Title: Recipe review - Breakfast baskets from In the Mix

Made this this morning - my first attempt at a recipe from the book. There is an obvious typo, where Dani states to tip the water out of the TM after cooking the spinach, but doesn't mention putting any water back in prior to cooking the eggs in the varoma. Of course, it's possible that she figures that everyone would know this - but I didn't!

The final product was delicious, much easier than doing baked eggs in the oven, I also substituted ham for the prosciutto because that was all I had. Tipping the basket onto a plate prior to serving is a great touch.

I think placing the eggs under the grill prior to serving would give the dish a nice crispness, especially if you sprinkled the Parmesan cheese on at this point.

Hi Mezza,

I made these the other day too and thought they were delicious.  I used baby spinach so didn't bother cooking it first, therefore hadn't noticed any error!

Did your eggs take the full time to cook?  Mine took a lot less, although my ramekins I cooked them in were a lot larger (and therefore couldn't fit as many in the varoma at one time), and was wondering if this had something to do with it?

I can't wait to get stuck into this book properly, just haven't had the time  :'(

Hi Berry,

I acutally used two eggs in each, because I had large ramekins too and one egg looked a bit lonely! They were pretty well cooked after the soft boiled time, but I mucked it up because I cooked them for a few minutes with no water in the TM bowl  :( and so the timing was all over the shop.

The only problem was that I think some of the steam from the Varoma condensed and then dripped into the ramekins because there was extra moisture there, which is why a quick blast under the grill with the cheese added would be a good idea.

I'm also very keen to get into the book a bit more, but I'm still waiting to get my TM scales repaired, so I'm holding off for now.

This recipe sounds fantastic, is there any chance you could PM the recipe, my book will not make it to me in time for Melbourne Cup day:-)

I made this today and I really can't believe how yummy such a simple dish could be.  I used smoked bacon rashers instead of proscuitto and I didn't bother pre steaming the spinach as it was baby spinach. 16 minutes gave a firm egg yolk in my 240mL ramekins.
This will now be a regular here :)
