Forgot to mention that I had made this recently too - also forgot to look at this thread  :-))  Love it but it was rather thick for me too and I will blitz the vanilla bean and apple next time too. 

Thanks for the vanilla bean in the goodie bag Gretchen, knew I was saving it for something special  ;D

I used Gert's vanilla bean to make a batch of this the other day. It is our all time favourite jam. I also blitzed the apple and bean Judy. No lumps of apple skin this time and the pieces of vanilla bean are much smaller.
May all dairy items in your fridge be of questionable vintage.

Have another read through this review before you do it Katie, you might like to blitz the vanilla bean as suggested and address the 'too thick' comments too.  I don't mind mine thick though.

Made 4 batches of this recently ( for us and my parents  :) ) I am not a jam eater but I love this stuff!!!!

I blitzed all ingredients and never had a burnt mark after cooking. My last batch I used 450gm strawberries and 180g sugar, worked great :)

Am going to try Rapadura sugar next time.

Well that was the easiest jam ever and its absolutely beautiful. It doesn't make much but I will be making another batch later it's so easy! I used a pink lady apple as I didn't have any green ones and its all good. The only thing I did differently was I used raw coconut sugar.

I made this today and did 1 1/2 times the recipe.  I used 1 1/2 teaspoons of vanilla bean paste and I cooked partly on 100 degrees (30 mins I think) and part on Varoma (I think I did 2 lots of 10 mins on varoma, I kept checking it by putting some on a plate until I was happy with how thick it was). I wasn't sure how much extra time to add since I increased the quantity but it turned out perfectly.  It filled a 500gm jam jar plus a little bit more. I've never made jam before and I'm really happy with how it turned out and DH loves it too !

Thank you, Tenina - such a perfect recipe.  I didn't even get to do a saucer test - just opened the lid and lovely jam waiting.  :)

I use this as a jam and as a chutney. My little girl has a ham jam and salad wrap for lunch most days if I have a batch of this handy. It's such a beauty!
