Lemon spread

Ingredients:

Peel and juice of 1 large lemon [about 250g]
2 rounded dessertspoons of custard powder
1 cup sugar
1/4 cup of water
1 egg

Method

Use vegetable peeler to remove thin peel from lemon, without any pith.  Then juice the lemon,

Zap with sugar in TM bowl, 10 seconds on speed 8.

Add custard powder and zap 5 seconds on speed 5.

Add rest of ingredients, including lemon juice -  10 seconds on speed 7.

To cook mixture - temperature 100oC , speed 2, for 12 minutes, with Measuring Cup removed.


Variations:

For a pie filling, add an additional dessertspoon of custard powder.

Ooh, this one doesn't use too many lemons. My new lemon tree is only little and hasn't started producing fruit yet, so I have to beg, borrow, buy or steal my lemons.

I've just made another bottle of this Lemon spread from the recipe as printed .    I have assumed that everyone will include the juice from the lemon(s), with the other ingredients.    I probably should have stated this in the recipe.   Sorry!

So no butter in it? I've always made it with butter... This would be much better calorie wise!

Yes,  no butter and only one egg..  Can even make it with sugar substitute.   If your lemons are small,  use 2.

Hi achookwoman.  I am relatively new to my tm (but love it) and wonder with this lemon spread can the ingredients be doubled?  I have offered to make a few jars for a fund raiser morning tea for cancer.  Also, do you have any idea how long the spread would last?  Ta. ???

Janet,  it is easily doubled.,  just cook it a little longer. Not as rich as other lemon spreads but kids love it.  I also use it in the Lemon Feather cake. (http://www.forumthermomix.com/index.php?topic=2421.0)  I keep it in the fridge for a couple of weeks.

Great recipe thanks chookie.  Used this as a warm sauce over a lemon tea cake. Big hit with the children too.

Wonder, Quirky Jo has a lactose free version which is very nice.  It is not as golden as Chookies, but still tasty.

Made this today and used it as a pie filling.We must have small lemons here in the UK as I had to squeeze six to get 200g of juice :D :D :D

I have one small daughter who cannot have dairy, but loves lemon butter....now I may have just found something to make her grin!!! Look out lemon tree!!! (lucky it is loaded with lemons ATM)  :)

Astarra,  you have made my day.  i used to make this when the kids were little as it is very economical.  It isn't as thick and rich as Tenina's or my other recipe,  but the kids do seem to like it.

I used Rich Shortcrust Pastry (http://www.forumthermomix.com/index.php?topic=14577.0) for the pastry case.Rolled it out to fit my tin,rested in the fridge for 30 minutes.I then lined with making baking paper,weighed down the paper with baking beans and baked blind in the oven.
I never have much success with whipping meringue in the TM so used my hand whisk to whip two egg whites in a grease free bowl until very stiff.Then I added,a teaspoon at a time,100g of castor sugar,making sure each addition of sugar is throughly whipped in.
There is a Lemon Meringue Pie recipe in the EDC page 174.

I have everything except custard powder 😦 Will use the lemon component from the other recipe, I think. But it's not Chookie's 😢

How much time should I set aside to make it? My mind is clicking, clicking....excited! 😄😋

Unfortunately there is a lot of resting time for the pastry but the other parts of the recipe are fairly quick. ;D It's very hard to say the exact amount of time it took me ???
