Thanks, now I know why it's always been so hard to buy jam that DH can eat!.  Will have to try this banana jam sometime as he loves banana on toast with sugar, so this should be popular.

Pear jam, quince jam shouldn't need lemon juice either.

I have a question, hope someone can help me, do I use over ripe bananas for this (like the ones I use in banana bread) or do they need to be just normal ripe bananas. Looking forward to making this for Christmas presents.

I'm not sure willmac but I wouldn't use them too over-ripe.  If you wouldn't eat them, I wouldn't make jam with them.  Soft but not squishy I would say.

I made this today, so good, thanks for the recipe. I made this without the MC in place and cooked for the time the recipe stated and it  thickened up nicely. Tasted soooooooo good.

I still haven't made this. Today Coles have bananas at $2.25 a kilo. Might run down and get some. It would be nice to have a different jam on our toast Christmas morning.
May all dairy items in your fridge be of questionable vintage.

Bananas have been $1.25 so I've been buying two kilos every few day and freezing one.  Stocking up!

My banana jam recipe is almost the same just no OJ. My recipe calls for 'old,mushy bananas, similar to those you would use for a banana cake.' My fusspot fam didn't like it on scones or toast (must have been the colour) so I put it to good use by warming it and spreading it as a topping for banana cake. When cool the cake has a lovely jelly top (can sprinkle with extra Cinnamon) - they loved it that way.  ;)

Isn't it funny how things are yuk in one place and if you put them in another (eg on the cake) everyone likes them. My mob are the same.

I made this one last week - I replaced the lemons with limes... and left the MC off for the whole process.

it thickened up beautifully, and yielded two 250g jars of Jam.

Utterly delicious, and definitely a regular in our house now :-)

Isn't everyone glad that bananas are so cheap now? Remember when they were almost $20 a kilo after the cyclone in Queensland??  Of course,  the only fruit my kids would eat at that time was bananas- the little sods!!!
