successful jelly making session this weekend.

At least it wasn’t a disaster that ended up in the bin Marina. That tree supplies you with way too much fruit, is it like that every year?

The bread from Tenina that had the pre ferment. It rose so much overnight that it escaped my largest bowl.

Marina, nothing wasted.  You could try Crab Apple vinegar.  But Crab Apple jelly is particually nice.
Judy, I also love soup.  We have it for lunch nearly every day in Winter.

It was very nice Judy. It rose for almost 24 hours.
I have a Classic Loaf rising at the moment. I made some Anzacs yesterday and hope to make a carrot cake this afternoon.

They look good, Chookie, I am planning to have another attempt at crab apple jelly this weekend, but if I end up with my sauce again by mistake I won't be disappointed.

I made some Spanakopita Scrolls this morning. DD said they were nice. It's Chookie's No Fuss recipe with 500g of frozen spinach (thawed and liquid squeezed out),
250 ricotta and 150g fetta. I added the rind of a lemon and some freshly grated nutmeg.

I saw a recipe similar to that the other day in the Coles magazine so tore it out as I thought  DD1 would enjoy it when she comes over next time.  I imagine them to be very tasty. Good idea using Chookie’s roll recipe, we can rely on it.
