I was going to make chicken cacciatore but teacher's strike + sick child + working from home = dinner from the freezer! Beef stroganoff with mashed potatoes - trying the simmer basket method for the first time.

Home alone with lots to do.

Leftovers in fridge: some single cream, cooked chicken and tired mushrooms.

So I adapted brons carbonara for 1.

1 onion chopped and sweated in  *: plus garlic
Added
75g tagliatelle
250 water
Salt pepper
100 single cream.
 *: :-: ^^ 15 mins 100
After 10 mins add cold cubed chicken and handful quartered mushrooms

NO egg. 80 cream would have been better.

It was a good quick cheap meal for one. Quite rich.

Yum Amy! Is that a marinara mix from supermarket? I never buy those mixes, but I think I should give it a go.

Gnocchi Carbonara for dinner tonight - probably my all time favourite meal, but I don't make it as good as the restaurants. It sure costs me less, though!
