Fig Ice-Cream Cake (with photo)

This is the last fig recipe of summer 2010 :)



Fig Ice-Cream Cake

Ingredients

200g milk cream
200g white chocolate (room temperature)
350g fresh figs
75g roughly chopped walnuts


Preparation

    * Warm cream for 5 minutes at 80°C on Speed 2
    * Break chocolate into pieces and add into TM Bowl. Mix for 2-3 minutes until melted
    * Let it rest in the fridge for half an hour
    * In the meantime wash, peel and halve the figs
    * Insert Butterfly, whip for 3 minutes on Speed 4-5
    * Add figs and walnuts, mix for 10 seconds on Speed 3
    * Cover a cake tin with plastic film. Pour down the mixture. Cover with plastic film also on the top. Put it in the freezer until frozen
    * Cut into slices and serve

Oh how fantastic :) My mum has a huge fig tree - watch out when there is a glut of them :)

Lucky you Megan.  Everyone seemed to have them when I was a kid and I hated them  - never got to enjoy them until I was over 60.  Now, no-one has a tree and because they are fashionable now they are so expensive if you can find them when they are in season.

This recipe will be on the agenda soon. Mum has gone on holidays and has asked me to pick her tree while she is away :) I will make her a couple of batches and leave them in her freezer :)
