Although this can be served with a Cheese Board at any time of the year, it seems to appear only at Christmas time. I bought a roll,( $13 ) to taste and then searched the Web for recipes. This is my interpretation. And was it easy in the TMX. I couldn't believe it. It is important to use the best, freshest Walnuts you can buy. You will make 4 logs for the price of 1.
400g dried figs.
300g walnuts , OR 200g walnuts and 100 g of pistachios. Hand chopped, not too small.
300g liquid, made up of 5 mls vanilla Extract
20 mls Brandy
20 mls lemon juice
70 mls of Honey
185 mls of water
1 teaspoon of mixed spices and a pinch of salt.
Method
Remove the hard stalk from Figs and cut in half. Turbo several times into small pieces and set aside. No need to wash bowl.
Add liquid ingredients to bowl, cook 10 mins/ Varoma /speed 1.
Allow to cool 10 minutes, then add Figs back into bowl.
Stand in bowl with lid off and cool.
When cool , add chopped nuts and mix 3 seconds on REVERSE.
Divide into 4 portions and roll into logs 12 cm long and 4 1/2 cm in diameter.
Store in fridge to set up.
The logs are easily rolled in glad wrap. It is necessary to firmly form the rounds with your hands.
If kept i the freezer they are easier to cut into neat rounds,
They are also best made 1 moth before needed so that the figs can absorb all the liquid and the flavours can blend.

Goldfish, this tastes really fab. A bit difficult to slice so I have stuck it in the freezer. Martha Stewart wrapped hers in rice paper as I suspect she had the same problem. Mind you Mine was only 1 hour old when I had to have a taste. The Walnuts were from the Farmers market in Kyneton. Boonderoo Company. With walnuts, I now try before I buy.
It is a very easy recipe.

Oh yum. Sounds wonderful. Now a big fan of dried figs. Didn't do much with the first batch from the bulk order, we just ate them as they were :-))
May I ask, did you use the commercial mixed spice or did you make up your own mix? Thanks :)

Thanks for this recipe I'm definitely going to try it. We used to have something similar when we were kids but it also had ginger in it. I might try half with and half without.

Djinn ! I make my own spice mix. Quatre Epices, and use it in any recipe , savory or sweet, that calls for a mix of spices.
10 g of cloves, cinnamon, nutmeg, ginger and 20 g. White pepper. The recipe is from Mark Best, adapted for the TMX. It is a beauty.
Maggie Beer has a terrific recipe for a type of Pav, with dried figs.
Wonder, that would be very nice. I would use preserved ginger.

Chookie I am definitely going to make this. I bought a fig and walnut roll in Hahdorf and promptly ate all of it over a few days. DH didn't even get a taste. Thank you.

Cookie, I paid $13 for the one I bought. Couldn't believe how expensive it was.
For those who make this, don't use the softened figs as the figs need to soak up the liquid in the recipe.

Uni, even the dried ones have different amounts of moisture. I opened another packet today and they weremore moist than what I used yesterday, so will cut the water back to 100 mls.
The logs i froze last night didn't set hard and were good for slicing.
I was wondering if the mix may also be rolled in balls.

I have just made these. Naturally I am tasting as I go. Oh Chookie, you have done these perfectly. Thank you. Here is the photo before I roll them into the cylinders. I could have cut my walnuts up a bit more but that will be for next time.

Cookie, I keep mine in the freezer. I am taking some out for dinner tonight, to add to cheese board. If you think the mix is too moist, you could add some ground almonds.

Don't need to wait the month. Took some to a party last night and they loved it. I thought it was a bit soft but this didn't stop people tucking in and coming back for more.

Made these yesterday but added some preserved ginger with the figs and also added chocolate chips in while the mixture was still warm. It's tastes amazing and while I don't think it would suit a cheese platter I think my Dad will love it. I also wrapped them in rice paper.(http://img.tapatalk.com/d/12/12/23/vu2u8aje.jpg)

I rolled each log log in crushed pistachios....will post a pic tomorrow.....so simple, and a lovely addition to a cheese board.

That's a great idea Maddy, I don't really like the look of the rice paper and think Dad will turn his nose up at that so I might unwrap and roll in crushed walnuts. It's very decadent with the addition of the chocolate and touch a hint of ginger.

Hi ACW. Do you think this would work with fresh figs???? I have a while bowl to use they are the green ones Adriatic figs I believe is the variety

I made up a cheese board over weekend, and it was Scrummy, it's been in the freezer since Dec.

This is a great recipe, only made half as I did not have enough figs. Did not last long enough to stay in the freezer. ;) :D ;D

I believe Francis Lappe who wrote Diet for a Small Planet is Anna Lappe's mother. Anna Lappe is an established author and speaker in her own right. You know of them? I have only come across them recently and I have ordered a couple of their books to read.

During my 'alternative' phase, I was very interested in the food combination theory put forward in this book. The theory was that you had to eat the right combination of whole grains etc., in the one meal,to get maximum health benefits from what you were eating. This has been proved now not to be true. However I made meals such a Hunza pie, based on this theory. The family have NEVER let me forget this. I still have a copy of 'Diet for a Small Planet' and gave each of my children a copy. I don't think they have looked at it. DIL thinks it a real hoot that I was a hippy, wore Kaftans and Indian Cotton shirts etc. She sees me as ultra conservative, if she only knew. ;D ;D ;D

It will be fine GHM....I would still pop it in the freezer, as its easier to cut it up from frozen....it softens quickly.

after about 9 months in the freezer i should report it is still fantastic, my dinner guests love it

i have 1/2 kg of ricotta in the fridge and i don't remember y i bought it. no not for gnocchi it was something deep fried :-))

Emme, Maggie Beer has a brown sug. Pav with dried figs in it. Very nice.

I buy organic dried figs and a whole lot more ;D from here (http://www.goodness.com.au/) Karen. A group of us buy in bulk and then divide it up. Works out much cheaper than anywhere else (that I know of around Sydney) and the quality is always good.

I buy my seeds, fruit and nuts from Rays Nuts , in Hall St Moonee Ponds. They are fresh and cheap.
