Title: Fruit Loaf - with photos

FRUIT LOAF
600g unbleached plain flour (I used White Wings)
2 tsp bread improver
2 tsp fine salt
3 ½ tsp instant dried yeast 
3 tsp sugar
3 tsp mixed spice
3 tsp cinnamon
½ tsp nutmeg
250g dried fruit of choice, (try 300g next time)
500ml of very warm water which is made up of: 300ml of cold to 200ml of boiling water
1 egg, lightly beaten, combined with 1 tblsp oil
1 egg beaten with 1 tblsp of water and 1 tsp sugar for glazing before baking
1 tsp honey with 1 ½ tsp boiling water mixed together to glaze when removed from oven for shine - optional
(try making half of this glaze amount) -  ½ tsp honey, ¾ tsp water as don't need much

Place all dry ingredients except the fruit into TM bowl.  Combine for 20 secs/speed 8.

Add fruit and combine for 30 secs/Reverse + speed  4,   to distribute fruit throughout the mix.

Pour in ¾ of the warm water and all of the combined egg & oil. 
Combine for 20 secs/Reverse + speed 4.
While blades are turning, add enough of the remaining water through the opening in the lid to make a moist stiff dough. (I used total of 480 ml, try 460ml next time to compare)

Knead on Interval speed for 3 minutes

Leave dough in the bowl until it starts to poke through the opening in the lid, about 20 - 30 mins, depending on the weather.  (Mine took 30 mins in an air-conditioned room).
 
Prepare baking glaze and put aside.    Oil a 700g bread tin really well (even the rim) and set aside.

When dough is ready, knead again on Interval speed for 1 minute.

Drop the dough directly from the TM bowl into the bread tin. 

Brush with the baking glaze, cover tin with a clean tea towel and allow to rise again (about 20-30 mins. Or until dough nearly reaches top of tin).  Meanwhile preheat oven 200° C fan forced.

Once risen, bake for 30-35 minutes, (mine took 35).    Remove from oven and brush top with shine glaze if desired and allow to sit in tin for a few minutes, then remove to a rack and allow to cool.

Notes:
This was my second attempt at making this loaf.  I converted it from a Simply No Knead recipe that I've changed slightly to suit my tastes after my first try yesterday.
 
Yesterday for the fruit I used an already combined packet of mixed fruit, but I didn't like the citrus peel taste in the loaf, so today's version I combined sultanas, raisins & currants myself and this was much better. 
The original recipe only asked for 200g of fruit which is the amount I used yesterday but thought it needed more, so  today I used 250g and I think even a bit more could be added, so next time will try 300g and see what I think of that.

The original recommended using the full 500ml of water which I did yesterday and thought it made the loaf a bit dense, so today I used 480ml and it was much better, again I will play with the amount and try maybe 460ml next time, it will all depend on how it looks when adding the water.

I also used a glaze after baking just to shine the top, one that I use on hot cross buns and I was happy with how it looked.

I'm really pleased with how this loaf turned out today.  Was so nice buttered with a cup of tea.  Can't wait to toast some in the morning for breakfast.

Extremely easy in the TM.

It got to 42 today and the same for tomorrow, then cools down a little bit.  ;D

Thanks guys, I ended up cutting the loaf in half and froze one half, and there was more fruit throughout the loaf further in.  The photo was with the first slice taken off.  Obviously I need to mix the fruit in a little more also, but it tastes great and is lovely and soft.  Very happy wiith it.  :)

Hi Katya, I found this on the net in case it goes by another name overseas.  I've only just started to use it and the bread does seem to be softer and nicer, not sure if this is the reason or not.  :)

Thanks Julie - I've never come across it myself, but then I've never looked !  I'll definitely look out for it when I next go shopping

Do you think the fruit loaf would be OK without it?  Not as good obviously, but could it cope without?

I made this loaf this morning before the house heated up, and have just had a couple of slices with freshly made butter and it is lovely, DH has also already toasted three slices so I can't see me needing freeze any of it.  I substituted the plain flour for spelt, used approx 450g water, 100g mixed fruit, 80g currents and 120g sultanas, the texture seems great although I will be interested to see how it goes once it's cooled (if it gets that far).

Thanks for the great recipe, I'm sure it will become a family favourite and makes me think I should get out all my old SNK recipes and start converting them.

Thanks for reporting back Wonder.  I too toasted a slice this morning for breakfast and I loved it, tasted sooo much better than the shop bought 'raisin toast' bread we can buy here.  That seems to have an aftertaste that I don't like.   :)

Hm I made this this morning and it didn't cook in the middle, I baked it at 220 conventional for 30min and it was very brown around the outside. It was a very wet mixture I didn't add all the water and I still had to add more flour as it was kneeding as it too too too wet, not sticky wet!

Hm will try again though as I love fruit bread!

Hi Babymaker.  I'm glad it worked out in the end for you.  ;D 

Did you use a 700g bread tin?  It is a big amount of mixture so needs the bigger tin, or either make half quantity, or bake in 2 smaller tins.

This is from a Simply No Knead recipe which they tell you to have the mixture quite wet, certainly more wet than a normal recipe calls for, I can vouch for that.  It's not one that you can handle with your hands like normal dough - far too sticky.

If you are finding that the outside is turning too brown before the inside is cooked, maybe bake on a slightly lower temp for longer.

These are just a couple of suggestions, because I didn't have the same trouble and it's the only 2 things I can think of to help.  :-))

Not sure what weight my loaf tin is, I usually bake a loaf with 900g of flour in it so I would assume it would be big enough to do this, will try the lower temp next time :-* thanks for the tips!

RE: the bread improver q a few posts back, I know someone who uses a little orange juice or ascorbic acid instead, apparently the Vit C does the same thing? I don't buy bread improver as I don't really understand the ingredients, which turns me off things (and it contains soy, which  Idon't avoid religiously but don't really like).

Apparently the strained juice of half an orange, OR one crushed unflavoured Vit C tablet, or (not sure how much) sodium ascorbate powder ...

haven't tried it myself, I did use bread improver when I first started baking bread, but I found once I switched to a proper, good quality baker's flour I didn't need the bread improver. Can't hurt though :)

I know that this will sound like I work for Lauke flour mills,  but I don't.    I use their White Crusty and Wholemeal for all my bread making.   I also use the dried yeast that comes in the 10k. bag. When I have a failure it is due to some outlandish thing that I have tried.   JD it doesn't go in the bin,  the chooks eat it!!!!   Although I have a tin of improver, I have never used it.    The yeast must be fresh.   I don't use 'fresh yeast"  as i am never sure just how fresh it is.  I keep the dried yeast packet very firmly closed.   I don't freeze it as I make bread of some sort nearly every day and use a packet quickly.   Inspite of what I have just written,  everyone must find a method that suits their circumstances.   Why isi's bread is so successful is that many of the variables have been removed.  As JD has said, it doesn't work if the yeast is stale.   But for most people the yeast has been OK.,  so it works well. Just follow her instructions.   If the dough sticks at the bottom of the bowl(on the blades) then you have not measured the water carefully. If you think you need improver,  first check that you are following the recipe exactly,  and that the ingredients are all in good order. Sorry if I have carried on a bit,  but bread making is a passion and it is so rewarding to get good results.

Unfortunately I don't have any chooks Chookie.  Thanks for all your advice on breadmaking, every bit helps.  As I use bakers flour I obviously don't really need to use bread improver and my next lot of bread in the morning will be with dried yeast.  A 10kg bag of dried yeast - boy that must be huge :o :o

I use the Lauke bread mix for the breadmaker & I think Chookie means she buys a 10kg bag of flour & there are sachets of yeast sealed in foil within the bag of flour.

I use Lauke flour because -as mentioned on this forum previously- they are the only company who refuse to comply with the mandatory ruling to include Folate in the flour. Too much research says it could be detrimental to our health- especially for males I believe.

Isn't it amazing?  There are some of us who had never made their bread before, now doing it. Others who gave it a go now and then but didn't do it regularly (me)-all these people are now regularly making their own bread. Thanks TMX.

I used to love kneading the dough as I found it relaxing, but not on hot days. Now Termite does it all.

The good thing is that we have the option to do a bit of kneading if we need (knead?) to get rid of some aggro... but the TMX will do the bulk of it.

I just made this, and it is DELISH. But from the texture of the end slices I don't think mine is cooked all the way through either - I had it on 200 fan forced but may try lower next time. My oven does seem to run a little hot. I popped it back in for a bit with some foil over the top so it doesn't burn, hopefully that works.

So easy! I had to have the oven on to cook some lamb so just mixed this up and threw it alongside.

Georgie,  my oven runs 40 C over what the dial says and it's only 2 years old.  I bought an oven thermometer as I was having problems with things cooking too quick and was quite surprised at just how much out it was.  I know now to  set it 40 degrees less than I want it, and I no longer have problems with what I bake.  I do tend to leave the thermometer in the oven to make sure the temp is right, especially when baking cakes and delicate things like pavlovas.  Good luck, I hope it turned out for you.  :)

Julie, I've made this bread a couple times now with great success but yesterday's had quite a dense texture and isn't toasting very well. Could the change in texture be a result of too much water? I remembering thinking the dough seemed wetter than previous times.

Hi Wonder.  I've only made this loaf the one time so far, so I'm only presuming that what you say is right.  It does sound like too much water.  I'm so not an expert in bread making, not something I've done much of until recently, but if you make it again, just be careful that you put the right amount in and if it seems more wet than the times when it's been successful, maybe add a bit  more flour to it.  It is a wet mixture anyway, certainly more so than a normal dough mixture.  Maybe someone who has made more of these Simply No Knead loaves can offer more help than my limited experience.  :(

Firstly,  I haven't made this loaf.   I looked at the recipe,  and it would appear to have a v ery high ratio of water to flour.   The other main ingredient is the fruit.    It may be the condition of the fruit,  very dry or very fresh, is making the difference .If the fruit is very dry , maybe soaking it in a little of the recipe water for 1/2 hour prior to mixing may help.

This is a fantastic recipe and a regular one for us now. The kids and adults all love it! I wasn't sure what size my loaf tin was originally so I make it in 2 tins and then cook for 35 mins at 180C. The smaller slices are great for the children so it works well for us. Only complaint is the 2 loaves never last as long as they should!! Friends can't beleive it's homemade.

Hey Julio: I made youir bread with 300gm of fruit .It turned out looking and eating really well.
I chopped the fruit and wish I had left it in larger pieces as it seems to be cut into very small bits during the initial process.
I would be inclined to add some walnuts next time and even more than 300 gm fruit.
On the whole though it is great and the loaf looks very profeessional.

I made this bread today and it was delicious. I used a big loaf tin and it cooked in about 35 min at 200 fan forced but the top was pretty much black. The rest of the bread was perfect. Great texture and taste and cooked all the way through etc, so light and fluffy. So why did the top burn and how can I fix it next time? I'm assuming it was the sugar in the brush that made it burn but you've all assumedly done the same thing? Should I bake it at 180 next time or should I try putting foil over it once it's risen to max height? It's a massive loaf of bread so was thinking doing a smaller tin next time and using the rest for rolls or something like that. But would love suggestions or hints about the burnt top. Also just so you know, I used 300g fruit (sultanas and chopped dried apricots) as well as 460g water and it seemed perfect. I want to perfect the recipe before I start experimenting with more expensive fruit like dried figs, cranberries etc.

Maybe you could put it on a lower rack in the oven and keep an eye on it, cover it with alfoil if it appears to be browning too quickly.  Others will comment I'm sure lauraj.

laura, glad you like the fruit loaf.  Haven't made it for a while, but I remember it being quite a high loaf?  Could you bake it on a shelf lower in your oven, or try what Judy copied in her post.  I love fruit loaf, you've made me want to make it again.  :D

We have a favourite coffee shop that serves a great thickly fruited bread toasted and I was wondering how to do this.
I had an idea in middle of the night for improving on my previous attempts at fruit bread making.I now use the five seed bread recipe and exchange seeds for fruit. I add about 60 gms (even a little more)each of dried apricots, sultanas, figs, raisens mixed peel and also add a generous amount of broken walnuts. The first lot I made we decided I could leave the pieces of apricots and figs in a larger size , about a third of an apricot size. At first I was worried it wouldn't rise but it does with all that weight and it is absolutely super.We slice it thickly and freeze it and it is great to take out a piece to toast for lunch or a snack. The bread is a lovely consistancy, light and so good and healthy.
I really recommend you try this ladies and guys.
By the way does anyone else play the ukulele?Leigh (my wife) and I have joined a local Ukulele Club, they are everywhere now ,ours is in North Sydney and the members are so friendly and helpful, a ukulele costs only about $30 and it is relatively easy to learn to strum a tune.The internet has lots of easy lessons available, so you don't need a teacher.
For this old guy who turned 79 on Monday 15th Aug life is so so busy. Gym 5 times a week, spin classes and body pump and my wife gave "us" a series of dancing lessons on Modern Jive which we are about to start next week.Ready for hitting the dance floor on the five week cruise we are to take next February. Retirement years are the best years of your life.I am here to tell you.

It certainly does sound like it for you guys dingdonny  :) :).  You are lucky you enjoy good health to be able to partake in all these activities - I take my hat off to you.  As far as ukulele strumming goes, I'm sure no-one could teach this little black duck how to be musical - I am hopeless and I have been asked not to sing by my 3 yr old grand-son so I must be bad  :D :D Happy birthday for last Monday and get those dancing shoes on ready for that wonderful cruise next year.

Made this last night, forgot to glaze  :P  DH doesn't like sultana, I put dried pear and cranberry only 480gr water.  Worried that the dough too soft, but turn out beautiful.  DD looooooves this, really lovely and not as dense as my normal bread.  Thank you, JulieO.

When I just read this the words that came immediately to mind were . . . "Good God in Heaven . . .!!!!"  Just phenomenal that you can  . .and want to . .  do all this!!  Go for it!!  You sound as though you've always been someone to take the bull by the horns . . . so to speak :)  

 Music in the soul does wonders!!  When I've a lot of computer work to do, the balm for my soul is an autoplay site on youtube which plays a large selection of the Scottish twins, The Proclaimers.  For me these two are the  embodiment of integrity and sheer talent!  So . .  it's work interspersed with an occasional "quick" look at the forum and listening to these guys.  Love it!  But . . I digress . . . :)

have just realised that you're probably on your cruise right now . . hope it's all hugely memorable!! :) :)

JulieO,  it is hard to improve on a loaf when it is perfect.   I used this recipe as the basis of the fruit loaf cooked in the bread machine.  Thanks again.

I made this yesterday and have to say it was the best fruit loaf I've had in ages.  I only used 470ml of water and the mixture was still a bit sloppy,  might try 450ml next time.  Used a mix of sultanas, currants, cranberries and apricots and will certainly be making it again.

I am so happy with this loaf it is one of the best I have made. I didn't finish it off with the final glaze but did everything else as specified. I made it yesterday and placed the jug in the warmth of the sun through a window in our dining room. It only took about 1/2 hr for the first rise. I used dried apple, raisins & apricots. It is delicious. It is the first time I have used bread improver and I will definitely use again. Thanks for a great recipe 10/10  :D

I made this yesterday with the following changes:

600g whole wheat ground (in 2 lots) to flour
rapdura to replace sugar
300g semi dried cranberries
a good pinch of ginger
lots of cinnamon
lots of nutmeg
no bread improver

and YUM!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

It's delicious! My fruit was soaked, so used around 420ml liquid. Some of the liquid was orange juice too (1 squeezed orange). Perfect amount of spice and sweetness.

I'm afraid I haven't made this fruit bread past94x but personally I would use strong plain flour.I hope you had success. :)

Many thanks cookie1. I used bread flour, as you advised, and the result was wonderful. I only used 400 ml of liquid, which seemed to be plenty and I used a bit more dried fruit. This is a HUGE loaf but it's sooooooooooooooooooooooooooooo good. Do try it. I glazed it, as recommended and it looked and tasted (and smelt)fabulous.Thanks so much for the recipe.

I've made this loaf quite a few times and it is delicious, but the last couple of times it has seemed to be quite 'airy' around the middle and it doesn't seem to toast as well as it used to. Do you think it could be that I'm leaving it too long in the second rise?

I made this loaf a couple of days ago in the evening, so we could have it for breakfast the next morning.  It made a huge loaf and tasted really nice.  I used raisins, sultana's, currents and craisins as my dried fruit.  Thanks for the recipe.

I was just cruising and reading and wanted to make a loaf of bread in my slow cooker as you girls have been very clever to do but I don't need any bread. In my effort to reduce the pantry of dubious goods I discovered a 375 gm packet of very ordinary mixed fruit and since. JulieO is back posting her great photos I thought I would combine her fruit loaf with chookies method in the slow cooker just to see if I could "do it".  The dough is still in the Thermothingy rising.  I had no mixed spice so added a bit more of the cinnamon and nutmeg plus some mace and ginger . I tossed the whole packet of fruit in.

Now I must check out achookwoman's method.
Will post a pic when done.

After 2 hours 10 minutes on high the internal temperature reached 208F and I could see the bottom on one side turning a bit dark so removed and glazed it.

The proof will be seen when it cools which is very painfully slow in coming.

I made this today,  yummooo :-)) only used 400g water and used sultantas and currants.  I did need to cook it longer, and turn the oven down so it didn't burn, so nxt time will start at a lower temp.

My lo seems to like raisin toast at day care, so was browsing through these old recipes and came across this.

I had never made this so I decided I needed to. It is very nice. I used about 460ml of water but could have cut it down a little more. I wasn't watching and the loaf caught on the top a bit, but it is delicious, especially toasted.

I made  a loaf of this today.  It took a lot longer to rise than the recipe said, but then again it is a very cold day here.  The loaf is lovely and soft and tastes really nice.
Unfortunately I managed to flatten the top when I turned it upsisde down in the tin and put it back in the oven  for a few minutes
