Late yesterday I started a new SD loaf. I was following a recipe I had found on the internet. It was to sit on the bench over night. This morning when DH got up he 'helped' by knocking it down and putting it in a bread tin for me. It was to have some more stretch and folds and be cooked in a Dutch Oven. It is looking ok in it's tin and rising very slowly. Hopefully it will taste very nice-knowing his cooking luck, it will be delicious.

Yes DH was being helpful. What is the use of saying he did wrong? I can try it another time. The loaf was quite nice, not a lot of flavour though. Perhaps it needs to rise more in the fridge. It's quite edible.

No cooking here today.

Very little cooking. Ankle still very sore.  When we have dealt with Rals platelets tomorrow, I will think about ankle.  Think he may have to go into hospital to get a platelet boost.
Have been thinking, ( very dangerous ) that I could replace the coconut in that new recipe with peanut butter. Think this would make a nice biscuit.  Will try when I have time.

Earlier this week I made a Cinnamon Cake.  Most of it gone now.
Yesterday I made a loaf of bread using the No Fuss recipe.  Another successful loaf with the new flour.

1.Ral’s platelets.
2.,Chookie’s ankle.

Lovely cooking happening.  I have some more Chookie Hot Cross Buns rising. I will need to start looking out for some more Bakers’ Flour soon. What sort did you get Mab?

Cookie, I bought a 10kg bag of Lauke Crusty White Bread Mix as it was the only bread flour on the shelf at the time.  I usually buy the Defiance brand.  Does the Lauke brand have the salt already added as the bread tasted a little salty.  I have a feeling I read somewhere that this was the case.   I gave the yeast packets and instruction sheet to DS without reading it as I had plenty of yeast in the fridge.

Made potato bread again today with yeast that was in date. It didn't hold it's shape but tastes fine. I boiled some eggs so we could have egg and lettuce sandwich for lunch. They will be long slim ones  ;D

It looks as if you’re having great success with your cooking these days Michele. I remember the days when nothing much turned out for you.

Mab, all Laucke mix flours have salt, sugar and improver included. ( including the Crispy White)  Laucke Wallaby flour does not have anything added. Anything that says Bread flour does not have anything added.  In my opinion Laucke mixes are the best flour available.  Then Wallaby, then the rest.  I add improver to all bread flour except Laucke mixes. Mab , hope this help.
