Hi Guys - it's been such a long time since I've been here! How is everyone - have I missed any good gossip?  ;)
So - I'm looking for inspiration. My youngest has gone vegetarian (sigh). I'm up to my eyeballs trying to schedule/assemble the Christmas dinner at ours, plus a Christmas eve dinner with dear friends, but I'd like to be able to offer my daughter at least one nice vegetarian dish on the big day. Preferably one I can prepare the day before, and preferable using the TMX to cut down on the work load.
Any brilliant ideas?

Most of my cooking is vegan, but the Spanish Bean Stew (http://www.forumthermomix.com/index.php?topic=12391.0) is very easy and tasty - however, if you are making this, make sure you do not roast the potatoes in animal fat.  You could make it up as far as the second to last step then keep it aside until Xmas day.  When the potatoes have been roasted, add the first lot of potatoes, blend them in the TMX then pour the lot into a pot, with the remaining potatoes, and heat it through.

I've got heaps of recipes, but they are perhaps more 'casual' than formal, but if you are looking for further inspiration let me know and I'll try to sort through for something suitable for you.

Hi Amanda, nice to see another ‘old’ member pop in. I hope you find something that will blow DD’s socks off.  If there’s been any gossip I’ve forgotten what it was LOL.

Thanks everyone - I've gone for the soft option of a leek and mushroom tart. She's happy with that and so am I - it's quick and simple.

Hi Amanda, nice to hear from you. A little bit late now, the first year I was on the forum I made LellyJ's , sweet potato roulade with Christmas stuffing. Went down really well with meat and non meat eaters.
