I have been an avid user of a simple vacuum sealer for many years, I have even developed a way of using a balloon pump to enable me to extract the air from standard bags prior to tape sealing them. However I have just treated myself to a 'posh' seal-a-meal machine which is excellent for standard sealing but can also be used for creating your own ready meal type boil/heat in the bag but with the advantage of home cooked food!
Does anyone else have any hints, tips or experience of this type of equipment? Love to hear from anyone about this.

We have had a vacuum sealer for several years and wouldn't be without it. I use it to seal meat when I buy in bulk. (chicken too) I also use it to vacuum seal casseroles, cakes, etc. I freeze the food first and then when it is frozen I remove it from it's container and vacuum seal it.

Yes , I have one also. Love it. Find it is a useful too to use with TMX meals. Have used it mostly with soups. Hang the liquid cooked soup over the edge of the bench to seal it. I Have posted pictures of how to do this in a previous discussion on this topic. I also Vac pack Xmas puds They can be reheated in the microwave in the pack.

Fantastic for keeping 1/2 avacado's.
Leave the stone in and seal......will last for over a week without turning brown.
I also buy bigger pieces of cheese and vacuum it once opened.
Also great for marinades for intense flavour.

Excellent uses from everyone! I have been smoking cheeses recently and then I vac pack them to mature, works a treat. I have also found that vac packing marinades increases the flavour in the product as others have found.
Curries, casseroles, stews, bulk buys all sealed. I sealed a have white cabbage the other week and I am seeing how long it will last, I will keep you posted.
Currently looking for bulk buying of the bags/tubes because the cost of small packs is silly.

I'm not sure where your located mindmapper, but I have purchased the Aldi brand of vacuum bags for a fraction of the cost, compared to the machine's bags. They work just as well.

My butcher seasons and vacuum packs pork belly, which I then slow cook in the bag in the slow-cooker for 4-5 hrs, remove from the bag, dry and pat dry the skin then blast at 220C for 30-40 mins in the oven to crisp up the crackling.
Almost like sous vide and a fab meal.
I've seen bulk bags for sale on Amazon.

Sounds like a great idea Amanda, where is your butcher? I've bought Pork belly from the market but not vacuum packed. Found a great way to reheat leftover pork crackling from the other day - Chookie gave me a couple of those toaster bags and I just popped the rind into one, put it in the toaster and hey presto, crisp pork crackling that DH loves without having to heat the oven.

I have to own up and say that I don't watch Masterchef. :o
Also, I think the whole sous vide thing was a bit of a fad, but for pork belly - which is best if slow cooked - this is a great way to get a special meal on the table in very short time. You can put it on during the day and then just finish it up in the evening. I would imagine most butchers would do it if requested. :)

When I first saw it I was qutie impressed that it was of the reality genre but the chefs / judges / cooks were actually very supportive and helpful to the 'contestants' and I thought it was was such a refreshing and wonderful change. However, I soon learned otherwise it just deteriorated into yet another set piece reality show - with all the monotonous soul searching confessions of the participants, etc. Really, really boring, but I guess bad news is better for viewing statistics than good news and the programme seemed to be heading that way (I had turned off before it got to this stage). Such a shame as it could have been a really good programme.
I read an article yesterday on the internet that was also critical of Masterchef but put forward the idea of presenting much the same show, only using healthy foods and creating meals that were not dripping in fats, etc. in an effort to encourage healthy eating and cooking and turn around our looming obesity epidemic. A show such as that could be well worth watching.

I was curious so DH downloaded a few episodes of the Australian Masterchef last week...dont think they hgave that in France its mainly Topchef (who are not amateur cooks) and some other one I cant remember anyway I was really disappointed not only at the whole show but the level of cooking was pretty bad and each time they were given recipes ???...what the hell..even on amateur shows here they dont have recipes...dont know just found it overall a disappointment!

I don't think that my vacuum sealer is very posh. It is called FoodSaver compact II 550. I am cooking for one most of the time so it is a really useful gadget to have. I usually freeze my soups and stews in square tubs first and then I bag them. My family refer to them as soup or dinner bricks which does not sound very appertising. I have never thought to boil them in the bag. I make my bread then I slice it before freezing it in a plastic box first. I then bag it in quarters. Its a bit long winded but the machine would just suck it into a mess if it wasn't frozen first and I only use maybe one or two slices of bread a day.I buy my bags from a company on Ebay. I prefer the bags to the rolls.

Yvette, Following Mindmappers message,I renewed my interest in food vacuum sealers and looked up a few on the internet. It seems to me that anyone would benefit by paying more for one that has a "suck" guage so that you can stop before the strong suction closes in on the food to squeeze it too hard. The trouble is that the very posh ones are way too big for my counter space. Mine is just basic which is why I need to "freeze before squeeze" :( :( :(

I never before realised it but mine is also made by Sunbeam. It is known as "FoodSaver" with the makers name not evident. Anyway, I paid around £50 BP for mine so I think that the one you saw is the one that I have come up with as a model with the various sucking guages. (£99 BP here)I like it except that it is steel and black and I prefer white in my kitchen. I might even have considered upgrading but for the colour. I have certainly not had any trouble with mine.

I've been thinking of getting one of these for ages and I just bought one on Ebay - hope it's not a dud.
It has an auto-release sensor and allegedly detects different food density and also comes with a few rolls of bags - cost $99.99.

I'm thinking about it but just holding back at the moment wondering if I really need one or not but for that price, if it works well, I might get one (if they have any left at the end of August). Will watch this space for your review :-* and then kick myself if they have sold out.

I have one called EZIVAC. You can let it do its own thing and suck the air out. Or you can manually control how much air you wish to remove. I have both bags and a continuous roll in 2 widths. It is easy to use . Last Xmas I taught the GC how to use it and they made book marks out of sealed Gum leaves and fern.for Xmas pressies. All vacuum sealed. It also has an attachment, which I haven't used, to suck air out of Jars (special ones that you buy) I think I paid $300 for it at the Elmore Field Day. I love it and seal some of the Quince Paste and other fruit pastes with it. I find it good for soups as they freeze flat in the freezer. I investigated the plastic which you use and it can be heated in boiling water for I thunk 15 mins without any bad effects. I also seal small cooked Xmas Puds, to give away as pressies. They can be reheated in the microwave or in boiling water while still in the vac. pack. As you can see I use it a lot and these are only a few of the uses. Go for it if you think it will do what you want. ;D ;D ;D

I've just had a wee play with the new toy and am very happy.
It is all pretty straightforward and idiot-proof (thank goodness), has a 'stop' button to stop the vacuum if you think it might get too squishy and came with a pack of bags and 2 packs of 2 different sized rolls of bags, so that you can cut them to size.
I think it's a very good deal for the price!

I don't have that particular model but I do have one that functions the same. I currently have the lesser model of this one and I have been pleased with it and it is in good shape but I have to say that I would go for this one. The same make as mine but a more advanced model.

I know that it is quite a bit dearer but it has the added function of sucking withour crushing. I get fed up of freezing on open trays before I can put items in the freezer bags. If I don't then the food just gets broken and squashed. I would upgrade my model if only they did this in white which I prefer.
OMG, I have repeated the word model four times in one paragraph. My English teacher would have had a fit! :o

It might be useful to check on the kind of plastic used in the bags to make sure that they are safe to microwave. ;)

I have been looking for a while now - so just did the impulse buy after your link to the ebay model Amanda - thank you so much for being the test dummy!!!!!!!!!!! With school hols fast approaching activity on ebay increases significantly in this household, just as well I am off to see DD in Sydney for 5 days - oh forgot there will be a different type of purchasing perhaps - yahoo!!!!!!!!!

I have decided to upgrade regardless of it not being white. I have ordered mine today (I noted that there is no delivery charge which has to be an added attraction) I shall put my older model on Ebay for about £20. I just thought that I would tell you in case you want to hear my opinion on the new one. I feel confident that I will find it as good as the older model (even better with the added features that improve it) I certainly hope so anyway 'cos it's a bit extrav' of me to get rid of a perfectly good one.

Received my vacuum sealing machine today - I haven't got anything I want sealed at the moment so will just read up on it until I'm ready to use it. Not too bulky so easy to store.

I have just vacuum sealed my first item and I had to show you a picture :-)) So much quicker than I thought, you don't even have to heat the machine. I'm very pleased with it, thanks Amanda.

Well there you go guys, just shows how easy it is to use. Jeninwa, you would think in this day and age manufacturers could get the wording spot on wouldn't you. I had to read some sentences a few times before it sunk in. Even have to confess that the first instruction for using the machine baffled me :-)) 'Plug the cord in and turn the machine on' - silly me went looking for the 'on' button on the machine (I'd already turned the wall switch on but thought they meant there was one on the machine too as it is just a normal thing to flick the switch when you plug something in). It took me longer looking for that than it did to seal my first package :P :P.

I have had my updated Sunbeam FoodSaver for a week now. I am enjoying the better features on it particularly the gentle touch with things like cake etc. I have decided to continue freezing soup and savoury mince into blocks as shown in my picture because they are so much better to stack. I have lots of plastic butter cartons for the job. These cartons go in the dish washer and are a boon to me especially since my portions are mostly frozen as singles. They stack so well in the cupboard too.

Have you tried freezing soups and liquids in used / clean milk cartons? My MIL used to do that all the time, but I haven't tried it - I should as they should work really well (just have to make sure that you don't slam the freezer door or push the drawer in too enthusiastically!)

Having mentioned my picture, I forgot to include it.
This shows my individual portion blocks. It is an absolute must to label though as you just can't rely on the colour. I need to do a lot of blocks to freeze this week as I am expecting to go in hospital and I think I will be glad of just a block and my microwave afterwards.

Actually, I have never been in hospital except to have babies and that is some considerable years ago. :-)) :-)) I hear that you get thrown out very quickly these days. my main problem will be boredom :(followed by suspect quality food. :-)) They need a Thermomix on every ward for me. Anyway I have not been told a date yet but thank you all for your concern. ;D

The vacuum machine comes with 1 roll and just 2 single different sized bags to look at and try. I buy my bags off Ebay but I just can't remember the make. This company on Ebay (http://www.ebay.co.uk/itm/2-x-Vacuum-Food-Sealer-Rolls-28cm-X-6m-12m-total-/310344095467?pt=UK_HomeGarden_Kitchen_FoodStorage_GL&hash=item4841f316eb) look o.k. and might be good to try to start. It's a fair price for 2 x 6mtr rolls.
I have only ever used bags with that diamond pattern on one side. I bought 50 bags 24cm x 35cm and 50 bags 15cm x 30cm but again I can't recall who I bought off. I think the bigger bags are best. You see, you can always make these smaller whereas you are forced to accept the smaller sized bags as they are. When you open one from the freezer, you will be cutting off the sealed bit. (7cms) If you had intended to re-seal the bag, you need to have enough left on the bag to set it on the sealer again. If you don't have enough left then you would have to re-bag the remaining contents in a new bag. :( I turn my used bags inside out and wash them in the dishwasher to re-use except for bags that had really greasy or smelly food for instance.(fish) I am careful with my use of bags and they have lasted me for ages. Of course it is a different story if you plan to use a new one every time. I would have a go with the accompanying roll and get used to how it works but don't leave it too long before ordering as the whole machine comes to a standstill without supplies. Always try sealing the bags that foods come in, like crisps and dried fruit because many of them will heat seal so saving your precious bags. The machine is good. I am glad of the tip up possibility as overall it was larger than I expected. Sorry if this is an epic, but I wanted to be clear. ;D Feel free to ask me any other details

Thanks Dot for the info and the tips about always having extra bags and reusing others.It would have never occurred to me to wash the bags in the dishwasher.Do you use clothes pegs to anchor them down on the top self?

All the best for your stay in hospital, Dot. I've spent more time than I would like to remember in hospitals in the last five or so years and I found the best meal was breakfast - CORNFLAKES - they simply can't get that wrong!!!

Just in case anyone is in Melbourne and are after one, the breville seconds shop in huntingdale sell them pretty cheap and also the bags for it, i have one and it's a little ripper . Small but pretty good. I use it for meat and meals on our camping trips. ;D

How much are the bags or rolls to buy?The Biglands came with lots of bags/rolls and I'm sure someone will come up with the best price a bit later when we all start running low. Cookie buys hers from The Master Butchers Asscn I think? Those that haven't contained raw meat can be washed and reused and as they are fairly expensive I think, I will certainly be doing this.

megan I freeze all of the jam i make in bags or plastic containers. Mainly i will use sistema 200ml just the right size for us and to give away (full) when i see them on sale for $1.00 i will buy 10 at a time
i use this size for
Hummus, onions garlic, olive pate, legumes to add to soups, butter, egg whites, chesse and list goes on.
Bags are a bit messy and it takes more time to fill then you need to transfer to a container but, do take less room up in the freezer

Fundj, I use bottles for all preserves as I don't want to use the space in the freezer. I often make jam while I am cooking tea.The TMX makes 3/4 jars and I can cope with this amount while doing other things. I also bottle fruit in the Microwave , for the same reason. I have posted the method on my Blog. Sorry, still haven't taken the time to learn to link.

Yes Kathryn. I do draw the line at wrapping my own presents though :D I leave paper scissors tape etc out with my present and DH wraps it generally prefaced by ' what did I get you?' lol

DH and I do the same though. If it wasn't for the kids it would just come into the house being noted that it was for that pressie but the kids love the excitement so we purchase things, bring them home with the comment "this can go in the cupboard for my b/day, xmas. fathers/mothers day etc) :D

Yes I am very happy with mine ahoney. It comes with loads of rolls/bags and I'm not sure on your other question re using ziplock bags. Maybe someone else has tried it but I wouldn't be game. When I bought mine it was only supposed to be going for a few more days but I see it is still on there with another 'buy before' date. With a few of us having bought this machine, I'm sure someone is going to do the homework for us and find out where to buy the cheapest bags when we need to replenish our stocks. Mine will last a fair time though if I don't go lending it out :-))

I was also at our local Retravision yesterday (they are offering everything at cost + 5% this weekend - I don't know how they propose to make a profit and stay in business at that rate, but I can only assume they know what they are doing - as you say, Nazar, clearing the floor for Xmas stock). Anyway, I bought a Breville toasted sandwich maker - except it is HUGE. It's their 'professional' model and does loads more than toasting sandwiches. The hinge allows it to open up flat so you can use both the top and bottom plates for cooking / barbecuing, etc.. One plate is flat and one is ridged so I am planning to use it to roast vegetables, etc. as well as experimenting with pikelets, and so on. Should be fun (I think!).

Nazar we've had a vacuum sealer for many years.You can't use zip lock bags in them but if you ever come up to Perth you can buy bags at Master Butchers Limited in Canning Vale. You buy by the 100 and they have lots of sizes. They're much cheaper than Sunbeam ones and work really well.

Yes Karen I am still happy with mine - don't use it all that much but it is handy when I do need it. If you buy meat in bulk I imagine it would be extremely handy.

Used mine the on new years eve as I deliberately went to the super market half an hour before they closed to get meat bargains. 8kg gammon joint on the bone for £5! Home, butchered and vac packed ready for smoking later in the year.
Vac packed blanched sprouts at £1 for 10kg why waste a bargain? vac packer pays for itself over and over.

Hally I used mine to vac pac all the sweets prior to Christmas as we travelled on mass to Ayr for Christmas - all froze and travelled well. The difference in price to the ones available in the stores here the bargain was too great an offer topass and I have had no problems :) :)

Hally, I'm not totally up on this subject just yet, but I believe there are new laws that have been put in place recently that cover guarantees / warranties and I would imagine that a 'no returns' policy may well be illegal. If the no returns aspect is a problem for you (and it would be a problem for me), try to clarify what the law is and that may make you more comfortable with your decision.

Thanks for your replies everyone - I think I might have to get one. We have just started buying nuts and seeds and dried fruit in bulk from a local bulk food distributor (Gaganis Brothers, for those in Adelaide) and it is just sooooooo much cheaper. I have been dividing them into portions and freezing them in snaplock bags, but figured a vacuum sealer would be a better way to go. Will also have to start using our dehydrator more, and vacuum seal the stuff we dry in that.

Hally we have a Sunbeam bought from the Good Guys and then you can get bags from Master Butchers near me. They are much cheaper there. If you buy one I can get bags for you if you need them and meet you for coffee.
We've had ours for years and I love it. I vacuum seal all meat I buy and any food going into the freezer. eg pies, casseroles etc.

I don't know where you are but I'm in the UK and I bought my vacuum sealer from Amazon. Arrived next day and we love it. DH, who initially told me off for spending money, :-)) thinks its great! I went out last night, came home and he'd vacuum sealed a load of computer bits!
I do need to find a cheaper supplier of bags/rolls though and we will definitely be reusing them where possible!

I always seal with the rough side of the plastic bag down. Also if there is any moisture at all at the top of the bag it won't seal. Carefully wipe it out (first few cm's) with a paper towel. If you still can't get it to work, place whatever you are sealing into a cheap plastic bag and then place that into the sealing bag. That way you can re-use the bags if you wish.

As I've said elsewhere on this forum, I got used to having a part time amah (maid) whilst we lived in Hong Kong and tried to do without help once we got to Australia, but then, when I was sick several years ago we decided that we needed to get help in again, so I now have a lady that comes in for two hours a week and that pretty well keeps everything under control. I simply couldn't work in the business (10 - 12 hours per day M-F and 5 hours on Sat) without the help. I don't regret it and certainly don't consider it an extravagance.

When we both worked full time, we had a cleaner once per week. Is was great, but once a month is good and we can afford that.

I like the idea that they specify that you must employ 2 x Indonesians as it helps to keep locals employed. When we stayed in a hotel recently, there was an Australian girl working in the hotel and she looked like a square in a round hole. Good on her for broadening her horizons but I like to talk to the locals when I'm there IYKWIM.

More time off unfortunately for dh and he is only in pain if he moves...not fun for him and absolutely NO activity of any kind just bed rest ...lol he is thrilled!!
Im taking care of all three precious gifts but seem to be running so many more errands (dh prob did more than i gave him credit for)...hopefully he will be back at work soon enough for his sanity and the fact that he is our only source of income...dont even want to think about that becoming a problem!

Is he bored Frozzie? DD has been home since mid afternoon Wednesday and has to have complete rest. She is bored out of her brain. The ipad has been a blessing and she has read a heck of a lot. We certainly take our good health for granted as well as our mobility.
We had a car club member round this morning and he told us that his wife (young) had a heart attack a week ago. She is slim and very fit. Thank goodness she is ok.

I don't think you are supposed to Hally with meat and I certainly don't if chicken has been packed in it. I have washed beef ones well then put them in the dishwasher to make sure they are really clean and if it has contained a precooked meal that hasn't stained the plastic, I wash and re-use them too.

I read that it is OK to wrap meat/chicken in glad wrap first and then re-use the bag. Have some in the freezer now but have not re-used as yet.

Some people we know wrap their food in plastic bags and then vacuum seal it. They can then use the sealing bag again with no worries. For meat etc make sure that it is fully enclosed in the plastic bag so no juices can leak out.

I decided today that a vac sealer would be a great asset for us as we have our own beef butchered, I also freeze pre cooked meals and also help with extending the life of fresh veg etc, so went on the link that Amanda posted before Xmas and purchased the Bigland one for $99.99 (still on special, I think they continue the special after the first one has ended, especially if they are a business)), and especially as those of you that have purchased it seem happy with this one.

I have the sealing lids and they are very good. I also have the bags wich you can reuse time and time again. You can seal them with a hand pump or a small electrical device wich he also sells. I guess it is up to you. I have a Sunbeam and find it very good and use it a lot. I can buy bags for it at Master Butchers Limited here in Perth. They are cheaper than the Sunbeam ones. I find the size fine.

You won't regret it Astarra. There is never any freezer burn on the food at all. I even package leftovers in them. I freeze the food in a container and then as soon as it is frozen I vacuum seal it. Seems to last for ever that way. Don't forget to label it or you will have some interesting leftovers!

You will live it astarra, the food us so much better, nice and neat and you can fit so much more in the freezer. I write the contents on the plastic along the seal line with a black marker.

I'd still like to know where the cheapest place is to buy more stocks of the bags etc. I have a few left from the supply that came with my machine and don't have a great need for vacuum sealing things these days but you will certainly get good use from yours Astarra.

I've had the same problem Wonder. Any liquid seems to seep up as you vacuum seal. That is why I freeze my casseroles and soups before vacuum sealing them.

Still haven't had a lot of luck with liquids in the machine but have been using it much more than every before and my fridge and freezer are looking great. I bought a heap (close to 150) bags from the supplier JulieO listed in the shopping thread and now have different sizes and much cheaper than the ones I had. I got a number of avocados from the farmers 2 weeks ago and because we tend to go through them slowly here and waste at least half, I cut them in half stoned them and then vacuum sealed each half in it's own small bag and then left in the fridge. 2 Weeks later they are great and I'm just opening one package each time I want some avocado. it will be interesting to see how long they last.

Fluids don't vacuum well as they get sucked in to the sealing device. You can vacuum if you freeze first but I suppose that defeats the purpose. Commercial vacuum devices have a system which drops the pressure inside and outside the bag so that fluids don't get sucked out

Thanks bonsai, some seem to be having success with marinades and others not. I guess it does make a difference how thick they are and how much. At the moment I've been freezing anything liquid into blocks and then vacuum sealing.

When I'm vacuuming something that has liquid in it, I will vacuum until I see the liquid being sucked up to the top. I then press cancel or stop, then press seal. You don't get all the air out like normal, but it is good enough. It's good when it's a marinade because you can then squish the bag now and then, it's not quite as solid so to speak.
Another idea I've read about but haven't tried, is to have the bag containing the food/liquid hanging over the side of your bench top so the liquid moves to the bottom of the bag and then vacuum. More air can be removed before the liquid is sucked up IYKWIM. Might be worth a try. :)

Thanks for those tips JulieO. I do have one where I can stop the seal but wasn't sure if that outweighs the positives of the vacuum seal?? I did do this with a batch of marinated chicken wings and the marinade remained semi liquid after freezing so I was very worried the chicken hadn't frozen properly so ended up throwing them away. :-[
I also tried the hanging the bag over the bench with a batch of bolognese sauce and at that time I didn't realise that the generic bags we purchased at the good guys were not great quality, and with the first batch I was concentrating on the sealing and not watching what was happening with the bag that was hanging over the bench and the bottom seal split sending meat sauce all over my feet and the kitchen floor. A huge mess that the dogs had a great time helping clean up. the bags I purchased through your link seem much better quality but I think when I next try that method I'll seal along the bottom edge a second time just to be sure.
Astarra you'll love it, I'm finding it's great for things in the fridge and saves so much room in the freezer.

I do the same as Julie. I love to vac soups. They store flat, on top of each other. I think I posted a photo of soup being sealed, hanging over the edge of the bench. I cut my big bags and reseal the edges to the size I need. I have only bought big bags and small bags. I love this machine.
The GC made Xmas presents by vac sealing gum leaves. They selected particularly nice leaves and did the whole process themselves.

Judy, thanks so much for finding and posting that link, I can't tell you how many times I have searched for that picture. I have the same machine as cookie. I'll be interested in how your new bags go Judy, I got mine from the supplier this week and yesterday sealing up pies I had quite a few bags that would vac but I couldn't see a hole or gap in the sealing.

My Vac machine is called an Ezivac. I bought it at a Elmore Field Day. I have had it for years. I haven't tried any other bags in it except the ones that they sell.
I have made filling for Pasties for Dinner tonight, but have, as usual made too much filling. I will Vac seal the leftovers and it will be ready to use next time I make pasties.
Wonder I have the same brand as you. Did you have any problems using the bags that came with it? When mine don't seal properly it is usually because I have moisture along the edge to be sealed/

Chookie I haven't had the problem before. I found the EziVac vac bags a bit expensive but maybe that's the way I need to go. I'm keeping a track of how many aren't vacuuming properly and also trying to figure out if it's operator error or not. Now that I've got all the extra bags and got into more we are vacuum sealing everything, even cleaned out my freezer and vacuumed some things which were just in glad wrap.

Judy, thanks so much for finding and posting that link, I can't tell you how many times I have searched for that picture. I have the same machine as cookie. I'll be interested in how your new bags go Judy, I got mine from the supplier this week and yesterday sealing up pies I had quite a few bags that would vac but I couldn't see a hole or gap in the sealing.
Wonder, like Chookie says, it sounds like there is moisture where it's trying to seal.
What I do is fold back the top of the bag with dry hands (about 2-3 inches), put in the contents and making sure my hands are dry, I unfold the top and vacuum/seal. This stops any moisture from getting on the area where you will be sealing. I've never had a problem with unsealed bags doing it this way. :)

Thanks Julie, that's sounds like a great method. Now that I've got almost unlimited bags I find I'm using it so much more than I have in the past and vacuum sealing everything.

I've just read all this thread and wondered Amanda and Judy how are you going with yours? I don't think the link works to the actual product on eBay, would either of you mind showing a new link? I'm interested in getting one...
Mine died recently so I bought the Sunbeam model, which doesn't seem all that much better than the Ebay cheapie.

I am becoming more and more tempted to get one of these as my freezer isn't all that large and being able to compact everything down in size would be wonderful. Ah well, Xmas is coming up I'd better give this thread a good read again and start dropping heavy hints to DH!

Wonder, what Julie assays is correct. I also place the empty bag into a jug, poke it well down, pull the extra overlap down the outside of jug. This is good for semi liquid things like stews. Clean dry hands essential.

Chookie, when you use the method of hanging the bag over the bench does Ral help you? I was trying to do some pasta sauce on my own the other day with just a small bag and found it "challenging" holding the bag, lining it up in the machine and snapping the lid into place.

Wonder, I put a high stool near the bench and rest the bag with the filling on this. You need the stool to take the weight but not push the contents up to the top. Hope this make sense.

That's a shame Amanda, there seems to be mixed reviews of the Sunbeam one. I'm very happy with my Ezivac one, not sure of the price comparison though.

I'd take it back Amanda. Or even ring the company. I rarely have that happen with my Sunbeam. Perhaps only if I have moisture in it.

I ordered the Ezi Vac yesterday for Xmas. The machine sounds good, it's the quality of the bags available that seems to be the challenge. Can't wait till it arrives ... but not allowed to open until Xmas day!

Marina, you will love it. I have learnt how to use mine, mostly by watching the demo men who sell them at country shows. There is probably something on the internet demo them. I am doing chicken soup today, to freeze.

That's great Marina, you will love it. My freezer is full of vacuum packed bags at the moment. I think the bags from JulieO's link are pretty good, I'm sure the problems we were having were definitely user error. I might need to look on utube as Chookie has suggested, I've got much better but still struggle with liquids.

My sealer arrived this morning. Dying to try it but, seeing as it is (theoretically) my 'surprise' Xmas present from DH I may have to wait a couple more weeks.
In the interim I will stock up on extra bags - what is the consensus with regard to the best size? I would guess larger rather than smaller?

I like the rolls Marina, then you can make them as large as you want. I have 22 & 25 cm wide rolls, both useful.

I purchased a roll, a bag of ones about 20cm x 30cm (wish they were slightly bigger) and a bag of small ones which are about 5cm 10cm. My aim in getting so many and smaller is that I don't want to reuse them so prefer different sizes so i'm not wasting any more than I need to. The small ones are great for things like pies, single serves of rice, grated cheese and sauces.

I have rolls and bags. With the rolls, as Judy says , you can cut them to size. The very small ones that Wonder has would be handy, but I tend to use Zip lock bags for these small things as I am going to use these more quickly.

After reading what I could find on the forum on food vacuum sealers I noticed that Harvey Norman had one called VacPro in their latest catalogue; has anyone heard of this brand? It is $299. TIA.

Not overly successful Marina. I tend to stand the bags up while the soup is freezing and then vacuum once almost frozen.

I was more or less thinking along those same lines as well. Chookie has developed a technique of some sort, I should have thought to ask her when we had lunch last week.

I freeze my soup in a container and then vacuum seal it when it is frozen. ( I take it out of the container)

I ended up buying an EziVac as I saw it in the Kitchen Witch and am very happy with it. A friend gave me a roll of bags she buys on line from Crazy Sales but they don't seem to be sealing well. Can someone please help me with this; do I need to buy special bags for the EziVac. These cheaper bags had the little bumps on them like the few that came with the machine.

I got bags from the internet, I cannot remember who I got them from, but I think it was through a link supplied by JulieO. Will see if I can find the link for you ... but don't hold your breath!

Troupie make sure the top, inside of the bag is dry. You don't want any moisture to come up to stop it sealing. Also try the bumpy side up and then the bumpy side down. Sometimes it prefers one way to the other.
