Name of Recipe: Chorizo & Capsicum Risotto
Number of People: 4-5
Ingredients:
olive oil
2 cloves garlic
2 small onions quartered, or 1 large
2 red capsicums, de-seeded and quartered
small handful flat leaf parsley
2 chorizo sausages. Approx 250g. (I use Aldi brand...peels easily)
2 1/2 tsp. smoked paprika
1 tin Italian diced tomatoes (Ardmona is best)
1 tsp. sugar
salt to taste
fresh cracked pepper
300g aborio rice
600g tap water
1 Tbsp. TM veg. stock
4-6 large swiss mushrooms, quartered
good handful baby spinach.
Preparation:
Peel chorizo, and chop. If skins won't separate, just chop up the sausage.
Add 15 g olive oil to jug, heat for 2 minutes, varoma temperature, speed 1, MC on.
Add the chorizo meat to jug, and cook for 8 minutes, or until cooked, varoma temp., speed 1. MC cap on.
Once cooked, drain the oil from the sausage meat with basket inside jug to assist. Place jug back & chop chorizo for a few seconds on speed 5, to get it in smaller pieces.
Tip out into a pre-heated thermoserver.
Add quartered onion, garlic, parsley, and quartered capsicums. Chop 10 seconds, speed 4.
Add 20g olive oil. Cook 6 minutes, varoma temp., :-: speed 1, MC off.
Add tomatoes, sugar, smoked paprika, salt & pepper, aborio rice, water and stock.
Cook for 13 minutes, 100c, :-: speed 1. MC cap out, and basket on top of lid.
Add in mushrooms & drained chorizo meat, and cook an extra 5 minutes, 100c, :-: speed 1.
Place desired amount of baby spinach into thermoserve, and pour risotto on top. Mix, add more spinach as it wilts, then let sit in thermoserve for 5-10 minutes before serving.
These quantities will make a very full jug of risotto.
I like to tip it all into a large mixing bowl & give it a good stir, cover with foil & rest for 10 minutes.

Looks great Maddy. Did you use chorizo flavoured sausages or is it actual chorizo?

It wasn't overly spiced, so I would imagine authentic chorizo would add some lovely heat!

DH made this for dinner last night, and it is now my favourite risotto. It was so tasty! It was a bit of a pain to peel the skin off the chorizo sausages though, it took ages. Maybe they were different to your chorizo, but the skin was really stuck to the sausage. Next time I might just try blitzing the whole sausages beforehand instead of peeling them. We also cut back on the smoked paprika to 1/2 teaspoon. I wasn't sure if the kids would go for it, but they chomped it down and went back for more!

made again tonight, and used thicker 2 pack of chorizo (250g).
Once cooked, you will need to chop it on speed 4 for a few seconds, to get it in smaller pieces ;)

I made this last night, and the little fusspots actually ate it without complaining for once - that counts as a success in this house! I only minced 1 chorizo and chopped & fried the other one in a frying pan since for the kids, the chorizo is the 'hero' of the dish and they would want to see it. We're a small family so I halved the rice & liquids and everything cooked perfectly. Also eased off on the paprika because I didn't want to scare the kids off.

Oh thank you Maddy. Was just wondering what to cook for tea tonight - problem solved. DH has discovered chorizo and just loves it. I love cooking Risotto in the thermomix (would not cook it in pre-thermomix days) so we should both be happy.

The heat will vary with the choice of chorizo used, but I play it safe and stick to the milder ones to suit the kids.

Very nice recipe thanks Maddy. I didn't have mushrooms so used black olives instead. Worked well. Also halved the amount of rice and liquid to serve 2 with leftover for lunch.

Maddy do you still cook the chorizo if you have chorizo rather than chorizo sausage?

Yes, I would still cook it.
We also buy freshly smoked kabana, and cooking it really brings out the flavour I think ;)

We had this for dinner tonight and it was delicious. My DH loved it, thanks Maddy.
Used a fairly hot spicy chorizo, so I cut back a little on the smoked paprika.

The heat factor differs so much, doesn't it.
Like the butchers own kabana we buy....it can make your tongue melt sometimes....or maybe he just had too many beers before making those ones :P

Made this the other day (3rd day of Thermomix ownership!) and found the recipe really simple to follow. My bf doesn't like mushrooms so I subsituted zucchini and it still came out really nice. He was very complimentary about it. We reheated the remainder the next day using the varoma, which worked very well and kept the risotto really moist.

I made this tonight and although it was pretty tasty it is probably not my favourite risotto recipe (I am in love with Alyce's risotto from QFITT at the moment). I did make a few adjustments to cater to what was in the fridge:
- didn't have quite enough chorizo so supplemented it with some bacon
- added some wine in with the stock
- didn't have any mushrooms so left that bit out
- added parmesan cheese
It certainly makes quite a bit so I'll be eating it for a few meals over the next few days. Thanks for the recipe Maddy.

Have been meaning to thank Maddy for this recipe for some time. It is very flavoursome and works well with many types of sausages. I'm using a lovely Italian sausage that my local butcher makes at the moment. My daughter hates risotto but enjoys this one :) Looking forward to dinner tonight!!!

Maddy, I absolutely loved this recipe.
I had a chorizo and pumpkin risotto when out for dinner recently and it was nice but missing something so I wanted to try and make my own.
I just used your recipe but maybe should have added the pumpkin with the mushrooms instead of at the start as they dissolved but nonetheless, this was beautiful. I halved the recipe and only had one chorizo which I diced and left chunky. Even DH loved it and he's not a huge risotto fan.
Half the recipe was plenty for the two of us and he recipe was very well written and easy to follow. Thanks so much. I'm off to find some more 'Maddy' recipes 😜
