Title: pizza dough question

i know it's possible to do a slow rise with a pizza dough by leaving it in the fridge for the day. has anyone tried this with 'our' pizza dough recipe? how long couldyou leave it there? could i make it this morning and have it ok for 6/7pm tonight?

I have K... I make it in the morning and leave it in the fridge until the afternoon.  Remember to take it out of the fridge half an hour before you need to use it though.  ;)

I keep the dough for 3-4 days in the fridge and use only a tiny bit fresh yeast

thanks ceejay! i didn't get organised enough this morning though (and we grabbed pizza for lunch lol) i'll know for next time though!

thanks tebasile, i'm not sure i even know where to buy fresh yest lol!

Another question sorry I notice that you can freeze the dough in the EDC and was wondering do you rise the dough prior to freezing it? Are there any other tips to do this ie do you freeze it as one ball? thanks Sharyn

HI Shazzy, I wouldnt rise it before freezing, and in fact would shape it into the shape you intend to cook it in before freezing. (SO loaf, flat pizza base, rolls etc) Then simply defrost and allow to rise in one go, and then bake as usual.

Pizza bases work especially well straight from the freezer….(keep a layer of baking paper between them)

Thanks for that Tenina - Just wasnt quite sure.  Having family come for the next 2 weeks and am trying to find things to cook and freeze ahead of time.
