Best way to shred and ground chicken?

Hi!

 I want to be able to ground my own chicken or turkey to make burgers...

What is the best way to ground these types of meat?

Also, I like making tacos, and for this I need to shred cooked chicken, what speed should I do it?

Thank you in advance for the tips!

Bitcolorina, in the book that us Australians received with our Thermomix there is a chart for all basic TMX duties.  For mincing they suggest diced semi frozen meat/chicken (with quantities of 250g - 500g max) 8 - 15 seconds/speed 7 or pulse Turbo button 3-6 times for chunky texture.  Start off with the lower times so that you can keep on eye on the texture as you go.
I haven't shredded chicken (only accidentally in my early days) so I will leave that question to others.

I have taken to shredding my pie chicken in the thermomix, I just pop it in and turbo a few times until I get the right consistency.

It does perfect shredded chicken!

I minced 500g very slightly thawed chicken for mini chicken loaves tonight following the instructions JudyDawn referred to (2 batches, each 10 secs on speed 7). Fast, easy perfect minced chicken.

Thank you! I will give it a try...
now I need to find a recipe for tasty chicken burgers.. here in Montreal (if anyone is wondering) the best chicken burgers are served at L'Anecdote.. they are actually spicy chicken burgers and they are so damn good! I wish I could steal their combination of spices.

There is a shredded chicken in garlic sauce recipe in the Asian cook book which has instructions for shredding poached chicken. I am in bed at the mment so will look it up for you tomorrow.
