I want the sieve attachment for my Kenwood but I'm being strong!

Hmmm ... I have seen the sieve attachment but not sure what it does (I know it sieves, but wonder how it would be of benefit over and ordinary sieve).  My top two required attachments for the Kenwood re the potato peeler and the paste extruder (the one with bronze dies) - have you tried either of these?

Julie, which basic pasta recipe is your favouite?
Have noted your spinach one too  ;)

I've found that using the KA for the whole process works best for me.  Making pasta dough in the TM would only go as far as crumbs and then I had to knead it with my hands which hurt, so I do the whole thing in the KA and am very happy with the results.

The simple recipe I use is:

for each person use 100g OO flour, 1 large egg (not extra large, just large), 1 tsp oil (I used extra light olive oil), plus add a pinch of salt to the whole mix, so if making for 4:

400g OO flour
pinch salt
4 large eggs,
4 tsp (1 tbs) extra light olive oil

Place flour and salt into KA bowl.  Mix on speed 1-2 for a few secs to mix through. (don't use beater blade, just normal paddle).
Place eggs and oil in a small jug (don't whisk together).
While paddle is turning on speed 2, pour in the eggs/oil and allow the paddle to mix it together on speed 2.
When it starts to come together.  Stop and change to dough hook.
Let it work on no higher than speed 2 for a few mins to knead the dough into a ball.
Remove from bowl, wrap in clingwrap and put aside (unrefrigerated) for about 30 mins or so.  Is okay if you leave it longer,
Make into whatever type of pasta you want.

You will get to know how much pasta is right for your family.  I'm sure others would have a slightly different ratio but the above is what works for me every time.

For the pasta press, a different ratio is needed as a much drier dough is needed to make into shapes.

Julie, can you give me the ratio for pasta in the extruded? One of the reasons we haven't used it as much is we just couldn't get the dough to feed consistently.

I can't wait to get it. I still have my iPad 1 until I transfer everything from one to the other. My friend is buying it from me. Although DS 5 was not impressed as he wanted it :)

Wonder, here it is:

KA PASTA PRESS RECIPE
BASIC EGG NOODLE PASTA

4 large eggs
500g plain flour (not OO, just plain)
1½ tblsp water (30ml)
1 tsp salt

Follow the procedure I posted above for the normal dough. (flour, salt together, then add water and eggs to a jug then pour in etc).
It will be very dry but this is what you want. The press will massage it into its shape.

After resting the dough, roll into small balls with your hands and have them ready to feed in as you see them working through, about 2 at a time, but always making sure there's some working through otherwise you'd have gaps IYKWIM

If you put too many balls into the hopper it will have trouble feeding through and will struggle.

Once you've got it worked out right, you will be much happier with it.

Last week I made bucantini, was so good.  :D

I only have the attachments for the Kenwood that came with it, I keep looking at the pricelists and drooling, but even at cost they aren't cheap and I really can't justify.

Just bought 2 sets of these baguette pans on line. Been thinking about getting bread stick pans for a while. Anyone else use something similar?

I grabbed the double one a few weeks ago but haven't actually used it yet (keep forgetting I've got it....its stashed on top of my kitchen cupboards and I have to get the ladder to get it down).  Will be really interested to see how you go with it.

I just bought a pie maker, and it's all YOUR fault, evil denizens of forum Thermomix! Sunbeam pie magic 4 - $54 from good guys, can't go wrong with that. Now I have to make shortcrust pastry bcos I can't buy any bcos I'm on a budget, also YOUR fault!

My aebleskiver pan, tovolo cupcake pen and tovolo pancake pen just arrived....whooo hooo....I can feel some happy times in the kitchen with my feral fairy coming up.  She will be very pleased when I get home.
